Steps:
- Spray wok or large pan with Pam-type spray.
- Add cut up Spam and saute until browned, remove and set aside.
- Cut up pineapple and set aside.
- Spray again and saute veggies until mushrooms have released their liquid.
- Mix rest of ingredients into the cold water, add to pan.
- Stir until mixture has thickened, add pineapple and Spam, heat until warmed through.
- Serve over rice.

- In wok or large skillet, cook oil over medium heat. Add carrot, green onion, garlic and cucumber. Cook over medium heat, stirring occasionally, until crisply tender (4 to 5 minutes).
- Add remaining ingredients except SPAM and bamboo shoots. Continue cooking, stirring constantly, until sauce is thickened (5 to 6 minutes).
- Add SPAM and bamboo shoots. Cook over medium heat until heated through (4 to 5 minutes).
- Serve over rice.

- Stir carrots, onion, bell pepper and sweet & sour sauce into pork mixture. Simmer, covered, 10 minutes longer, stirring frequently.
