- Stir the confectioners' sugar, paprika, salt, garlic powder, cumin and cayenne together in a small bowl. Heat the coconut oil in a very large pot with a lid over medium heat. Add the popcorn and half of the sugar mixture, cover the pot and shake to coat. Add the remaining sugar mixture and continue to shake until well coated. Serve immediately.

- In a heavy pot on high heat, add the oil and 1 kernel of popcorn; then cover. When the kernel pops, add the rest of the kernels and cover. Pop while gently sliding and shaking the pot back and forth to move kernels around inside. Cook until the popping slows dramatically to 1 or 2 pops per second. Remove the popcorn from the pot and pour on top of a wire rack in a parchment-lined baking sheet. Lightly salt. Using the same pot, add the butter, maple syrup, cayenne, cumin, cinnamon and chili powder and stir to combine. Cook over medium-high heat until it bubbles. Gently pour over the popcorn, allow to cool slightly, then tranfer to a bowl, toss with tongs, and serve immediately.

- Place 1/4 cup (60 ml) vegetable oil in a large (at least 6-quart/5.7 L) covered pot. Add a few corn kernels, cover and heat over low heat. When you hear the kernels pop, add the remaining kernels and sugar, cover, and continue to cook, shaking the pot frequently. Do not walk away! Listen to the popping sounds and as they slow down, vent the lid to allow steam to escape.
- With kettle corn I do not wait until all the popping sounds cease; I actually remove the pot from the heat while there is still a bit of popping action; this will minimize burning from the caramelization of the sugar.
- Pour popped corn into a large serving bowl. Sprinkle with salt, cinnamon and chipotle pepper and toss well. Sweet n’ Spicy Kettle Corn is ready to serve and we enjoy is best eaten as soon as possible. It will keep for a few days in an airtight container stored at room temperature (or even up to a week), but there is nothing like having this super fresh!
