TURKEY CHILI

Turkey Chili image

You might not think of chili as an easy weeknight dish, but this turkey version from Pierre Franey will change your mind. It's fabulous, it's healthy and it can be ready in about a half hour. A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

Provided by Pierre Franey

Categories     weeknight, project, main course, side dish

Time 35m

Yield 6 servings or more

Number Of Ingredients 18

1 tablespoon olive oil
2 pounds ground turkey, white and dark combined

2 cups chicken broth, fresh or canned
Salt and freshly ground pepper to taste
2 15-ounce cans of red kidney beans, drained
2 cups shredded cheddar cheese
1 cup sour cream (optional)
Sliced lime for garnish (optional)

  • Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.

TURKEY CHILI

Turkey Chili image

Provided by Amanda Freitag

Categories     main-dish

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 18

1 tablespoon canola oil
1 yellow onion, diced
Kosher salt
4 garlic cloves, thinly sliced
1 red bell pepper, diced
1/4 cup chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 tablespoons tomato paste
1 pound ground turkey
One 28-ounce can plum tomatoes
3 cups low-sodium chicken stock, plus more as needed
1 tablespoon unsweetened cocoa powder
1 1/2 cups cooked white beans, or One 12-ounce can, drained and rinsed
1 1/2 cups cooked kidney beans, or One 12-ounce can, drained and rinsed
Sour cream or plain Greek yogurt, for serving (optional)
Sliced scallions, for serving (optional)
Grated Cheddar cheese, for serving (optional)

Steps:

  • Heat the canola oil in a large pot or Dutch oven over medium heat. Add the onion and a pinch of kosher salt and saute, stirring with a wooden spoon, for about 2 minutes, or until translucent. Add the garlic and bell pepper and saute for 1 minute. Add the chili powder, cumin, and cayenne and cook for at least 1 minute so that they bloom.
  • Add the tomato paste and cook for 1 or 2 minutes to deepen its flavor.
  • Add the turkey and switch tools from a wooden spoon to a whisk. Cook the turkey, breaking up any large chunks with the whisk as you cook, for 5 minutes, or until browned.
  • Add the tomatoes, 3 cups of the stock, and the cocoa powder and bring to a simmer, whisking to make sure the cocoa powder is thoroughly dissolved and combined. Add the beans and bring the chili to a simmer.
  • Cover the pot with a lid or foil and cook the chili for 1 hour. Taste the chili after 1 hour and adjust the seasoning. If the chili is too thick for your liking, add a bit more chicken stock.
  • Serve in deep bowls topped with sour cream, sliced scallions, and grated Cheddar, if desired.

HEALTHY TURKEY CHILI

Healthy Turkey Chili image

This healthy turkey chili recipe comes together in just 30 minutes! It's packed with flavor and perfect for busy weeknight dinners.

Provided by Averie Sunshine

Categories     Soup

Time 30m

Number Of Ingredients 19

4 tablespoons olive oil, divided
2 pounds ground turkey (I used extra lean)
1 medium/large sweet Vidalia onion, diced small
1 medium/large red bell pepper, diced small
3 to 5 garlic cloves, finely pressed or minced
2 to 3 teaspoons kosher salt, or to taste* (see Note below)
1 teaspoon freshly ground black pepper, or to taste
one 15.5-ounce can red kidney beans (I used low-salt), drained and rinsed if desired
one 15-ounce can black beans (I used no-salt added), drained and rinsed if desired
one 14.5-ounce can petite diced tomatoes (I used no-salt added)
one 8-ounce can tomato sauce, plus 8 ounces water used to rinse out can (I used no-salt added)
about 8 ounces water, chicken or vegetable broth, optional (see step 5 below)
two 4-ounce cans diced green chilis (I used fire-roasted)
1 tablespoon cumin
1 tablespoon chili powder
2 teaspoons smoked paprika (regular paprika may be substituted)
2 to 4 bay leaves
1 to 2 teaspoons granulated sugar, optional and to taste
sour cream, green onions, shredded cheese, crushed tortilla chips or crackers

Steps:

  • To a large Dutch oven, add 2 tablespoons olive oil, turkey, and cook over medium-high heat to brown, crumbling it with a spatula as it cooks and tossing it to ensure even cooking. Cook through, about 5 minutes or as necessary.
  • Add the onions, red pepper, drizzle remaining 2 tablespoons over the top, stir, and cook for about 5 to 7 minutes, or until vegetables have softened, stir intermittently.
  • Add the garlic, salt (Note because I used all low-salt or no-salt added products I use 3 teaspoons salt total; if you're using salted versions of the other ingredients reduce salt level to 1/2 to 1 teaspoon to start with and add more if necessary), pepper, and cook for about 1 minute, stir intermittently.
  • Add the beans, diced tomatoes, tomato sauce, rinse can out with 8 ounces water and add the water, green chilis, cumin, chili powder, smoked paprika, bay leaves, and stir.
  • Depending on how thick you like your chili and if you prefer more broth, you may wish to add up to 8 additional ounces water, chicken or vegetable broth.
  • Bring to boil and cook for about 10 to 15 or until chili has reduced and thickened some.
  • Stir, taste, optionally add sugar to taste (I added 2 teaspoons because the sugar balances the acid from the tomatoes and peppers), and add more salt, pepper, or seasonings to taste.
  • Remove bay leaves.
  • Ladle into bowls and optionally garnish with sour cream, green onions, shredded cheese, crushed tortilla chips or crackers.
