2 tablespoons butter
1 clove garlic, minced fine
2 cups unsalted assorted nuts
1 teaspoon chili powder
1 teaspoon curry powder
1/2 teaspoon sugar

Steps:

  • Preheat to 330 degrees F.
  • In a small saucepan, melt butter with garlic over moderately-low heat and remove from heat.
  • In a 13 x 9 inch baking pan, spread nuts, drizzle butter over, toss well to coat and roast, stirring occasionally, for 30 minutes, or until golden and fragrant.
  • Combine dry ingredients and sprinkle over nuts.
  • Stir to coat.
  • Continue baking 3 minutes longer.
  • Transfer to paper towels to drain.
  • Sprinkle with salt to taste.
  • Let cool and transfer to airtight container.
  • (these keep up to 2 weeks).

1 large egg white
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon ground allspice
1/2 teaspoon ground cumin
1 3/4 teaspoons cayenne pepper
2 1/2 cups pecan halves, or assorted nuts, such as cashews, walnuts, or almonds

Steps:

  • Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white. Stir in pecans until well coated; spread mixture in single layer onto an ungreased baking pan.
  • Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.

Steps:

  • Preheat the oven to 400 degrees F.

1 pound unsalted, shelled raw natural pistachios
vegetable oil

Steps:

  • Preheat oven to 350°F. Whisk 5 large egg whites, 1/2 cup sugar, 1 teaspoon thyme leaves, 1/2 teaspoon ground allspice, 1/2 teaspoon ground ginger, 1/4 teaspoon cayenne pepper, and 4 dashes of Angostura bitters in a medium bowl to blend. Steps:

  • Heat the nuts in a dry skillet and cook, stirring frequently, until they begin to toast, about 4 minutes. Add the butter and cook, stirring, until the nuts begin to darken, about 1 minute. Add the spices, the sugar, 1 tablespoon water, and the salt and cook, stirring, until the sauce thickens and the nuts are glazed, about 5 minutes.

1/4 cup garlic oil (recipe below)
2 teaspoons fresh oregano leaves
2 teaspoons fresh rosemary leaves
1/2 teaspoon fennel seed
1/2 teaspoon coriander seed
1/2 teaspoon caraway seed
1/2 teaspoon red chili pepper flakes
2 tablespoons sugar
1/2 teaspoon ground aleppo pepper (or 1/4 teaspoon ground cayenne pepper)
1/2 teaspoon ground smoked paprika
1/2 teaspoon kosher salt
1 lb roasted salted pistachios (in the shell)
1 1/2 cups extra virgin olive oil
6 garlic cloves, peeled

Steps:

  • Make the Garlic Oil: Heat the olive oil and garlic in a small saucepan over medium heat for 5 minutes, stirring to make sure the garlic cloves are coated in oil. Lower the heat to keep warm for an additional 35-40 minutes, moving the garlic around the pan every so often to prevent burning.
  • Let the oil and garlic cool to room temperature. Store, covered, in the refrigerator up to 30 days. Makes 1 1/2 cups.
  • Do not discard the garlic cloves. They are just like roasted garlic and can be used in recipes or spread on toast.
  • Make the Pistachios: Preheat the oven to 400°F Blend the Garlic Oil, oregano, and rosemary in a blender on high speed for 2-3 minutes, until the herbs are fully incorporated. Toast the fennel, coriander, and caraway seeds in a sauté pan over medium heat for 4-5 minutes, shaking the pan often to prevent burning.
  • Transfer the seeds to a spice grinder or a mini food processor, add the chili flakes, and grind to a fine powder.
  • In a mixing bowl, combine the ground seed mixture, sugar, Aleppo pepper, paprika, and salt.
  • Place the pistachios in a roasting pan. Combine the pistachios with the blended oil mixture, add the spice blend, and stir until evenly coated. Roast in the oven for 10 minutes, stirring halfway through. Makes approximately 2 cups. Can be stored at room temperature for three days.

Steps:

  • Preheat oven to 350⁰F (175C⁰). Line baking sheet with parchment paper and reserve.
  • Add nuts to a large bowl. Mix spices, salt & sugar together in a small bowl or directly in with nuts. Toss nuts with spice blend using a rubber spatula.
  • Separate eggs reserving whites in a small bowl. Lightly whisk egg until white and foamy - not whipped. Toss foamy egg whites with nuts using a spatula, being sure to scrape sugar & spices from the bottom of the bowl to coat completely.
  • Spread coated nut mixture onto the parchment-lined baking sheet, one layer deep.
  • Roast nuts in preheated 350⁰F (175C⁰) oven for 15 minutes then remove and turn nuts to roast the other side. This is a sticky job. Nuts are hot and coated with sugar and egg white, so use caution and rinse your spatula directly following or the candy coating will harden and then... it's a bitch to get off.
  • Return nut mixture to 350⁰F (175C⁰) oven for an additional 20 - 25 minutes. Nuts should smell rich and sweet and look glossy and dark. Remove from oven and cool completely on a wire rack. The candy coating hardens as it cools. (Don't snack, they're scorching hot!)
  • Once cool break apart lightly to separate into bite-sized clumps. (NOW you can snack!) Keep in a sealed jar or zip lock bag. Ancho Spiced nuts have a shelf life of about 30 days if kept dry.

180g feta, crumbled
250g Greek yogurt
½ tsp chilli flakes
2 tbsp za'atar or mixed dried herbs
70ml extra virgin olive oil
1 tbsp honey
2 tbsp white wine vinegar
1 large banana shallot, very thinly sliced into rings
150g rocket
4 clementines, peeled and sliced horizontally
½ small bunch of mint
40g pistachios, chopped
50g pomegranate seeds

Steps:

  • Put the feta in a bowl with the yogurt and ½ tsp salt and mash together well with a fork. Put in a sieve set over a bowl for 3 hrs, then chill overnight. Once chilled, roll into 12 balls the size of walnuts. Mix together the chilli and za'atar, then roll the feta balls in the mixture to coat. Put in the fridge to chill for 30 mins. Will keep chilled in a container for up to three days covered in a layer of olive oil.
  • Mix the oil with the honey, vinegar and some seasoning to taste. Toss the shallots, rocket and clementine slices together with the mint. Arrange on a plate with the feta balls on top and drizzle over the dressing. Scatter with the chopped pistachios and pomegranate seeds.
