3 oz fresh basil leaves (you can remove the stems if you like, but I never do)
3 large cloves fresh garlic, peeled
1 small shallot, peeled and cut into quarters
3/4 cup olive oil (can also use avocado oil)
1/4 cup organic white wine vinegar
1/4 cup fresh lemon juice
1/2 tsp sea salt (or to taste)
1/4 tsp coarse ground black pepper (or to taste)
2 tsp raw honey (can also sub a few drops of stevia if preferred)

Steps:

  • Rinse your basil and place in the blender. You can remove the stems, but I never do.
  • Peel your garlic cloves and place in blender.
  • Peel your shallot and cut into quarters. Add to blender.
  • Add the rest of your ingredients to the blender.
  • Puree for 15-30 seconds or until the mixture is smooth and creamy.
  • Store in an airtight container in the fridge. Will keep for 4-6 days.

1/4 cup champagne vinegar
2 tablespoons grated parmesan cheese

  • In a blender, combine the basil, vinegar, and Parmesan cheese until the basil is pureed.

1 small clove garlic
1/4 cup white wine vinegar (or champagne vinegar)
1/2 cup extra-virgin olive oil
Dash sea salt (to taste)
Dash pepper (to taste)

Steps:

  • Gather the ingredients.
  • Rinse the basil leaves and pat them thoroughly dry.
  • Peel and mince the garlic.
  • Put the garlic and vinegar in a blender or food processor . Whirl until the garlic is thoroughly pureed into the vinegar.
  • Tear the basil leaves into pieces as you add them to the blender. Whirl to puree them into the vinegar.
  • With the blade whirling, slowly drizzle in the olive oil until you have a smooth (and shockingly bright green!) dressing. Add salt and pepper to taste.

It's called The Best Vinaigrette Dressing in the Celebrations on The Bayou cookbook, put out by the Junior League of Monroe, Louisiana. The recipe calls for white wine vinegar but you can use either red or white wine or champagne vinegars. And, it's delicious with Feta crumbled over your green salad. 7/2013: Added a tweak of a little agave or honey to soften the taste.
