1/4 cup soy sauce
3 tablespoons sugar
1/4 teaspoon ground ginger
2 tablespoons corn starch
2 tablespoons vegetable oil for frying

Steps:

  • Place a large skillet or frying pan on the stove over medium-high heat. Add the two tablespoons of vegetable oil.
  • When the oil is hot, add the sliced porked chops and stir fry for about five minutes, or until the pork is almost cooked through.
  • Add 1 1/4 cups of water, 1/4 cup soy sauce, and 3 tablespoons sugar.
  • Add the snow peas and ground ginger. Stir fry until pea pods are tender-crisp (about five minutes).
  • Mix the 2 tablespoons of corn starch with 1/4 cup of water. Pour over the pork and pea pods and stir continuously until the sauce thickens.
  • Serve with rice or Chinese noodles.

3 pounds boneless pork shoulder
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
4 cups low-sodium chicken broth
1 cup soy sauce
1/2 cup dry sherry
1/4 cup packed dark brown sugar
2 tablespoons toasted sesame oil
1/2 teaspoon red pepper flakes
2 star anise pods
1 cinnamon stick
5 cloves garlic, smashed
1 2-inch piece ginger, peeled and sliced
6 to 8 whole dried shiitake mushrooms
1 pound soba or ramen noodles
1/4 cup water chestnuts, sliced
2 Fresno chile peppers, seeded and thinly sliced
2 scallions, sliced
1/4 cup fresh cilantro

Steps:

  • Season the pork with salt and pepper. Heat a skillet over medium-high heat with the vegetable oil. Add the pork and brown on all sides, 6 to 8 minutes. Transfer to a plate.
  • Combine the broth, soy sauce, sherry, sugar, sesame oil, red pepper flakes, star anise and cinnamon stick in a 5-quart slow cooker. Stir to dissolve the sugar, then add the garlic, ginger and mushrooms. Add the pork, cover and program to cook 4 hours on high, then 2 hours on low, or 6 hours total on low.
  • Transfer the pork to a platter, cover and let rest 15 minutes. Remove the mushrooms from the broth and halve them, then return to the broth.
  • Meanwhile, bring a large pot of salted water to a boil and cook the noodles as the label directs. Slice the pork. Divide the noodles among bowls and top with some of the broth and mushrooms and a few slices of pork. Garnish with the water chestnuts, chiles, scallions and cilantro.

3 pounds beef short ribs, about 10 ribs
Salt and freshly ground pepper
3 tablespoons vegetable oil
10 to 12 garlic cloves smashed
1-inch piece ginger, peeled and sliced into 1/4-inch slices
12 ounces good ale (recommended: Bass)
3 tablespoons rice wine vinegar
1 cup hoisin sauce
Creamy Mashed Yukons, recipe follows
Sesame Snow Peas, recipe follows
3 pounds Yukon gold potatoes, peeled
1/2 stick butter, melted
1 cup half-and-half
Salt and pepper
1 bunch chives, chopped
1 pound snow peas
2 tablespoons vegetable oil
1 tablespoon dark sesame oil
1 teaspoon sesame seeds
Salt and pepper

Steps:

  • Season the ribs generously with salt and pepper. Heat the vegetable oil in a large heavy pot with a lid (Dutch oven) over high heat. Brown the ribs on all sides, in batches if necessary. Remove the ribs and pour off all but a couple tablespoons of the rendered fat.
  • Return the pot to the stove, lower the heat to medium and saute the garlic and ginger for about 3 minutes. Add the ribs back to the pot. Add the beer and the vinegar. Stir and then cover and simmer for 2 1/2 hours.
  • Preheat the oven to 300 degrees F.
  • Pour the hoisin sauce over the ribs, move the pot to the oven, and cook, uncovered, for 30 minutes.
  • Remove ribs and ginger from sauce. Strain fat from the top of the pot so that you're left with just the good stuff. Serve with Creamy Mashed Yukons and Sesame Snow Peas.
  • Boil potatoes until fork tender. Heat the butter and half-and-half over medium heat until hot, but not boiling. Drain the potatoes, return them to the pot and mash with a hand masher. Add hot liquid to potatoes and whip with an electric hand mixer until smooth. Season, to taste, with salt and pepper. Add chives and mix before serving.
  • Rinse the peas and trim off the ends. In a large saucepan over medium-high heat, add the oils and heat. Add snow peas and saute until bright green, about 2 to 3 minutes. Season with salt and pepper, to taste. Sprinkle with the sesame seeds and toss.

