THREE CHEESE AND SPICY SAUSAGE BAKED PASTA

Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
1 cup chopped fresh basil, plus 4 large fresh basil sprigs
1 pound dried rigatoni
1 pound spicy Italian sausage, casings removed
1 1/2 cups shredded mozzarella
1 1/2 cups shredded provolone
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
  • While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.
  • Add the tomato sauce and half each of the mozzarella, provolone and Parmesan cheeses to the bowl and stir well to combine. Transfer the pasta-sausage mixture to a 3- to 4-quart baking dish and top with the remaining mozzarella, provolone and Parmesan cheeses. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest about 10 minutes before serving.

1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
1 can (14.5 oz.) Italian-style diced tomatoes, undrained
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread
1/2 cup KRAFT Shredded Mozzarella Cheese
1/3 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 375ºF.
  • Cook pasta in large saucepan as directed on package, adding spinach to the boiling water for the last minute. Meanwhile, cook and stir chicken and garlic in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. or until chicken is browned. Stir in pasta sauce and tomatoes; bring to boil. Simmer on medium-low heat 3 min. Remove from heat; stir in cream cheese spread until melted.
  • Drain pasta mixture well; return to saucepan. Stir in chicken mixture and mozzarella. Spoon into 13x9-inch baking dish; top with Parmesan.
  • Bake 10 to 15 min. or until heated through.

1 pound ground beef
1 onion, chopped
6 ½ cups tomato pasta sauce
6 ounces provolone cheese, thinly sliced
1 ½ cups sour cream
6 ounces mozzarella cheese, shredded
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain.
  • Meanwhile, cook ground meat and onion in a skillet over medium heat, stirring frequently, until meat is browned. Stir in pasta sauce, reduce heat, and simmer for 15 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. Layer the ingredients in the prepared baking dish as follows: half of the cooked pasta, all the provolone cheese, all the sour cream, half of the sauce mixture, remaining pasta, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese.

1/4 c. extra-virgin olive oil
4 red bell peppers
1 large onion
6 garlic cloves
salt
1 tsp. chipotle powder
1 28-ounce can plum tomatoes
3 c. fresh ricotta cheese
3/4 c. freshly grated Parmesan cheese
1/2 c. shredded fresh mozzarella
Freshly ground pepper
1 lb. trenne or rigatoni pasta
1 tbsp. melted unsalted butter

Steps:

  • In a medium sized, enameled, cast-iron casserole, heat the oil. Add the peppers, onion, halved garlic and a pinch of salt. Cover and cook over moderate heat, stirring occasionally, until the vegetables soften, 15 minutes. Add the chipotle powder and cook uncovered, stirring, until the vegetables are lightly browned, 5 minutes. Add the tomatoes and their juices, cover and simmer over low heat for 20 minutes. Scrape the sauce into a food processor and puree. Wipe out the casserole. Strain the sauce into it and season with salt; keep warm.
  • Preheat the oven to 375F°. Butter a 10-by-14-inch glass baking dish. In a bowl, mix the ricotta with the minced garlic, 1/2 cup of the Parmesan and the mozzarella. Season with salt and pepper.
  • Cook the pasta in a large pot of boiling salted water until almost al dente. Drain the pasta and return it to the pot, then toss with 2 cups of the sauce. Spread the pasta in the baking dish, then spread the ricotta mixture on top and drizzle with the melted butter. Sprinkle the remaining 1/4 cup of Parmesan on top. Cover the pasta with foil and bake for 25 minutes, or until hot.
  • Preheat the broiler. Uncover the pasta and broil 4 inches from the heat for 2 minutes, or until the topping is evenly browned. Let stand for 5 minutes, then serve with the remaining sauce.

I don't believe in serving kids macaroni and cheese every day. It should be treated as an indulgence, because that's what it is. This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. Add a big green salad and they can have dinner ready before you get home from work!

1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese
1/2 pound shredded Cheddar cheese
1/2 cup shredded Parmigiano-Reggiano cheese
1/2 cup dried breadcrumbs (preferably panko)

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the penne rigate according to the package directions, minus 1 or 2 minutes of cooking time (see Cook's Note). Drain, then pour the pasta into a 9-by-13-inch glass baking pan.
  • In a 4-quart saucepan, melt the butter on medium-low heat. Whisk in the flour until it's dissolved. Add the cream to the saucepan. Add the nutmeg, seasoned salt, and black pepper and whisk the mixture until it's warmed through.
  • Reduce the heat to low, and add the mozzarella, Cheddar, and Parmigiano-Reggiano. Stir until you have a smooth cheese sauce.
  • Pour the sauce over the pasta and top with the breadcrumbs.
  • Bake for about 40 minutes, until the top turns a golden brown.

