WHOLE GRILLED PACIFIC SPINY LOBSTER WITH MANGO PAPAYA SALSA
Steps:
- Bring a large pot of water to a boil. Plunge the lobsters into the boiling water, cook for 8 minutes. Remove carefully and submerge in a bowl of ice water to immediately stop the cooking. Split the lobsters in half lengthwise and rinse out the head cavity and any veins that may be in the tail. Set aside.
- Toss the papayas, mangos and tomatoes in a mixing bowl with the lime juice and cayenne and salt, to taste. Allow to sit for 10 minutes.
- Meanwhile, preheat an outdoor grill to medium-high heat.
- When ready to serve, brush a small amount of oil on the lobster meat and place the lobsters meat side down on the hot grill. Grill until lobster meat is lightly charred, about 4 minutes. Turn and cook the shell side until lobster is heated through, about 3 minutes more. Remove the lobster meat from the shell. Add the mint to salsa, mix, and put on serving plates. Serve the lobster meat on top of the salsa.
MANGO AND BRIE QUESADILLA WITH SOUR CREAM AND LIME DIPPING SAUCE

- Heat a 10-inch nonstick saute pan over medium-high heat. Place 1 tortilla in the dry pan for approximately 1 minute per side, or until it just begins to brown. Remove. Repeat with the second tortilla. (If your tortilla expands like a blowfish, poke it with a fork to release the hot air.)
- After the second tortilla has browned, leave it in the pan and reduce heat to medium-low. Spread half of the mango evenly over the tortilla, then top with half of the peppers, scallions, cilantro, and Brie strips. Top with the first tortilla. Cover the pan with a lid, reduce heat to medium-low, and cook for 2 minutes.
- Flip the quesadilla with a spatula, re-cover the pan, and continue cooking for 2 more minutes. (Don't worry if a bit of cheese escapes and begins to sizzle loudly.)
- Remove the quesadilla from the pan, let sit for 1 minute, then slice into 8 wedges (like a pizza). Serve immediately with the sour cream dipping sauce.
- Repeat with the remaining ingredients. Serve with Sour Cream and Lime Dipping Sauce.
- Blend sour cream, lime juice and salt with a fork until the mixture is smooth. Transfer to a small decorative bowl or teacup and refrigerate.
LOBSTER QUESADILLA WITH TROPICAL FRUIT SALSA
Steps:
- In a large skillet, heat the oil over medium-high heat. Add 1 1/2 cups red peppers, the green peppers, onion, cumin, and cayenne pepper. Cook until the vegetables are tender, but still firm, about 7 to 8 minutes. Remove from the heat and cool.
- In a medium bowl, mix the lobster meat, cheese, jalapenos, salt, and cooled pepper mixture. Divide the mixture into 6 portions. Sandwich each portion between 2 tortillas, spreading the lobster mixture evenly.
- Heat a grill or large skillet over medium heat and film the bottom with some of the butter. Place as many quesadillas as will fit without touching, and cook each side until the tortillas are golden brown and the cheese has melted, about 5 minutes. Repeat with remaining butter and quesadillas.
- Cut quesadillas into wedges. Place the quesadillas on plates and garnish with remaining red pepper, the green onion, sour cream, and a pineapple top. Serve immediately with Tropical Fruit Salsa.
- In a medium bowl, combine all ingredients and mix well. Refrigerate for 45 minutes to 1 hour before serving.

- Preheat oven to 400 degrees. F. Cut onion and tomatoes in half and place on a baking sheet. Put into hot oven and roast for 15 minutes or until softened. Remove and let cool slightly and coarsely chop.
- Combine all ingredients together in a mixer except for tortillas and lobster meat. On an 8 inch flour tortilla, spread 1/2 cup of the mixture and 3 ounces of lobster meat evenly on 1/2 of tortilla and fold over to create a half moon shape. Repeat with each tortilla.
- In a large skillet over medium heat, add oil and pan-fry tortilla until brown and crispy, about 3 minutes per side. Cut into wedges and serve with salsa, guacamole and sour cream.
ISLAND QUESADILLAS WITH LIME SOUR CREAM AND PUREED MANGO DIP

