2 small zucchini, cut lengthwise in half
2 cups hot cooked long-grain white rice

Steps:

  • Heat grill to medium heat.
  • Mix first 4 ingredients until blended. Reserve 1/4 cup for later use; brush remaining mayo mixture onto fish and vegetables.
  • Grill 5 to 8 min. on each side or until fish flakes easily with fork and vegetables are crisp-tender.
  • Serve fish and vegetables over rice. Top fish with reserved mayo mixture.

3 tablespoons soy sauce
1 tablespoon vegetable oil

Steps:

  • Gather the ingredients.
  • Place fish in a large glass bowl or shallow baking dish.
  • Combine marinade ingredients in a small bowl and pour over fish. (Make sure to coat fish evenly on both sides.) Cover dish with plastic wrap and place in refrigerator for 30 minutes to 1 hour.