1/2 cup low-sodium soy sauce
3 tablespoons sherry or cooking sherry
2 tablespoons cornstarch
2 tablespoons brown sugar
1 tablespoon peeled and minced fresh ginger
1 1/2 pounds flank steak, trimmed of fat and sliced very thin against the grain
3 tablespoons peanut or olive oil
8 ounces fresh snow peas, trimmed
5 whole scallions, cut into 1/2-inch pieces on the diagonal
Crushed red pepper
Salt, as needed (use sparingly!)
Jasmine or long-grain rice, cooked according to package directions

Steps:

  • In a bowl, mix together the soy sauce, sherry, cornstarch, brown sugar and ginger. Add the beef to a separate bowl and pour one-third of the liquid over the top. Save the rest of the liquid. Toss the beef and set aside.
  • Heat the oil in a heavy skillet (iron is best) over high heat. Add the snow peas and stir for 45 seconds, getting as much color on them as possible. Remove to a plate.
  • Allow the skillet to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Spread out the meat as you add it to skillet, but do not stir for a good minute. (You want the meat to get as brown as possible as quickly as possible.) Sprinkle half the scallions over the meat. Flip the meat to the other side and cook for another 30 seconds. Remove to a clean plate.
  • Repeat with the other half of the meat, allowing the skillet to get very hot again first. After flipping, add the first plateful of meat, the reserved liquid, the crushed red pepper and snow peas. Stir over high heat for 30 seconds, and then turn off the heat. Check the seasonings and add salt only if it needs it. The mixture will thicken as it sits. Serve immediately over rice.

Extra-virgin olive oil
1 (1-inch) piece ginger, finely chopped
2 cloves garlic, smashed
1 scallion, white and light green only, thinly sliced

Steps:

  • Bring a large pot of well-salted water to a boil over high heat. Set up a bowl of well-salted ice water. Blanch the snap peas in the boiling water until they are cooked but still crunchy and then immediately plunge them into the salted ice water. Remove them from the ice water and reserve.
  • Coat a large saute pan with olive oil. Add the ginger, garlic, and scallion and cook over medium-high heat until scallions are soft and translucent.

Tasty little "envelopes" of meat and vegetables in chicken stock seasoned with fresh ginger root, sesame oil and soy sauce. You can use purchased won ton wrappers, or make your own. Use home prepared chicken stock, or canned. The time spent on preparing this recipe is up to you. The recipe came from a basic cookbook that explains the art of Chinese cuisine. It's definitely a recipe you can "make from scratch," or take some shortcuts and still have an excellent won ton soup. My preparation time listed is just a guesstimate. If you choose not to make your own won ton wrappers, find them in the produce or freezer department at your market.

2 scallions or 2 green onions, whole
1 slice fresh gingerroot, the size of a quarter
2 tablespoons spinach or 2 tablespoons parsley, fresh,shredded
1 (10 ounce) box frozen snow peas or 1 (10 ounce) box fresh snow peas, strings removed and cut in 1/2
1/2 lb ground pork
1 tablespoon scallions or 1 tablespoon green onion, finely chopped
2 tablespoons spinach or 2 tablespoons leafy greens, chopped
1 tablespoon sesame oil
1/2 teaspoon salt
1/4 teaspoon sugar
2 teaspoons dark soy sauce
12 wonton wrappers
2 quarts water
1 teaspoon salt

Steps:

  • Additional salted water is to be used to pre-cook won tons before placing in broth.
  • Put water and 1 tsp salt in a stock pot; when all wrappers are filled, heat water to a boil.
  • Combine stock ingredients (excepting snow peas,) in a 2 quart stock pot; gently simmer while preparing won tons.
  • Mix all filling ingredients in a pie pan, then flatten mixture to cover the base of the pan; divide (as cutting a pie) into 12 wedges so each won ton will contain similar amounts of filling.
  • Keep unfilled/filled wrappers covered with a damp towel to keep them from drying.
  • Place each portion of filling on the center of a wrapper; moisten the edges of the wrapper with water, then fold like an envelope, making sure all edges are adhered.
  • When all wrappers are filled, gently drop into boiling salted water; add 1/2 cup cold water and return to a boil, stirring gently so won tons don't stick to bottom of pan.
  • When won tons begin to float, cook for an additional minute then remove from water and drain; won tons will adhere to each other, so separate them.
  • Remove scallions/green onions and ginger slice from simmering broth and add halved snow peas and drained won tons; heat thoroughly, then portion 3 won tons in 4 bowls, with snow peas and broth divided among the bowls.
