4 cups chopped fresh peaches
2 tablespoons white sugar
2 tablespoons gluten-free all-purpose baking flour
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ cup butter
1 cup gluten-free all-purpose baking flour
¾ cup white sugar
¾ cup soy milk
1 teaspoon gluten-free baking powder
1 teaspoon xanthan gum
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix peaches, sugar, flour, cinnamon, and nutmeg together in a bowl. Pour into a 9x13-inch casserole dish. Cut butter into small pieces and dab evenly on top of peaches.
  • Mix flour, sugar, soy milk, baking powder, xanthan gum, and salt together in a bowl. Spread topping over the peaches.
  • Bake in the preheated oven until golden brown, about 45 minutes. Cool before serving.

5 cups fresh blackberries
¼ cup coconut sugar
2 tablespoons gluten-free all-purpose flour mix (such as Bob's Red Mill®)
1 cup gluten-free all-purpose flour mix (such as Bob's Red Mill®)
1 cup coconut sugar
1 cup low-fat buttermilk
¼ cup coconut flour
¼ cup melted butter
1 tablespoon baking powder
1 teaspoon xanthan gum
½ teaspoon sea salt
½ teaspoon gluten-free vanilla extract
1 dash ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 2-quart casserole dish with cooking spray.
  • Mix blackberries, 1/4 cup coconut sugar, and 2 tablespoons gluten-free flour together in a bowl until blackberries are coated; pour into the prepared dish.
  • Mix 1 cup gluten-free flour, 1 cup coconut sugar, buttermilk, coconut flour, butter, baking powder, xanthan gum, sea salt, vanilla extract, and nutmeg together in a bowl; spread over blackberry mixture.

2 tbsp olive oil
1 large onion , chopped
1 medium carrot , chopped
2 celery sticks, chopped
1 plump garlic clove , crushed
500g fresh beef mince
few sprigs fresh thyme
400g can of tomato with juice
150ml/¼ pint beef stock
1 tbsp Worcestershire sauce
handful of chopped parsley
225g gluten-free flour
½ tsp gluten-free baking powder
50g butter , chopped
50g red leicester , grated
1 tsp fresh thyme leaf
1 tbsp chopped fresh parsley
150ml low fat natural yogurt

Steps:

  • Put the oil in a frying pan and cook the onion until soft. Add the carrot, celery and garlic and cook until lightly browned. Mix in the mince, breaking it up with a spoon. Cook, stirring often, until the meat is browned. Add the thyme, tomatoes, stock, Worcestershire sauce and parsley, and season to taste. Cover tightly and simmer for 15 minutes. Preheat the oven to 200C/gas 6/fan 180C.
  • Sift the flour and baking powder and rub in the butter. Add the cheese and herbs, then the yogurt, and mix to a soft dough. Turn out on to a lightly floured board and knead lightly. Roll to about 1cm/1⁄2in thick and cut out 9 rounds.
  • Tip the mince mixture into an ovenproof dish. Casually arrange the dough circles on top of the mince and brush with egg or milk. Bake for about 20-25 minutes until the topping is risen and golden brown and the filling is bubbling.

2 -3 cups fruit
1 teaspoon stevia
1/2 cup walnuts
1 1/4 cups gluten-free baking mix
1/4 cup coconut oil
1/3 cup almond milk
2 teaspoons stevia plus, some to sprinkle

Steps:

  • Put fruit and Sevia in a 9" cake pan, mix.
  • Sprinkle with nuts.
  • Put baking mix in a bowl, add coconut oil and cut in with pastry cutter until you have small crumbs.
  • Add milk ans stir well. You may need to add a little more.
  • Turn out dough onto floured surface, knead 10 times then roll to about 1/4inch thickness.
  • Cut dough into squares (or any other shape you like) and put on top of fruit. Pieces will overlap some.
  • Sprinkle with Stevia if you like.
  • Bake at 350 for 30 minutes.

¼ cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1 ⅓ cup gluten-free all purpose flour ((I use and recommend Cup 4 Cup gluten-free flour))
⅓ cup granulated sugar
1 ½ teaspoon baking powder
¼ teaspoon salt
⅓ cup cold unsalted butter, (chopped)
⅓ cup milk
1 tablespoon coarse sugar, (optional for topping)
1 tablespoon milk, (optional for topping)
ice cream or whipped cream, (for serving)

Steps:

  • Preheat the oven to 350ºF. Grease a 8X8 baking dish with butter or nonstick cooking spray.
  • In a large bowl mix together berries, sugar, cornstarch, and lemon juice. Spread in prepared baking dish. Set aside.
  • Whisk together the flour, sugar, baking powder, and salt. Add the chilled butter pieces to the flour mixture. Use a pastry blender, fork, or fingers to cut butter into the flour until small, crumbly pieces remain.
  • Gently stir in the milk until no flour pockets remain. Pat the dough into flat rounds and place on top of fruit filling. It is fine if fruit is showing through.
  • If desired, use a pastry brush to brush milk on top of biscuits and sprinkle with coarse sugar. Bake for 35-40 minutes, or until biscuits start to brown and toothpick inserted in middle comes out clean. Serve warm with ice cream or whipped cream.

2 teaspoons baking powder

1/2 cup unsweetened almond or cashew milk, at room temperature
1 1/2 teaspoons apple cider vinegar
1/4 cup canola oil
4 cups cherries, pitted

Steps:

  • Preheat a grill for cooking over medium-high heat (about 375 degrees F) and grease a medium cast-iron skillet with cooking spray or butter. In a medium bowl, whisk together the flour, baking powder, salt and 1/4 cup of the maple sugar. Mix in the milk, vinegar and oil until just combined.
