1/2 cup packed light brown sugar
5 tablespoons butter, melted
2 peaches, pitted, peeled and sliced 1/2-inch thick
1 cup blueberries
1 cup granulated sugar
1/2 cup (1 stick) butter, at room temperature
4 ounces cream cheese, at room temperature
1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
2/3 cup milk
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F and place a rack in the center of the oven. Grease the sides of a 9-by-3-inch round cake or bundt pan.
  • Sprinkle the brown sugar in the pan and pour in the melted butter. Top with the peaches and blueberries and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar with the room temperature butter on medium speed until fluffy, then increase to high speed for 3 to 5 minutes. Turn off the mixer, add the cream cheese ,and then mix on medium speed.
  • In a medium bowl, whisk to combine the flour, baking powder and salt.
  • Turn the mixer off and add the eggs, then mix on low speed to beat in the eggs. Add the flour mixture slowly, then add the milk and vanilla extract and mix until combined. Spread the batter over the fruit and transfer to the oven.
  • Bake until a toothpick inserted in the center comes out clean, 1 hour.
  • Transfer the pan to a wire rack to cool for 5 minutes, then run a knife around the sides to loosen the cake and invert onto a plate. Let cool and serve.

1/2 cup unsalted butter, softened
4 ounces cream cheese, softened
2 cups sugar
5 large eggs
1/4 cup peach schnapps or 1/4 cup peach nectar
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups diced fresh peaches
1 cup fresh blueberries

Steps:

  • Generously grease and sugar a 10-inch tube pan; set aside.
  • Beat butter and cream cheese at medium speed for about 2 minutes or until creamy.
  • Gradually add the sugar and beat for 5 to 7 minutes. Add the eggs one at a time and beat until the yellow just disappears.
  • Stir in the brandy.
  • Combine the flour, baking powder, and salt; add to the butter mixture beating at low speed just until blended.
  • Gently fold in the peaches and the blueberries.
  • Pour into pan bake for 325°F for 1 hour and 25 minutes.
  • Cool in the pan for 15 minutes remove and cool completely on wire rack.

2 pounds firm, ripe peaches (6 to 8 peaches)
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 cup fresh blueberries (1/2 pint)
1 cup all-purpose flour
1/3 cup granulated sugar
1/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 pound (1 stick) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Peel the peaches, slice them into thick wedges, and place them in a large bowl. Add the lemon zest, lemon juice, granulated sugar, and flour. Toss well. Gently mix in the blueberries. Allow the mixture to sit for 5 minutes. Spoon the mixture into ramekins or custard cups.
  • For the topping, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas. Rub the mixture with your fingertips until it's in big crumbles, then sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.
  • If you want to make these early, store the unbaked crumbles in the refrigerator and bake before dinner.

  • Carefully remove the skillet from the oven, and drop 6 to 8 (1/2 cup) portions of biscuit dough on top of the cooked fruit, spacing the mounds about a 1/2-inch apart.
  • Increase the oven temperature to 425 degrees F and bake until the biscuits are golden brown on top and the fruit is bubbling, about 30 minutes. Allow to cool for 15 minutes before serving.

1 (16 ounce) can peaches, sliced
1/4 cup sugar
1/4 cup flour
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400 degrees.
  • Drain peaches and blueberries. Spread fruit on paper towels to drain.
  • Combine sugar, flour and cinnamon in a small bowl. Cut in butter and set aside.

1 tablespoon freshly squeezed lemon juice
1 teaspoon finely grated, peeled fresh ginger

1 vanilla bean, halved lengthwise
1 cup plus 2 tablespoons heavy cream, plus more for brushing

Steps:

  • Preheat oven to 375 degrees. with racks in upper and lower thirds. Stir together peaches, blueberries, 1/3 cup granulated sugar, the cornstarch, brown sugar, lemon juice, ginger, and a pinch of salt in a large bowl. Transfer to a 12-by-8 1/2-inch (2-quart) baking dish; set aside.
  • Whisk flour, baking powder, 1/2 teaspoon salt, and remaining 1/3 cup granulated sugar in a medium bowl. Cut butter into flour mixture using a pastry blender or 2 knives to form clumps that are no larger than small peas.

  • Pre-heat the oven to 160°C/Gas 3. Grease and line the base and sides of a 20cm, deep round cake tin. (We love using ‘push pan’ from Lakeland as it gives a clean lined sponge.)
  • Place the spread or butter in a large mixing bowl and add the sugar. Cream together well in a mixer or with a wooden spoon until soft and fluffy. Crack the eggs into a jug and whisk with the peach puree. Stir in a little at a time until incorporated. Mix the flour, salt, ground almonds, chopped rosemary and baking powder in a mixing bowl then fold into the butter and egg mix then stir in the vanilla extract and yoghurt.
  • Scatter in half of one punnet of blueberries into the prepared tin, followed by half the sponge mixture. Top with the remaining ½ punnet blueberries and finish with the rest of the cake mix. Place the cake in the oven and bake for 45-50 minutes until golden and risen or if a skewer is poked in the middle it comes out clean.
