8 ounces goat cheese, at room temperature
2 tablespoons extra-virgin olive oil
1/2 teaspoon honey
2 tablespoons minced fresh tarragon
2 tablespoons minced shallots
Zest and juice of 1 lemon
Kosher salt and freshly cracked black pepper
8 fresh figs, diced
1 teaspoon saba vinegar (see Cook's Note)
8 toasted crostini

Steps:

  • In a medium bowl, combine the goat cheese, olive oil, honey and half of the tarragon, shallots and lemon zest. Season with salt and pepper.
  • In a separate bowl, toss the figs with the lemon juice, saba vinegar and remaining tarragon, shallots and lemon zest. Season with salt and pepper.
  • Spread the goat cheese mixture on the crostini, then top with the figs.

Any time a dish -- sweet or savory -- doesn't taste quite perfect, or seems to need a little spark of something, I reach for a lemon. Lemon juice and zest breathe new life into flavors, bring zippy contrast to the sweetness of fruit, and add an element of springy freshness to almost any recipe. Here, I use zest to pick up the flavor of a basic tart crust - and it also perfumes the figs, mild goat cheese, and honey that are dotted on top. Crostata is my favorite quick-trick for making fruit tarts, because you can skip the tart pan altogether. It's an Italian flat-hand formed tart. On top, you can use almost any jam plus soft fruit or berries, as long as it isn't too juicy (orange sections or grapes, for example, would be too juicy).

1 cup all-purpose flour
1/4 cup sugar
1/2 lemon, zest freshly grated
8 tablespoons (1 stick) cold unsalted butter, cut into pieces
1 egg, beaten
4 ounces mild, fresh goat cheese (no rind)
10 ripe fresh figs (black or green), stems snipped off with a scissors, figs cut in half lengthwise
2 tablespoons honey

Steps:

  • Make the dough: Blend the flour, sugar, and lemon zest at low speed in a mixer fitted with a paddle attachment. Add the butter and continue blending at low speed until the mixture is coarse and sandy-looking. Add the beaten egg and blend just until the mixture comes together. Form into a ball, wrap with plastic wrap, and refrigerate at least 1 hour.
  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • On a floured surface, roll the dough out to a rough circle, about 8 inches in diameter. The dough may seem crumbly but you can just push it back together and make patches if necessary. Transfer to the prepared pan. All around the circle, fold in the outer 1/2-inch of the pastry to form a naturally raised, "rustic" edge to the tart. Don't press the edge down.
  • Using your fingers, break the goat cheese into small pieces, sprinkling it over the bottom of the tart (not the edges). Arrange the fig halves in concentric circles over the goat cheese and drizzle the figs with honey. Bake about 25 to 30 minutes, or until the underside of the tart crust is browned.

2 tablespoons extra virgin olive oil
2 tablespoons sun-dried tomatoes packed in oil, drained and chopped
1 tablespoon cracked black pepper
1 teaspoon salt
1 teaspoon sugar
2 6 inch French baguettes

Steps:

  • Mix together goat cheese, 1/4 cup of the pine nuts, olive oil, sun-dried tomatoes, pepper, salt, and sugar in a bowl.
  • Cut baguettes into 24 1/2-inch diagonal slices and toast them in a toaster oven or under the broiler.
  • Spread evenly onto the bread slices and garnish with the remaining 1/4 cup pine nuts.
  • Serve.

1 baguette
1/3 cup olive oil
salt, to taste
20 sage leaves
4 ounces goat cheese
1/3 cup fig jam

Steps:

  • Heat the oven to 400°F
  • Cut the baguette on the bias into about 20 (1/2-inch-thick) slices and place on a baking sheet.
  • Using 1 tablespoon of the olive oil, lightly brush each slice. Sprinkle with salt and bake until lightly toasted and crisp, about 8 minutes; let cool.
  • Line a plate with paper towels and set aside.
  • Heat the remaining olive oil in a small frying pan over medium-low heat. When the oil shimmers, gently place 2 to 3 sage leaves at a time into the hot oil until they darken in color and any bubbling subsides.
  • Immediately remove the leaves with tongs or a slotted spoon and transfer to the paper-towel-lined plate.
  • Repeat with remaining sage leaves; set aside.

8 ounces soft fresh goat cheese
4 ounces cream cheese
2 teaspoons finely chopped fresh Italian parsley

1/2 cup pitted sicilian green olives or 1/2 cup kalamata olive, finely chopped

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy large baking sheets. Brush them with olive oil.
  • Bake until the crostini are pale golden and crisp, about 15 minutes.
  • Blend the goat cheese and cream cheese in a food processor until smooth and creamy.
  • Add the parsley, thyme, and lemon peel.

These are very easy to make and are absolutely delicious. The ingredients are estimates since it really depends on how large your crostini are. Feel free to make your own crostini by cutting french bread into thin slices and toasting them in the oven. Prep time does not include the soak time for the figs. Another option for serving, is to take the soaked figs and blend in a mini food processor, then spread on the goat cheese before baking.

12 dried figs
1/2-1 cup balsamic vinegar (enough to cover the figs so that they can soak)

Steps:

  • Chop figs into 1/4 inch pieces and soak in balsamic vinegar, over night.
  • When ready, preheat oven to 350 degrees F. Spread goat cheese onto the crostini, and top with a spoonful of the chopped balsamic figs. Bake for approximately 10 minutes.