1½ cups chopped onion
3 cups sliced mushrooms
4 garlic cloves, minced
1 lb (500 g) skinless boneless chicken breasts, chopped
28 oz (796 ml) can diced tomatoes, undrained
½ cup sundried tomato pesto
salt and cracked black pepper
14 oz (398 ml) can artichoke hearts, drained and coarsely chopped
1 cup grated mozzarella cheese
1 cup grated white cheddar cheese
1 cup finely grated, fresh parmesan cheese

Steps:

  • Grease a large, shallow casserole.
  • Preheat the oven to 375°F (150ºC).
  • Cook the pasta in a large pot or Dutch oven of boiling, salted water for about 15 minutes or until al dente.
  • Drain and return to the pot.
  • While the pasta is cooking, heat the oil in large frying pan over medium high heat.
  • Add the onion, mushrooms and garlic and cook, stirring occasionally for about 5 minutes or until the onion is softened.

2 cups shredded part-skim mozzarella cheese
1/2 pkg light cream cheese (250 g), cubed

  • In a medium saucepan cook the pasta according to pack instructions, drain in a colander, rinse with cold water and set aside.
  • Melt the butter over a low heat in the large saucepan. Once the butter it melted, add the flour and stir with the wooden spoon to form a sort of paste. Cook for another 1-2 minutes.
  • Gradually stir in the milk, approximately 100ml at a time, stirring out any lumps from the mixture.
  • Continue stirring until the sauce thickens, then add the next bit of milk. When the sauce is ready, in around 10-15 minutes, it will be fairly thick, smooth and steaming. Don't allow it to boil (Hint! You may want to gradually increase the heat from low to medium-low as you add more milk)
  • Remove the sauce from heat and stir in 250g of the cheese, mixing well until the cheese has melted.
  • Transfer the pasta into the ovenproof dish, pour the cheese sauce over it and stir the mixture around, making sure that all of the pasta is covered in sauce.
  • Sprinkle the mixture first with breadcrumbs, then with the remaining cheese, finally adding a dash of dried chives (optional).
  • Bake for approximately 30 minutes until the cheese is browned and bubbling. Allow to cool for at least 5 minutes before serving.

2 tablespoons olive oil, plus more for brushing the pan
1 pound baby bella (cremini) mushrooms, sliced
6 cloves garlic, thinly sliced
1 (16-ounce) bag frozen broccoli, defrosted (may substitute with 5 cups blanched fresh chopped broccoli)
7 sun-dried tomatoes, soaked in hot water for 10 minutes, drained and thinly sliced (about 1/3 cup)
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 (16-ounce) container part-skim ricotta cheese
4 cups marinara sauce (homemade or store-bought)
1 cup (4 ounces) shredded part-skim mozzarella cheese
1/4 cup (1/2 ounce) grated parmesan cheese
Chopped fresh flat-leaf parsley, for serving (optional)

Steps:

  • 1 Bring a large pot of water to a boil
  • 2 Add the pasta and cook for 2 minutes less than suggested in the package directions
  • 3 Drain and return the pasta to the pot
  • 4 Meanwhile, position a rack in the middle of the oven and preheat to 375 degrees
  • 5 Brush a 9-by-13-inch ovenproof dish with oil
  • 6 In a large skillet over medium heat, heat the oil until shimmering
  • 7 Add the mushrooms and cook, stirring occasionally, until their liquid evaporates and they begin to brown, about 8 minutes
  • 8 Add the garlic and cook, stirring frequently, until aromatic, 2 minutes more
  • 9 Add the broccoli, sun-dried tomatoes, basil, oregano, salt and pepper and stir to combine
  • 10 Add the vegetables to the drained pasta in the pot, along with the ricotta and marinara, and stir to combine well
  • 11 Transfer the mixture to the prepared dish and evenly spread it out
  • 12 Sprinkle the top with the mozzarella and Parmesan cheeses, and cover the dish loosely with foil
  • 13 Bake for 15 minutes, then remove the foil and bake for an additional 20 to 25 minutes, or until the sauce is bubbling and the cheese is melted
  • 14 Let sit for 10 minutes before serving