- Preheat oven to 400 degrees F.
- Heat a stove-top grill pan or griddle to medium-high heat and coat with cooking spray. Season shrimp all over with salt, black pepper and cumin. Place shrimp on the hot pan and cook 2 minutes per side, until bright pink and cooked through. Place pineapple on grill next to shrimp and cook 2 minutes per side, until golden brown. Remove shrimp and pineapple from grill and cut both into 1-inch chunks.
- Arrange 4 tortillas on a flat surface. Top with, shrimp, pineapple, cheese, red peppers, and scallions. Place second tortilla on top. Transfer with hands or with a spatula, to a baking sheet. Place a second baking sheet on top to weigh down the tortillas. Bake for 10 minutes, or until cheese is melted and tortillas are golden brown.
- While the quesadillas are baking, in a small bowl, using a spoon, combine sour cream, lime zest and garlic. Mix well to combine.
- In a food processor, combine mango and lime juice. Puree until smooth and remove from food processor and place in a bowl. Using a rubber spatula, stir in cilantro.
- Remove quesadillas from the oven. Cut quesadillas into wedges and serve with lime sour cream and pureed mango on the side.
MANGO QUESADILLAS
The flavor and texture of mango goes well with black beans and Cheddar cheese in this easy main dish. The recipe uses vegetarian chicken substitute, but real chicken would work just as well.

- Place the beans in a saucepan over medium heat, and cook 5 minutes. Partially mash with a potato masher or large spoon. Reduce heat to low, and keep warm until ready to serve.
- Heat the oil in a skillet over medium heat. Stir in the onion and red bell pepper. Season with chili powder, cayenne pepper, oregano, and basil. Cook and stir until vegetables are tender. - In a large bowl, mix together the first 6 ingredients.
- Add the green onions and next 5 ingredients; stir to mix.
- Fold in the sour cream and 1 cup of the shredded cheese.
- Butter on side of each tortilla.
- Turn the tortilla butter side down and sprinkle tortillas evenly with 1 1/2 cup cheddar cheese.
- Spread about 1/2 cup lobster filling over the lower half of each tortilla.
- Sprinkle tortillas with the remaining 1 1/2 cup shredded cheese.
- Fold the top half of the tortillas down over the filling.
- Place tortillas on a parchment- or foil-lined baking sheet.
- Bake at 450 degrees for 8 minutes or until golden brown.
- Remove quesadillas from oven and cut each in half.

CARIBBEAN COCONUT CHICKEN BITES WITH MANGO CREAM
The Mango cream is key to these, so don't forget to dunk them! Be careful not to cut the pieces too large, it is raw chicken and must be cooked through, so if you cut them to large the coating will burn.

- Mango cream:.
- Place the mango in a mini food processor and pulse till it is a pulp.
- Scrape all of this into a bowl adding the sour cream, sugar, and extract. Mix well and set aside. Do not refrigerate this, it is best served at room temperature.
- For Chicken -- in a bowl place 1 cup plus 2 T flour and set aside.
- In another bowl place the remaining flour (1 cup plus 2 T), sugar, and salt.
- Stir milk and extracts into this. The mixture should resemble a thin pancake batter (you may have to add a little more milk).
- Set this aside.
- Place the bread slices in a food processor and pulse till you have fine crumbs, measure out approx 1-1/2 cups.
- Place these on a pie pan and place in a 350°F oven till lightly toasted and dried out.
- Mix toasted bread crumbs in a third bowl with the coconut.
- Preheat a deep fryer with oil according to the directions of the fryer.
- Place a cooling rack on a large cookie sheet and cover the rack with paper towels.
- Now one at a time drag each chicken bite through the pan with just flour, then using a slotted spoon drop it into the milk mixture coat well and use the spoon to retrieve it.
- Drop the coated bite into the coconut mixture being careful not to get to much of the excess wet mixture into the coconut. cover evenly with the coconut mixture and set on a second cookie sheet.
- After all the chicken pieces are ready begin to cook them in the hot oil. Just do a few at a time to keep your oil from cooling to much and becoming gummy. The heat time will vary a great deal on this because it is raw meat and it depends on how big of chunks you make them. Make sure they are cooked completely, you may want to test the first one out and see how long it takes to get it done thoroughly.
- I cook mine for approx 5 minutes and the batter should turn a nice golden brown.
- Remove from oil and drain on the cookie sheet that has been prepared with paper towels. Serve with mango cream.

- In a saute pan, add one tablespoon extra virgin olive oil and one tablespoon of butter. Next, add the red onion, red pepper, garlic, and salt and saute over medium heat until vegetables are semi-tender, about three minutes. Add chopped lobster meat to onion mixture and cook to heat through about one minute. Place in a medium-sized bowl and set aside. Wipe the saute pan clean with a paper towel. Add the remaining tablespoon of olive oil to the saute pan and heat on medium temperature.
- Finely dice the mango, red onion, and red pepper and toss together in a medium-sized bowl. Finely chop the cilantro and add to the mango mixture. Lastly, add lime juice and salt and mix until fully incorporated. Serve on the side of the lobster quesadillas. Enjoy!
