GINGER-TEA LEMONADE

Steps:
- In a small saucepan, bring the water to a boil over high heat. Remove the pan from the heat and add the tea bags. Stir and allow the mixture to cool to room temperature, about 20 minutes. Remove the tea bags and discard. Add the Ginger Simple Syrup, lemon juice, and sparkling water.
- Put the ice in a large pitcher. Pour the lemonade mixture over the ice. Garnish with lemon slices and serve.
- In a small saucepan, over medium heat, combine the sugar, water and ginger. Bring to a boil, reduce the heat, and simmer stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.
FRESH MINT AND GINGER LEMONADE
An easy Fresh Mint and Ginger Lemonade ercipe. This distinctive fat-free drink is a great change of pace from coffee or tea.

- Combine chopped mint, ginger, and honey in medium bowl. Add boiling water. Let steep 30 minutes. Strain into 4-cup glass measuring cup, pressing on solids to extract liquid. Add lemon juice and enough cold water to measure 4 cups total. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Fill glasses with ice cubes. Add lemonade. Garnish with mint leaves and lemon slices and serve.

- Prepare the ginger 'tea' base. Do this by cleaning the ginger knobs and chopping into 1-2" pieces.
- Add the ginger to a pan with the filtered water and bring to a boil, then reduce the heat and simmer for around five minutes. * (* For a more concentrated flavor, you can use crushed or grated ginger).
- When ready, leave the ginger water to cool completely before moving on to the next step. When it is lukewarm, add the sweetener of your choice and mix well. - Prepare the lemon juice by juicing the lemons. You can use a juicer for this, if you have one, or do this manually. I microwave my lemons for between 10-30 seconds to help the lemons release their juices, roll the lemons across the center a few times before cutting in half, and then squeeze as usual. This helps to get out as much of the lemon juice as possible AND makes the process faster.

- Wash and pat dry lemons, ginger, and basil leaves. It's ok to leave the skin on for ginger, just make sure to wash and wipe it thoroughly.
- Add all the ingredients to the blender like basil, ginger, lemon juice, simple syrup, salt, black salt, ice cubes, and water.
- Individual servings - take two glasses, add ice to them. Fill them halfway with the concentrate. You can pass it through a sieve I just prefer to add it directly.
