BLISTERED GRAPE AND GOAT CHEESE BRUSCHETTA
Steps:
- Brush both sides of all bread slices with 1 tablespoon of the oil. Toast on a grill pan over medium-high heat for 1 minute. Turn each slice 90 degrees on the same side and cook for another minute so your bread chars with beautiful crisscross grill marks. Flip over and repeat. Rub each slice of hot bread with the cut garlic clove as it comes off the grill.
- Meanwhile, add the remaining 3 tablespoons oil to a medium skillet over medium heat. Add the red grapes and saute until warm and softened, about 3 minutes. Add the green grapes and toss just to warm. Remove to a bowl.
- Add the sage leaves to the hot oil and fry until crisp, 15 to 20 seconds. Remove to a paper towel-lined plate.
- Spread 2 tablespoons of the chevre over one side of each piece of toast, covering completely. Top with a mound of warm grapes on top. Sprinkle a bit of sea salt and a few grinds of pepper over the grapes. Top with a sage leaf. Zest the lemon generously over the top of each slice.

- Rinse grape leaves in cold water, lay flat on paper towels and allow to drain. Then pat dry.
- Arrange prepared leaves on the work surface and place 1 cheese round in the center of each leaf.
- Sprinkle cheese rounds with 1-2 tablespoons of olive oil and top with sage and plenty of pepper, then wrap with grape leaves into parcels by folding the sides of the leaves inwards. Arrange the stuffed grape leaves seam-side down on plates so that they do not open.

- Cover each plate with a layer of mesclun or mixed greens. Place sliced tomatoes on top. Salt generously.
- Mix the dressing ingredients into an emulsion.
- Crumble the goat cheese onto the tomato slices.

GOAT CHEESE FILLED GRAPE LEAVES
Steps:
- Mix the goat cheese, herbs, salt, and pepper in a bowl.
- Spread out the grape leaves, in sets of 2 overlapping pairs. Scoop 2 ounces (ice cream scoop works best) of goat cheese mixture, and place in the middle of the pair of grape leaves. Starting with 1 end, fold each side until goat cheese is covered, making a rectangular packet. Repeat with remaining leaves. Place stuffed leaves in a container and cover with extra virgin olive oil.
- Heat a grill.
- Using tongs, place the packets onto the hot grill. When marked, turn over, and mark on the other side. Grill until cheese is soft. When soft, remove from grill.
- Place on a bed of arugula, and tear open the grape leaf. Brush 8 pieces of bread with olive oil, sprinkle with salt and pepper, and grill both sides. Cut in half on a bias and serve with the goat cheese with the grilled bread and marinated olives.

- Add the olive oil and smashed garlic to a small skillet over low heat.
- Let cook for 10-15 minutes, stirring the garlic every two to three minutes. Be sure to keep a close eye on it, making sure the garlic doesn't burn. The end result should be lightly golden and toasted garlic.
- Remove from heat and let cool slightly. Spoon out the garlic and finely chop. Set aside.
- Meanwhile, add the grape tomatoes to a colander and cook fusilli according to package directions.
- Drain the fusilli over the tomatoes and let sit for a couple of minutes.

- Slice large tomatoes into 1/4 inch thick rounds. Halve or quarter cherry, grape, or other small tomatoes. Divide the tomatoes among four plates, arranging them to show off the contrast in their colors.
- Top each plate of tomatoes with a handful of arugula, allowing a border of tomatoes to show around the edge of the plates.
- Divide the goat cheese evenly among the salads, crumbling it over the arugula and tomatoes.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and basil.

- Preheat your oven to 425˚.
- In a baking dish, add tomatoes, garlic, shallots, olive oil, salt, and pepper and stir to combine.
- Lay your goat cheese log in the center and place in the 425˚ oven for 15-20 minutes.
- Once the tomatoes are blistered, remove the baking dish from the oven and stir everything together.
- Bust the tomatoes to release their juices, and sprinkle in three-quarters of the fresh basil leaves.

It also demonstrates that a new, even trendy, dish can endure and become a classic-if it has integrity. Nevertheless, you can improvise here. - Preheat the oven to 375 degrees.
- Cut the tomatoes in half horizontally.
- Mix the goat cheese with the herbs and shape the mixture into four 2- inch cakes and chill them for 30 minutes or so. Season the bread crumbs with salt and pepper to taste. Beat the egg with a pinch of salt. Carefully dip the goat cheese cakes into the egg, then into the bread crumbs to coat lightly. Place the cakes on a buttered cookie sheet and bake them until golden brown, about 8 minutes, or brown them in an oiled heavy skillet over medium- high heat. Whisk together the oils and lemon juice and toss with the tomatoes. Season with salt and pepper. Arrange the dressed tomatoes on a serving platter. Place the baked goat cheese cakes on the tomatoes, garnish with the chervil, and serve.

- Bring a medium saucepan of water to a boil. Add the grape leaves and boil for 30 seconds; drain. Blanch the leaves a second time in fresh boiling water. Drain again, pat dry and cut off the stems. Spread the leaves out on a work surface, vein sides up.
