BAKED FRENCH TOAST WITH MAPLE SYRUP AND GRANOLA
This is a recipe that I developed while feeding a group for a Sunday brunch. It can be made the night before; it will pick up a more intense flavor.

Steps:
- Butter a 9x13-inch baking dish. Lay the bread slices into the prepared baking dish in 2 layers. Beat eggs, half-and-half cream, orange juice, white sugar, brown sugar, cinnamon, and nutmeg together in a bowl until smooth, and pour over the bread. With a large spoon, press the bread down into the egg mixture so all the bread becomes soaked with the mixture.
- Sprinkle the granola evenly over the casserole, and drizzle with maple syrup and melted butter. Cover the dish with plastic wrap, and refrigerate overnight.
- About 1 hour before serving, remove the casserole from the refrigerator, and take off the plastic wrap. Preheat oven to 300 degrees F (150 degrees C).
- Bake in the preheated oven for 30 minutes, then turn oven temperature up to 375 degrees F (190 degrees C). Bake the casserole until browned, about 15 more minutes. Serve warm.

CRUNCHY GRANOLA FRENCH TOAST
French toast gets an extra dose of crunch when coated with granola.

- In large bowl, beat eggs, milk, sugar and vanilla with whisk until well combined.
- In food processor, place granola. Cover; process about 30 seconds or until all large pieces are broken up and coarse meal forms. Transfer to shallow bowl.
- In 10-inch nonstick skillet, heat 1 tablespoon of the oil over medium-low heat. Dip bread slices into egg mixture then into granola to coat evenly on both sides. Place 2 slices in skillet; cook 2 to 3 minutes or until deep golden brown. Turn; cook 2 to 3 minutes longer. Repeat with remaining bread slices, adding oil as needed.
- Serve each slice with 2 tablespoons syrup.

EASY OVEN-BAKED FRENCH TOAST

Steps:
- Adjust oven racks, one on lowest position and the other in the middle position.
- Preheat oven to 425.
- Grease 2 cookie sheets with 2 Tbsp.
- of the above butter.
- Beat eggs, milk, powdered sugar, vanilla and cinnamon.
- Dip bread in the egg mixture and place on cookie sheets.
- Cut remaining butter into pieces and scatter over bread.
- Place on racks, bake for 7 minutes, switch cookie sheets and continue to bake for 8 minutes.
- Sprinkle with a bit of powdered sugar when done.
MAPLE FRENCH TOAST

- First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
- In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
- Beat in the milk, vanilla, nutmeg and salt.
- Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
- Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
- Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
- You may have to cook in 2 batches if you use a smaller skillet.
- Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.
BAKED FRENCH TOAST CASSEROLE WITH MAPLE SYRUP

Steps:
- Slice French bread into 20 slices, 1 inch thick.
- Arrange slices in a generously buttered 9x13-inch baking dish in 2 rows, overlapping slices.
- In a large bowl, combine the eggs, half and half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with wire whisk until well blended.
- Pour mixture over bread slices, making sure all are covered evenly with egg mixture.
- Spoon some of the mixture in between the slices.
- Cover with foil and refrigerate overnight.
- The next morning, preheat oven to 350°F.
- Spread praline topping evenly over bread and bake for 40 minutes, until puffed up and lightly golden brown.
- Serve with maple syrup.
SIMPLE BAKED FRENCH TOAST

- Butter a 13-by-9-inch glass baking dish.
- Cut twelve 1-inch-thick diagonal slices from bread (reserve ends for another use).
- Generously butter one side of each slice and arrange slices buttered sides up in one layer in buttered dish, squeezing them slightly to fit if necessary.
- Whisk together eggs, milk, and salt in a bowl until well combined, then pour evenly over bread.
- Refrigerate, covered, until bread has absorbed all of custard, at least 1 hour (time may vary depending on bread).
- Put a rack in middle of oven and preheat oven to 425°F
- Bring soaked bread to room temperature.

- FOR Creamy Maple Syrup: Combine sugar, 1/2 cup evaporated milk, syrup and 1 teaspoon vanilla extract in small saucepan.
- Cook over medium heat, stirring constantly, until sugar is dissolved.
- Remove from heat; stir in 2 tablespoons butter. Makes 1 1/2 cups.
- FOR FRENCH TOAST: whisk together eggs, remaining 1 cup evaporated milk, vanilla extract and cinnamon in medium bowl.
- Melt 1 tablespoon butter in large, nonstick skillet over medium heat.
- Dip 4 slices bread in milk mixture and then place in skillet.
- Cook about 2 minutes per side or until golden. Repeat 2 more times with with 2 tablespoons butter and remaining bread.
- Keep warm in oven.
- Serve with warm Creamy Maple Syrup.
- Refrigerate any leftover syrup for another use.
- Tip: One 12 fl. oz. can is all the evaporated milk you will need for this recipe.

- Preheat your oven to 300 degrees. Combine the oats, maple syrup, vanilla extract, cinnamon in a bowl. Add in your melted butter and combine until it is all coated evenly. Spread it evenly onto a baking sheet. Bake for 20 minutes. Crank up the heat to 325 degrees. Cook for an additional 3-5 minutes or until toasted golden. If desired, you can put it on broil for 1-2 minutes (WATCH CLOSELY!) for extra golden color!
