Yield Makes about 5 1/2 dozen cookies

For cookies
3 cups all-purpose flour
1 teaspoon grated lemon zest
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2/3 cup well-shaken buttermilk
For glaze
1 1/2 cups confectioners sugar
3 tablespoons well-shaken buttermilk
1/2 teaspoon pure vanilla extract

Steps:

  • Make cookies:
  • Preheat oven to 350°F with rack in middle. Butter 2 large baking sheets.
  • Whisk together flour, zest, baking soda, and salt.
  • Beat together butter and sugar in a large bowl with an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Mix in flour mixture and buttermilk alternately in batches at low speed, beginning and ending with flour mixture, until smooth.
  • Drop level tablespoons of dough about 1 1/2 inches apart onto baking sheets. Bake, 1 sheet at a time, until cookies are puffed and edges are golden, 12 to 15 minutes per batch. Cool cookies on sheets 1 minute, then transfer cookies to racks.
  • Glaze cookies:
  • Whisk together all glaze ingredients and brush onto tops of warm cookies.
  • Let stand until cookies are completely cooled and glaze is set.

1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour

FROSTING:
3 tablespoons butter, softened
3-1/2 cups confectioners' sugar
1/4 cup whole milk
1 teaspoon vanilla extract
1/2 cup finely chopped walnuts, optional

Steps:

  • Preheat oven to 375°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In a separate bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until edges are lightly browned, 10-12 minutes. Remove to wire racks to cool. , For frosting, combine butter, confectioners' sugar, milk and vanilla; beat until smooth. Spread over cookies; if desired, sprinkle with chopped walnuts.

Grandma Amico made the best buttermilk sugar cookies. These cookies are soft and fluffy and a family tradition for us. Not just for the holidays, but whenever we get the urge for cookies, we make these. I will also leave dough in the fridge for up to a week and make cookies whenever I like. Dough freezes well for later cookie baking.

1 cup white sugar
½ cup shortening
½ cup buttermilk
1 egg
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
1 cup confectioners' sugar, or more as needed
1 tablespoon milk, or more as needed

Steps:

  • Mix sugar, shortening, buttermilk, and egg together in the bowl of an electric stand mixer (such as KitchenAid®) until creamy.
  • Combine flour, baking powder, baking soda, vanilla extract, and salt in a bowl. Beat into sugar mixture, 1/2 cup at a time, mixing well after each addition. Leave dough to set in a refrigerator for at least 2 hours to overnight.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Roll dough out on a lightly floured work surface using a lightly floured rolling pin to desired thickness. Cut into shapes using cookie cutters and place onto ungreased cookie sheets.
  • Bake in the preheated oven until bottoms begin to lightly brown, 8 to 12 minutes. Let cookies cool completely on wax paper or a wire rack, 15 to 30 minutes.
  • Combine confectioners' sugar and milk in a bowl. Mix into a paste, adding more sugar or milk as needed. Spread frosting thinly onto cooled cookies and cover with sprinkles.

2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour

1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream shortening and 1 cup sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder, salt and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition (batter will be moist)., Combine cinnamon and remaining sugar. 2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup unsalted butter (softened)
1 1/2 cups granulated sugar
1 egg
1 teaspoon vanilla extract
3 -4 tablespoons buttermilk
candy sprinkles or colored crystal sugar, for decorating

Steps:

  • Preheat oven to 375°F.
  • In a small bowl, stir together flour, baking soda, and baking powder; set aside.
  • In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.
  • Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining buttermilk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles. You can also roll the cookies in the sugar sprinkles before baking.
  • Bake for 8-10 minutes or until pale golden. Make sure you don't overcook or it won't be chewy! Let stand for 2 minutes before removing to cool on a rack.

A friend of mine gave this recipe to me years ago and my family loves them so much that I have a hard time keeping them in the cookie jar! You can sprinkle the tops of these with a little granulated sugar just before baking or ice after completely cooled.

1 c buttermilk
1 tsp baking soda
1 c crisco, melted
1 tsp baking powder
4 c flour

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Mix sugar and eggs very well. Then add buttermilk and baking powder, blend well.
  • 3. Next, add baking soda and flour, mixing well. Stir in Crisco until blended.
  • 4. Place in refrigerator and chill.
  • 5. Roll cookies into 1/4 inch thickness and cut to desired shape.

3/4 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
3/4 c butter, softened
1 2/3 c sugar, divided
1 tsp vanilla or lemon flavoring
2 large eggs
2/3 c buttermilk

Steps:

  • 1. 1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  • 2. 2. In a bowl sift together flour, baking powder, baking soda and salt
  • 3. 3. In a large bowl beat butter, 1 cup of sugar and flavoring at medium speed with a mixer until fluffy. Add eggs and beat until combined. Add the flour mixture alternate with the buttermilk. Begin and end with the flour mixture. Beat on low speed just until blended and after each addition. (Dough will ber very sticky and soft).
  • 4. 4. In a small bowl place the remaining sugar. Using a scoop, scoop about 1/4 cup of dough and drop into sugar, gently roll to coat. Place on preparred baking sheet. Please note the dough will be very loose..it's ok they turn out great.
  • 5. 5. Bake 13 to 15 minutes or until the edges turn light brown. When you remove from the oven sprinkle with any left over sugar. Cool on the pans for 2 minutes. Remove from pans and cool completly on wire racks.
