2 frenched racks of lamb (1-1/2 pounds each)
1/2 cup honey
1/2 cup cherry preserves
2 teaspoons olive oil
1 teaspoon lime juice

Steps:

  • Place lamb on a greased foil-lined baking sheet. Drape a piece of heavy-duty foil over bones to prevent overbrowning. In a small bowl, combine the honey, preserves, oil and lime juice. Set aside 1/2 cup. Spoon half of the remaining glaze over lamb. , Broil 4-6 in. from the heat for 10-12 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting once with remaining glaze. , Remove lamb from the oven and loosely cover with foil. Let stand for 5 minutes before cutting. Brush with reserved glaze.

1 1/2 tablespoons kosher salt
2 tablespoons minced fresh rosemary leaves
3 garlic cloves, minced
1/2 cup Dijon mustard
1 tablespoon balsamic vinegar
2 racks of lamb, "frenched" (see note)

Steps:

  • In the bowl of a food processor fitted with a steel blade, process the salt, rosemary, and garlic until they're as finely minced as possible. Add the mustard and balsamic vinegar and process for 1 minute. Place the lamb in a roasting or sheet pan with the ribs curving down, and coat the tops with the mustard mixture. Allow to stand for 1 hour at room temperature.
  • Preheat the oven to 450 degrees F.
  • Roast the lamb for exactly 20 minutes for rare or 25 minutes for medium-rare. Remove from the oven and cover with aluminum foil. Allow to sit for 15 minutes, then cut into individual ribs and serve.

2 1/2 cups chopped onions
1 cup chopped carrot
2 cups canned beef broth
1 1/2 cups dry red wine
1 cup canned low-salt chicken broth

1 teaspoon chopped fresh rosemary
1 1/2 tablespoons all purpose flour
For lamb
1/2 cup honey
3 tablespoons soy sauce
2 tablespoons Dijon mustard
2 1 1/4-pound trimmed racks of lamb

Steps:

  • Make red wine sauce:
  • Melt 2 tablespoons butter in heavy large pot over medium-high heat. Add onions and carrot and sauté until deep brown, about 12 minutes. Add beef broth and next 4 ingredients; boil 10 minutes to blend flavors.
  • Mix flour and 1 tablespoon butter to paste in bowl. Whisk into sauce. Simmer until sauce thickens, whisking occasionally, about 10 minutes. Strain. Set aside.
  • Make lamb:
  • Preheat oven to 400°F. Whisk honey, soy sauce and mustard in small bowl to blend; add 2 tablespoons glaze to sauce. Sprinkle lamb with salt and pepper. Place on baking sheet. Brush each rack with some of remaining glaze. Roast until thermometer inserted into center of lamb registers 130°F, brushing often with more glaze, about 35 minutes.
  • Rewarm sauce. Season with salt and pepper. Cut lamb between bones into chops. Serve chops with sauce.

1/2 cup honey
3 tablespoons soy sauce
2 1/2 tablespoons Dijon mustard
2 racks of lamb
salt and pepper
garlic powder
4 tablespoons butter
1 large onion, chopped
1 tablespoon chopped fresh garlic
1 large carrot, peeled chopped
2 cups canned beef broth
1 1/2 cups merlot (or use a dry red wine)
1 cup low sodium chicken broth
2 teaspoons tomato paste
2 teaspoons chopped fresh rosemary
black pepper (optional or to taste)
1 tablespoon soft butter
1 1/2 tablespoons flour

Steps:

  • Set oven to 400 degrees.
  • Prepare a greased baking sheet.
  • For the wine sauce, in a saucepan melt butter over medium-high heat.
  • Add in the onions and carrots; saute for about 12-13 minutes, or until deep dark brown, adding in the garlic the last 3 minutes.
  • Add in beef broth, red wine, chicken broth, tomato paste and fresh rosemary; simmer for 10-12 minutes.
  • Mix 1 tablespoon soft butter with 1-1/2 tablespoons flour to make a paste; whisk into simmering sauce, stir until thickened (about 3-4 minutes).
  • Using a strainer, strain the sauce and set aside.
  • To make the lamb, in a bowl whisk together honey, soy sauce and Dijon mustard.
  • Add in 2 tablespoons of the mixture to the wine sauce, whisk to combine.
  • Season the lamb racks with salt and pepper and a little garlic powder.
  • Place the racks on a large baking sheet.
  • Brush both sides of the racks with the the honey/soy glaze (leaving out some glaze to brush on while cooking).
  • Cook/roast until the lamb for about 35 minutes, or until the temperature of the lamb reaches 130F (do not overcook the lamb!) brush with more glaze once during cooking.
  • Rewarm the sauce, season with salt and pepper.
  • Slice the lamb between the bones and serve the sauce with the lamb.
  • Delicious!

2 racks of lamb (about 1.5lbs)
4 tablespoons rosemary (fresh if possible)
4 cloves garlic (minced)
fresh ground pepper
1 cup olive oil
3/4 cup balsamic vinegar
1 small onion
1 lemon, juice of
1 tablespoon Worcestershire sauce
1 cup honey
1 ounce Southern Comfort
1/8 cup crushed pecans

Steps:

  • Combine marinade ingredients and marinade rack of lamb for a minimum of 4-6 hours prior to preparation.
  • Refrigerate, and turn ocasionally.
  • Combine honey and Southern Comfort in a preheated saucepan.
  • Bring the mixture to a boil then reduce heat while stirring constantly for about 10 minutes.
  • Add crushed pecans and reduce mixture to a thick syrup.
  • Preheat oven to 425 degrees.
  • In an ovenproof skillet, heat a tbsp of olive oil on medium and place the marinated rack of lamb, fat side down in the skillet and allow to cook for about 2 minutes (should be golden brown).
  • Pour the glaze liberally over the top of the rack of lamb, and allow to cook an additional minute, being careful not to burn.
  • Place the ovenproof skillet with the rack of lamb in the preheated oven, and cook until rare (about 18-25 minutes or 145-150 degrees F at the centre).
  • Remove from oven, and allow to stand for 5 minutes before serving.

I played with this tonight and ended up with a rack of lamb that I enjoyed very much. You may want to adjust the time to your liking of the degree of done. I served it with brown baked potatoes, steamed sugar snap peas & carrot shoe strings

1/2 rack of lamb (4 Ribs)
1/4 teaspoon oregano
1/4 teaspoon rosemary
salt
pepper
3 teaspoons mint jelly
1 -2 clove garlic, minced
1 teaspoon dried parsley

Steps:

  • Season your rack with the rosemary, oregano& salt& pepper.
  • Have your oven temp at 375 degrees F.
  • Place your rack in an open oven proof pan and cook for about 20- 25 minutes (it depends on how thick the rack is).
  • Meanwhile, melt the jelly with the garlic and parsley in a small saucepan.
  • Take out the rack and pour the glaze over it.
  • Return to oven, apprx 10 minutes, until the internal temp reaches 160-165 degrees F.
  • This will have the rack still a bit pink.

This is a truly special dinner entree. A bit labor intensive to start off with, but once you have the glaze and cherry sauce done the rest of the preparation goes together like a dream, and the taste is out of this world. If you really have some special guests you want to impress, then this is the perfect choice. I accompany mine with sea salt roasted baby potatoes and green beans.

