GINGER CHICKEN STIR-FRY

1 pound skinless, boneless chicken breasts, sliced 1/4 inch thick
1 tablespoon plus 2 teaspoons cornstarch
1 tablespoon soy sauce, plus more for serving
3/4 cup low-sodium chicken broth
2 teaspoons rice wine vinegar
3 tablespoons vegetable oil
4 cloves garlic, sliced
2 tablespoons minced peeled fresh ginger
8 ounces snow peas, trimmed
1 bunch broccolini, trimmed and halved lengthwise if thick
4 scallions, thinly sliced
2 1/2 cups cooked white rice or quinoa, for serving
Toasted sesame seeds, for topping

Steps:

  • Toss the chicken with 1 tablespoon cornstarch and 1 teaspoon soy sauce in a medium bowl; let sit 5 minutes. In a separate bowl, stir together the chicken broth, remaining 2 teaspoons each cornstarch and soy sauce and the vinegar until smooth; set aside.
  • Heat 2 tablespoons vegetable oil in a large nonstick skillet over high heat. Add the chicken and cook, stirring once or twice, until golden, about 3 minutes. Transfer to a plate.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Add the garlic and ginger and cook, stirring, until lightly browned, 30 seconds. Add the snow peas, broccolini and half of the scallions; cook, stirring, until the vegetables start softening, about 2 minutes. Stir the chicken broth mixture and pour it into the skillet. Return the chicken to the skillet and cook, stirring, until the sauce thickens and coats the chicken and vegetables, 1 to 2 minutes.
  • Divide the rice or quinoa among bowls and top with the stir-fry and remaining scallions. Sprinkle with toasted sesame seeds and serve with more soy sauce.

  • Dissolve bouillon in water. Combine the cornstarch and soy sauce until smooth; add to bouillon. Set aside. Toss beef with garlic, ginger and pepper. In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until meat is no longer pink; remove and keep warm. , Heat remaining 1 tablespoon oil; stir-fry vegetables until crisp-tender. Stir soy sauce mixture and add to the skillet; bring to a boil. Cook and stir for 2 minutes. Return meat to pan and heat through. Serve with rice.

1/2 lb rainbow bell pepper, julienned into strips
2 ears sweet corn, shucked and kernels cut off

zest and juice 1 orange
1 tbsp reduced-salt soy sauce
2 tsp white wine vinegar or rice vinegar
300g pack of 2 white fish fillets or loins
1 tbsp very finely shredded ginger
2 tsp sesame oil
10 spring onions , halved and sliced lengthways
2 garlic cloves , thinly sliced
1 red pepper , deseeded and sliced
140g beansprouts
1-2 tsp sesame seeds , toasted

Steps:

  • Mix together the orange zest and juice, soy and vinegar. Line the top of a steamer with baking parchment and heat water in the base. Top the fish with a little of the ginger, add to the steamer and spoon over 2 tbsp of the dressing. Cover and steam for 5-6 mins until the fish flakes easily.
  • Meanwhile, heat the oil in a non-stick wok and stir-fry the spring onions, garlic, pepper and remaining ginger for 2 mins. Add the beansprouts and cook for 2 mins more. Pour any juices from the fish into the veg. Stir through the dressing, then divide between bowls, top with the fish and scatter over the sesame seeds.

Forget a takeaway - make this beef and green pepper stir-fry with fragrant lemongrass and ginger instead. Marinate the beef while you prep the other ingredients

350g lean beef, cut across the grain into thin slices (you need a quick-cooking cut, such as minute steak)
1 lemongrass stalk, trimmed and finely chopped
1 tbsp soy sauce
2 tbsp fish sauce
4 tsp brown sugar
½ tsp chilli flakes
1 lime, juiced
3 tbsp vegetable oil
1 green pepper, thinly sliced
2 bunches of spring onions, green and white parts separated and finely sliced
6 garlic cloves, finely chopped
1 tbsp grated ginger
small bunch of basil, or purple basil, leaves picked and roughly chopped
cooked rice (about 250g uncooked weight), or cooked rice noodles
50g roasted peanuts, roughly chopped

Steps:

  • Toss the strips of steak, the lemongrass, soy sauce, half the fish sauce, half the sugar and half the chilli flakes together in a bowl. Set aside in the fridge to marinate for at least 20 mins or up to 6 hrs.
  • Mix the remaining fish sauce with the lime juice, remaining chilli flakes, the rest of the sugar and 3 tbsp water, then set aside.
  • Heat 1 tbsp vegetable oil in a large non-stick or cast iron wok or frying pan over a high heat. Once hot, tip in half the marinated steak strips and stir-fry for 2 mins until just cooked through, then remove to a large plate using tongs or a slotted spoon and repeat using another 1 tbsp of oil and the remaining beef. Remove to the plate, then wipe the wok or pan clean using kitchen paper.
  • Add the remaining oil to the pan and fry the green pepper and the white parts of the spring onion. Stir-fry over a high heat for 2-3 mins, then add the garlic and ginger and stir-fry for another 45 seconds-1 min. Return the steak to the pan, stir well, then add the lime dressing and most of the basil leaves, mixing well to coat.
  • Divide the stir-fry between bowls alongside rice or noodles, then scatter with the chopped peanuts, any remaining basil leaves and the green parts of the spring onions.

Steps:

  • Pour canola oil into wok 1-inch deep; heat oil over high heat until hot but not smoking. Place 1/4 of the beef strips into hot oil; separate strips with a fork. 2 large oranges
3 tablespoons dry sherry
3 tablespoons soy sauce
2 tablespoons fresh ginger, minced or grated
1 lb boneless beef roast, partially frozen
2 teaspoons cornstarch
2 tablespoons salad oil
3 stalks celery, thinly sliced diagonally
1 cup fresh bean sprout
1 cup fresh snow pea

Steps:

  • Grate peel from one of the oranges.
  • Squeeze juice from both oranges into a bowl, add grated peel, sherry, soy sauce, and ginger.
  • Slice meat 1/8th inch thick across the grain, place in marinade.
  • Let meat marinate at least 5 minutes or cover and chill for 24 hours.
  • Remove beef from marinade before cooking and set aside.
  • Mix marinade with corn starch.
  • Heat wok or heavy frying pat to high heat, add 2 tsp.
  • oil.
  • Stir fry meat quickly, in several small batches, until lightly browned.
  • Add more oil as needed.
  • Stir fry celery, sprouts and snow peas until peas are bright green, about 1 minute.
  • Add marinade, stir until boiling, mix in meat and remove from heat and serve.

  • Toss steak in a medium bowl with sugar, sesame oil, 1 tsp. soy sauce, and 1 tsp. salt to coat and let sit 20 minutes.
  • Place a large skillet over high heat. Pour in vegetable oil and swirl to coat bottom of pan. The oil should be shimmering and you should see some wisps of smoke—if it’s not hot enough, the meat will steam instead of getting deeply browned.
  • Add steak to skillet in an even layer (it’s okay to crowd it a bit) and cook, undisturbed, until brown around the edges, about 2 minutes. Turn steak over and add onion, ginger, lots of pepper, and ⅓ cup water. Cook, tossing often, until onion is just tender and ginger is softened, about 2 minutes.
  • Remove skillet from heat and add butter, lemon juice, and remaining 1 Tbsp. soy sauce. Toss until butter is melted and coats steak. Taste and season with more salt if needed.
