GLAZED ROAST LAMB

Glazed Roast Lamb image

My grandmother always makes it for Passover seder. I imagine it would work very well for Easter as well. She clipped the recipe out of some newspaper a decade ago or so. You can used dried herbs if you use 1/3 the amounts of herbs, but it isn't as good.

HONEY GLAZED ROAST LAMB WITH HONEY MINT SAUCE

Honey Glazed Roast Lamb With Honey Mint Sauce image

When you invite friends over for Sunday lunch it's a time to relax, not be stuck in the kitchen among the pots and pans. This Roast Lamb is an excellent choice, especially when partnered with rosemary and honey and a sauce using fresh mint. The honey glaze turns the joint a lovely golden colour, and the honey-sweetened mint sauce is a flavoursome change from the sharp vinegary taste of traditional recipes. Serve with a hot gratin of Dauphinoise Potatoes and some braised leeks for a really special meal.

Time 3h15m

Yield 8 serving(s)

Number Of Ingredients 14

2 tablespoons flour
1 teaspoon salt
fresh ground black pepper
1/4 teaspoon ground cinnamon
2 -3 sprigs fresh rosemary, bruised leaves
1 (4 1/2 lb) leg of lamb, about
1 large onion, peeled and thickly sliced
2 medium carrots, pared and thickly sliced
2 tablespoons clear honey
10 fluid ounces dry cider
1 tablespoon cornstarch
3 1/2 fluid ounces white wine vinegar
2 tablespoons clear honey
4 -6 tablespoons of fresh mint, finely chopped

Steps:

  • Heat the oven to 350°F.
  • Combine the flour, salt, pepper, cinnamon and rosemary and rub well into the lamb on all sides.
  • Lay the onion and carrot in the bottom of the roasting tin and the lamb on top.
  • Roast, allowing 25 to 30 minutes per 500g (1 lb 2oz) of weight, less for a pinker meat.
  • Turn the joint halfway through to cook evenly.
  • Meanwhile, make the sauce; warm the vinegar and honey until the honey has dissolved, then stir in the mint and leave to cool.
  • About 30 minutes before the end of cooking time, carefully lift out the meat and strain off the fat from the roasting tin (leave the vegetables).
  • Replace the meat, best side up.
  • Spread with the honey, and add the cider to the pan.
  • Return to the oven, increasing the heat to 375*F, and finish roasting, basting once or twice.
  • Lift the joint and vegetables on to a hot serving platter.
  • Blend the cornstarch with 1 TBS of cold water, add to the roasting tin and boil, stirring for a few minutes to make gravy.
  • Strain into a hot sauceboat.
  • Serve the lamb with the hot cider gravy and honey mint sauce.

ROAST LAMB

Roast Lamb image

We had this for Easter and it was so tender and good! If following the WW flex plan this is only 4 points per serving and is also a Core food. Recipe source: WW Magazine (March 2008)

Provided by ellie_

Categories     Lamb/Sheep

Time 1h45m

Yield 12 serving(s)

Number Of Ingredients 13

1 red onion, sliced
2 teaspoons olive oil
1 tablespoon olive oil
4 garlic cloves, peeled
6 sprigs fresh parsley
6 sprigs fresh rosemary
1 tablespoon fresh rosemary, chopped
6 sprigs fresh thyme
1 tablespoon fresh thyme, chopped
1 (7 lb) leg of lamb, trimmed
1/2 teaspoon salt
1/4 teaspoon pepper
6 potatoes, peeled (optional)

Steps:

  • Preheat oven to 450-degrees F.
  • In a large roasting pan combine the red onion, 2 teaspoons oil and garlic in the center of the pan. Place parsley sprigs, rosemary sprigs, and thyme sprigs on top of the onion mixture.
  • Place lamb on top of herbs and drizzle with remaining oil (1 tablespoon). I also placed 6 peeled potatoes around lamb (not in original directions).
  • Sprinkle lamb with salt, pepper and chopped herbs.
  • Roast for 15 minutes.
  • Reduce oven to 350-degrees F. and roast until meat is done (for medium rare meat thermometer inserted into lamb reads 145-degrees F.) about 75 - 90 minutes.
  • Transfer lamb to a cutting board and cover loosely with foil for about 15 minutes before slicing. The easy way for me to slice lamb is to hold the leg bone vertically and slice the meat vertically.

  • Dry the lamb with paper towels and place on a rack in a heavy roasting pan.
  • In a small bowl, combine all the glaze ingredients; mix well.

  • Roast the lamb for 1/2 to 1 3/4 hours, or until an instant-read thermometer inserted in the thickest part of the lamb reads 135° for medium-rare (check periodically to make sure there is some liquid in the bottom of the pan and add more water if necessary).
  • If you prefer lamb more well don, cook to 140° to 150° for medium.
  • Remove the lamb and place on a carving board; let rest for at least 10 minutes.
  • Place the roasting pan on top of the stove and add a bit more water; cook over medium heat, stirring to scrape up the browned bits from the bottom of the pan.
