Steps:
- Heat oven to 350ºF.
- Cut cheese into 8 slices; cut each slice crosswise in half. Combine chicken and sauce.
- Place crackers in single layer on baking sheet; top with chicken and cheese.
- Bake 4 to 5 min. or until cheese is melted. Top with onions.

Steps:
- Heat a medium skillet over medium high heat. Add extra-virgin olive oil and garlic and onion and saute, stirring constantly 2 to 3 minutes then add rice and season with a little salt and pepper. Cook another minute or so then add wine and let it completely absorb, 30 seconds. Add about 1 cup chicken stock and stir. Reduce heat a bit to medium. Stir often and continue adding a half cup of liquid each time liquid becomes completely absorbed. Cook 22 minutes, using as much stock as is necessary to result in creamy-consistency rice with a bite to it.
- When rice is cooked to desired consistency, remove from heat and stir in cheese, parsley and peas and stir to combine and to heat peas through.

- Preheat oven to 400 degrees F (200 degrees C). Spray mini muffin tin cups with cooking spray.
- Prepare rice according to package directions. Allow to cool slightly. Combine rice, black beans, barbeque pulled pork, cheese, and eggs in a bowl; mix well.
- Drop mixture by heaping tablespoons into prepared mini muffin tins, filling each cup to the top.
- Bake in preheated oven until hot, about 20 minutes.
- Allow bites to cool 5 to 10 minutes before popping them out of the muffin tin.

CHEESE BITES (TOTALLY ADDICTIVE)
Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Steps:
- Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
- Roll dough into 1 inch balls and place on an un-greased baking sheet.
- If using olives, form each ball around 1 olive.
- If using pecans, press 1 pecan half onto each ball.
- Can bake them right now (see instructions below) or freeze for later.
- Place in trays in freezer for 30 minutes.
- Remove from freezer and place in freezer bags or container.
- Seal and freeze.
- Can bake them straight from freezer.
- Preheat oven to 425°F.
- Place cheese balls 3 inches apart on an un-greased baking sheet.
- Bake 15-17 minutes if frozen, 13-15 minutes if thawed.
SPICY CHEESE BITES

Steps:
- Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
- Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
- When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

EASY CHEESY BEEF BBQ BAKED RICE
This is really good and simple to throw together, great for a fast and simple weeknight meal.... the Minute rice really cuts the cooking time down! All the seasonings and cheese can be adjusted to suit taste...from stove to table in around 1 hour!

- Set oven to 350 degrees.
- In a extra large (oven-proof) fry pan, brown the ground beef with the chopped onions, green pepper and garlic, until beef is no longer pink; drain all fat.
- Add in ALL remaining ingredients (except the rice); mix well to combine.
- Adjust all seasoning to suit taste.
- Cook and simmer for 5-7 minutes (on top of stove).
- Add in the Minute rice; stir to combine.
- Cover with lid and place/cook in the oven for 25 minutes, or until rice is soft and is desired texture.
- Sprinkle with more grated cheddar cheese if desired.
- Delicious!
