1/3 c. bourbon
2 14-oz. cans Whole Berry Cranberry Sauce
1 7-oz. can chipotle peppers in adobo sauce
1 tsp. Worcestershire sauce
1/2 tsp. garlic powder
32 pre-cooked wings
Lime zest, for garnish
Orange zest, for garnish

Steps:

  • Preheat a medium saucepan over medium-high heat. Add bourbon, bring to a simmer and allow to reduce by a third.
  • Place one can of cranberry sauce in the bowl of a manual, plunge-type vegetable chopper. Chop to desired consistency. Empty the chopping bowl into the saucepan. Repeat with second can of cranberry sauce, then chipotle peppers. (Alternately, you could use a food processor, or, after all the ingredients are in the pan, an immersion/stick blender.)
  • Add Worcestershire sauce and garlic powder to the saucepan and stir until combined. Bring to a simmer and cook for 10 minutes. Remove from heat and let cool slightly.
  • Place wings in a large bowl, then ladle sauce over the wings and toss to coat. Garnish with lime and orange zest (if desired) and serve.

3 pounds of chicken wings
1/3 cup olive oil
3 tablespoons chopped chipotles in adobo (include some of the sauce)
3 tablespoons lime juice
1 tablespoon minced garlic
salt and pepper

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine 1/3 cup olive oil, 3 tablespoons chopped chipotles in adobo (include some of the sauce), 3 tablespoons lime juice, 1 tablespoon minced garlic, salt and pepper in a large bowl.
  • When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill and cook, uncovered, turning as necessary, until they're nicely browned on both sides.

This is adapted from a recipe from one of our favorite cooking magazines, Cooking Pleasures. It is a different type of marinade for wings, as it contains no sugar or honey. The chipotle mayonnaise for dipping is really tasty, so don't skip it.

4 pounds chicken wings, cut at joints, with bony wing tips reserved for stock or discarded, or 3 pounds chicken drumettes
2 teaspoons cumin seeds
2/3 cup freshly squeezed lime juice (from 5 to 6 limes)
1/3 cup olive oil
Grated zest of 2 limes
6 cloves garlic, finely minced
2 teaspoons crumbled dried marjoram or Mexican oregano
1½ teaspoons salt
1 cup mayonnaise
½ cup sour cream
2 to 3 canned chipotle chiles in adobo sauce, to your taste, finely chopped, plus 1 tablespoon of the sauce
1 tablespoon Dijon mustard

Steps:

  • COOKER: Medium or large round or oval
  • SETTING AND COOK TIME: HIGH for 3 to 4 hours
  • Rinse the wings and pat dry.
  • To make the marinade, place the cumin seeds in a small skillet and toast over medium heat until golden and fragrant, shaking the pan to assure even toasting. Remove from the skillet and crush in a mortar with a pestle. Combine the crushed cumin seeds with the remaining marinade ingredients in a large shallow bowl and whisk to combine. Add the wings, in a single layer if possible, so they sit in the marinade. Cover and refrigerate for about 4 hours.
  • Coat the inside of the crock with nonstick cooking spray. Heat a large, heavy skillet over medium-high heat. Lift the chicken out of the marinade, reserving the marinade, and brown it nicely in the hot skillet, 3 to 5 minutes per side, in batches if necessary. As the wings brown, transfer them to the slow cooker. Pour over the reserved marinade. Cover and cook on HIGH for 3 to 4 hours. If possible, stir gently halfway through cooking with a wooden spoon, bringing the wings on the top to the bottom to coat with sauce.
  • To make the chipotle mayonnaise, combine all the ingredients in a small bowl and whisk until smooth, or pulse a few times in a food processor for a smoother sauce; cover and refrigerate until ready to serve.
  • Serve the wings hot or warm, with the chipotle mayonnaise for dipping.

2 teaspoons cumin
1 1/2 teaspoon Kosher salt
1 tablespoon smoked paprika
1/4 teaspoon black pepper
1 tablespoon baking powder
2 tablespoons cilantro leaves to garnish ((optional))
Lime wedges to serve ((optional))
7.5 oz (221 ml) Coca Cola zero ((one small can))
4 chipotle peppers in abodo sauce, (puréed (see notes))
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 cup brown sugar
2 tablespoons soy sauce
1/2 teaspoon cornstarch dissolved in 1 teaspoon cold water

Steps:

  • Preheat oven to 400º F (200º C). Line a baking sheet with foil. Place a wired rack on top and spray it with oil.
  • Pat dry the chicken wings with a paper towel.
  • Place cumin, salt, paprika, black pepper, and baking powder in a gallon-sized bag. Shake the bag to combine. Add chicken and shake again to coat it evenly with the seasoning.
  • Place seasoned chicken over the wired rack and spray with oil.
  • Bake for 35 -40 minutes, turning once, or until cooked through and golden brown and crispy.
  • In the meantime, make the chipotle sauce: Place a medium saucepan, over medium heat, add the Coca-Cola, chipotle, onion, garlic, brown sugar, and soy sauce; mix to combine. Bring to a boil; reduce heat to low and simmer until reduced by half, about 15 minutes. Stir in cornstarch slurry and cook until thickened, about 2 minutes. Set aside.
  • When the chicken is cooked. Baste both sides of the chicken generously with the wing sauce and bake for 10 -15 minutes.
  • Garnish with cilantro, if using, and lime wedges. Serve hot.

The wife and kids loved the Wings. The In-Laws even said it was the best Wings they have ever had. The Sauce has the best of both worlds, Spicy and Sweet. 1 teaspoon garlic powder
1 ½ cups chipotle peppers in adobo
¼ cup lime juice
¼ cup honey

Steps:

  • Pat dry chicken and place in a large mixing bowl or plastic bag. Toss with cornstarch, garlic powder, and one teaspoon of kosher salt.
  • Place chicken in a single layer on a cookie sheet or wire rack and refrigerate for at least an hour, up to overnight.
  • In a food processor or blender, combine chipotles, lime juice, honey, and the remaining salt. Puree until smooth. Set aside until ready to grill.
  • Preheat grill to medium high heat. Grill wings until just starting to brown on the underside, about 5 minutes, then flip and repeat.

Taste as you go, adjusting the seasoning as you see fit. Add the lime juice at the very end, and stir. Remove from heat, cover loosely, and set aside to keep warm while the chicken cooks. As the glaze sits, it will thicken and become stickier by the minute — just a heads up.
  • Rinse the chicken wings under cold water quickly, then pat each wing completely dry with paper towels. Season each chicken wing all over with kosher salt, black pepper, chili powder, smoked paprika, and a little cayenne pepper. If using the scallions, place them on the bottom of the greased foil-lined baking sheet. Arrange each wing flatter side up (see photo for reference) on top of the scallions, leaving at least 1-inch of space between each wing. If you arrange the wings too closely together, they will steam rather than crisp up. Sprinkle the lime zest over the top of each wing, evenly.
