HALLOWEEN PUMPKIN SPICED APPLESAUCE SPIDER CUPCAKES
Fluffy cupcakes flavored with pumpkin spiced applesauce with pumpkin spice frosting are made spooky for Halloween with fake spiders.

Steps:
- For the cupcakes:
- Preheat oven to 350°F/175°C. Line a 12-muffin tin with liners.
- To a bowl add the butter and sugar. Beat on high until light and pale using an electric mixer. Add the eggs, one at a time and beat until mixed. Mix in the pumpkin applesauce. Add the flour, baking powder, pumpin pie spice and salt to a separate bowl and mix well. With the mixer on low add little dry mix to the wet mix, alternate with a little milk until all the flour and milk are used. Mix until well-combined and smooth. Don't over mix. Use an ice cream scoop and divide the batter between all the cups, a little over halfway filled.
- Bake for 20-25 minutes until golden. When a toothpick inserted in the center it should come out clean.
- Remove from the oven, remove the cupcakes from the pan and cool on a wire rack.
- For the frosting:
- Beat the cream cheese and butter with an electric mixer, add the vanilla, mix well. Slowly add powdered sugar while beating. Add the pumpkin pie spice and mix well. Refrigerate for 30 minutes to make topping the cupcakes easier.
- Top the cooled cupcakes with the frosting.

Steps:
- Whisk together flour, baking soda, cinnamon, nutmeg, cloves and salt until very well combined; set aside.
- In a mixer, beat butter and sugar until creamy; add egg and beat until fluffy.
- Stir in applesauce.
- Gradually add flour mixture, beating until well blended; stir in nuts.
- Spoon batter into paper-lined or well-greased 2 1/2-inch muffin pans, filling each about 2/3 full.
- Bake in a 350°oven until tops spring back when lightly touched (20-25 min).
- let cool in pans on wire racks for about 5 minutes.
- Prepare Apple Glaze, carefully remove cupcakes, place on racks and brush with glaze.
- Apple Glaze: mix powdered sugar and apple juice until smoothly blended and of a good brushing consistency.

- Combine all cupcake ingredients in a large mixing bowl and beat with a mixer until well blended.
- Turn mixer on high and beat for 3 more minutes.
- Line a muffin pan with 24 paper muffin cups.
- Fill each cup about 3/4 full with the cupcake mix.
- Cook in preheated 350 degree oven for 20 minutes or until a toothpick inserted into the cupcake comes out clean.
- Allow to cool before removing from pan.
- To make the frosting, combine all frosting ingredients in a large bowl and beat until smooth.
- Frost cupcakes after they are completely cooled.

APPLESAUCE SPICE CUPCAKES
This is a TOH recipe. I've had it for several years now. This recipe makes great snack muffins for the little kiddos. It reminds me more of a quick bread than something cakey. These freeze very well. The original recipe calls for cream cheese frosting. I however have never added the frosting. The kiddos don't even notice. :)

- Combine all ingredients in large mixing bowl.
- Mix well.
- Fill greased or paper-lined muffin cups 2/3 full.
- Bake at 350 degrees for 25 minutes or until cupcakes test done.
- Cool for 10 minutes before removing to a wire rack.
- Frost cooled cupcakes if desired.
- *This can also make this cake in a 15 x 10 inch baking pan and frost.
