CHILI-GARLIC SHRIMP WITH GINGER RICE



Chili-Garlic Shrimp With Ginger Rice image

4 thin slices peeled fresh ginger, plus 2 tablespoons minced
1 1/2 cups jasmine rice
1/2 cup low-sodium chicken broth
1/3 cup ketchup
2 tablespoons chili-garlic sauce
1 tablespoon plus 2 teaspoons oyster sauce
1 tablespoon cornstarch
1/4 cup vegetable oil
1 1/4 pounds large shrimp, peeled and deveined
1 12-ounce bag broccoli florets (about 6 cups)

Steps:

  • Bring 2 1/4 cups water and the ginger slices to a boil in a medium saucepan over high heat. Stir in the rice and return to a boil. Cover, reduce the heat to low and cook until the water is absorbed and the rice is tender, about 18 minutes. Fluff with a fork, cover and set aside.
  • Meanwhile, mix the chicken broth, ketchup, chili-garlic sauce, oyster sauce, cornstarch and 1/2 cup water in a measuring cup; set aside. Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the shrimp in two batches and cook until no longer translucent, 1 to 2 minutes per side; remove to a large bowl.
  • Add the broccoli and 1/2 cup water to the skillet and cook, stirring occasionally, until crisp-tender and the water has evaporated, about 3 minutes. Add to the bowl with the shrimp.
  • Add the remaining 2 tablespoons vegetable oil to the skillet. Add the minced ginger and stir-fry until golden, 30 seconds to 1 minute. Pour in the prepared sauce and simmer until thickened, about 2 minutes. Add the shrimp and broccoli and toss to coat, adding a splash of water to loosen, if needed. Serve with the rice.

½ cup uncooked jasmine rice
ground black pepper to taste
2 small lime wedges

Steps:

  • Melt butter in a small pot over medium-high heat. Add ginger; cook and stir until fragrant, 1 to 2 minutes.
  • Add water and a pinch of sea salt; bring to a boil. Stir in rice, cover, and reduce heat to a gentle simmer. Cook until tender, about 15 minutes.
  • Fluff rice with a fork and season with salt and pepper. Serve with lime wedges.

Steps:

  • Combine the rice, water, ginger and salt in a pot with tight-fitting lid. Bring to a boil over medium heat. Stir once then cover with lid and reduce the heat to a simmer. Cook for 50 minutes. Remove from heat, let stand in covered pot for 10 minutes then fluff with a fork.

1 tablespoon unsalted butter

Steps:

  • Place the rice in a large pot and rinse under cold running water until the water runs clear. Drain well and add 4 1/2 cups water to the pot. Sprinkle with the salt and add the butter, ginger and lemon zest. Bring to a boil, then reduce heat to a simmer. Cover and cook 15 minutes without removing the lid.
  • Remove the lid and fluff the rice with a fork. Cover again and keep warm until ready to serve. For drier rice, leave the lid off after fluffing. Sprinkle with the chopped cilantro before serving.

6 green cardamom pods
Pinch kosher salt

Steps:

  • Rinse the rice to get rid of excess starch. Put it into a heavy bottomed pot with a tight fitting lid. Add the water, ginger, cardamom, and salt and give it a good stir. Bring it to a boil, reduce the heat to a simmer, cover, and cook gently for about 15 minutes. You will see holes poking through the rice and most of the water should be absorbed. Let the rice stand off the heat, covered, for about 5 minutes. Remove the ginger and discard, fluff the rice and serve.

Steps:

  • Combine the seasoning mix ingredients in a small bowl.
  • Preheat the oven to 350*.
  • Heat the butter in a large ovenproof skillet, preferably one that has a tight-fitting lid (If you don't have a tight fitting lid, just use aluminum foil to cover!).
  • When the butter sizzles, add the mushrooms, onions, and seasoning mix.
  • Cook, stirring frequently, for 6 minutes, then add the rice and ginger.
  • Stir in the stock, 2 cups heavy cream, and Parmesan cheese and mix thoroughly.
  • Cover and bake for 45 minutes.
  • Remove from the oven and check to see if there is still some liquid in the bottom of the pan.
  • If not, add the remaining cup of cream.
  • Let sit until the liquid is absorbed, about 10 minutes, before serving.

1 1/2 cups long-grain rice, rinsed well in several changes of water and drained

1/3 cup canned unsweetened coconut milk
1 small bay leaf

Tabasco sauce
2 scallions, minced (optional)

  • Cook the rice and set aside.
  • Heat up the oil in a wok or saute pan on medium-high.
  • Lightly saute the scallions and garlic for about 30 seconds. DO NOT burn! Lower heat if necessary.
  • Using a sharp knife, cut up the crystallized ginger into very small pieces.
  • Toss the scallions, garlic and ginger with the rice. Season with salt to taste.