2 cups merlot or 2 cups other red wine
2 cups fresh cherries, pitted (I have very successfully substituted bottled morello cherries)
2 cloves garlic, chopped
1 shallot, chopped
4 cups lamb stock or 4 cups chicken stock
1 tablespoon unsalted butter
salt & freshly ground black pepper
1 (750 ml) bottle merlot
1 1/2 cups good quality balsamic vinegar
1 shallot, chopped
1 clove garlic, chopped
4 lamb racks, excess fat trimmed and bones frenched (1 1/2 to 2 lbs. each)
salt & freshly ground black pepper
1 tablespoon extra virgin olive oil
rosemary sprig, for garnish

Steps:

  • To prepare the sauce; combine the wine, cherries, garlic and shallot in a saucepan over high heat and reduce until the mixture is almost dry, about 10 minutes.
  • Add the stock, decrease the heat to medium, and reduce until the sauce is thick and coats the back of a spoon, 10 to 15 minutes.
  • Add the butter and stir until melted.
  • Season to taste with salt and pepper.
  • Keep warm until you are ready to serve.
  • Preheat oven to 300*F.
  • To prepare the glaze, combine the wine, vinegar, shallot and garlic in a saucepan over medium heat and reduce until about 1/2 cup liquid remains, 20 to 25 minutes.
  • Set aside until you are ready to use it.
  • To prepare the lamb, season the racks well with salt and pepper.
  • Heat the oil in a large saute pan over high heat until smoking hot.
  • Add as many of the racks as will fit without overcrowding the pan, meat side down, and sear well, 3 to 4 minutes; transfer to a sheet pan.
  • Continue searing the remaining racks.
  • Baste the racks well with the glaze.
  • Set the pan in the oven and roast, basting every 5 minutes, until the meat reaches an internal temperature of 135*F for medium-rare doneness about 20 minutes.
  • Remove the racks from the oven and let sit for about 5 minutes, then slice.
  • To serve, place the slices on a warm serving platter and drizzle with some of the sauce.
  • Garnish with rosemary sprigs and serve warm, with any extra sauce on the side.

ONE-PAN GLAZED RACK OF LAMB WITH SPICED RED ONIONS & POTATOES



One-pan glazed rack of lamb with spiced red onions & potatoes image

This recipe only has a few ingredients but North African spice blend ras el hanout adds a big punch of flavour

600g new potatoes , halved lengthways
3 red onions , each cut into 6 wedges
2 tsp ras el hanout
8 tbsp olive oil
2 racks of lamb , French trimmed (get your butcher to do this for you)
1 tbsp pomegranate molasses
2 tsp lemon thyme leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6. Tip the potatoes and onions into a large roasting tin. Scatter over half the ras el hanout, drizzle with 2 tbsp of the oil and toss together until completely coated. Put in the oven for 40 mins to roast, turning everything over once or twice so it cooks evenly.
  • Meanwhile, heat 1 tbsp of oil in a frying pan and, one at a time, fry the fat side of the lamb well until dark brown, then remove from the pan. Remove the roasted veg from the oven. Season the lamb fat with the remaining ras el hanout, then drizzle or brush over the molasses. Put the lamb, fat-side up, among the potatoes and return to the oven. Cook for 20 mins for rare, 25 mins for pink and 30 mins for well done. Remove and leave to rest for 10 mins.
  • Meanwhile, mix the thyme with the remaining oil and set aside. To serve, either bring the roasting tin to the table, carve the racks into chops and serve the potatoes straight from the pan, or remove the racks, cut them into thick three-boned chops, then spoon some of the potatoes onto each plate and rest a thick chop against them. Drizzle everything with the lemon thyme oil to serve.

A fantastic tasting meal, and so easy to prepare. I allow 1 rack of 4 cutlets per person. The ingredients are enough for probably 3 racks. I serve it with a potato bake and salad in summer or steamed veges in winter.

1/3 cup olive oil
1 lemon, juice and rind of
2 garlic cloves, crushed
salt and pepper
1/4 cup dark honey
1 lemon, juice of (3 good squeezes)
fennel seed

Steps:

  • Combine marinade ingredients and add lamb. Marinade for 2 hours.
  • Drain lamb and score fat with diamond pattern.
  • Place on a cake rack inside a baking dish, this stops the racks from sitting in fat.
  • Warm the honey and lemon juice together.
  • Brush onto lamb fat and sprinkle with fennel seeds.
  • Bake at 350F for 30 to 40 minutes or as required, basting regularly with the remaining honey and lemon mixture.
