CHICKEN SCHNITZEL
German Chicken Schnitzel recipe. This is a grandma recipe so you know it's going to be good. This easy meal only takes 15 minutes! Make sure to serve with classic German sides like potato salad, sauerkraut and spaetzle.

- Put the chicken tenderloins in a shallow pan filled with all purpose flour. Flip the chicken so it's coated with flour on both sides.
- Crack 2 eggs in a bowl or pan, add vegetable oil, and a little bit of salt and pepper for flavor. Use a fork and gently beat the eggs, like you would do for scrambled eggs. Add your chicken to it. Flip to the other side to fully coat the chicken in eggs.
- Add bread crumbs to a bowl. One at a time, put the chicken in the bread crumbs, mixing the chicken around so it's fully coated in bread crumbs. Make sure it's coated completely - all sides and all nooks and crannies!
- Using a large pan, coat lightly in olive oil. The olive oil is going to help us fry the chicken.
- Once the pan is heated up, add chicken and cook on both sides, until browned, crisp and the internal temperature reaches 165 degrees. This will take about 10 minutes.
- Serve on plates with German sides, like potato salad, sauerkraut and spaetzle. Take a fresh lemon and give a little squeeze on top of your chicken schnitzel! Enjoy!

HäNCHEN-SCHNITZEL (CHICKEN SCHNITZEL)

Steps:
- Cut each chicken breast in to two, thin cutlets, by slicing them through the side, as if you were butterflying them, but go ahead and cut right through. Salt and pepper both sides of each of your 4 chicken cutlets. Place them between two sheets of plastic wrap and pound them thin using a meat mallet or rolling pin, to 1/8 inch thick. Set the cutlets aside.
- Melt 2 Tbsp of butter in a medium sauté pan and add enough oil to fill the pan to 1/8 inch deep. Heat the oil and butter over high heat until it begins to crackle. (Tip: Toss a pinch of bread crumbs into the hot oil, if crackle and crisp up nicely, but don't burn, then you know your oil is ready.)
- While the oil is heating, place the flour and breadcrumbs each in their own shallow dish. Place the beaten eggs in a shallow bowl.
- Dip each pounded chicken cutlet in flour, covering it completely.
- Then, dip the cutlet in the beaten eggs, moistening it entirely and letting any excess drain off.
- Finally, dip the cutlet into the breadcrumbs, covering it completely, but not pressing the breadcrumbs into the cutlet. Let any excess breadcrumbs fall off.
- Immediately transfer the breaded cutlet to the hot oil. Fry for 1-2 minutes, each side until golden brown. Transfer the cutlet to a paper towel lined platter or wire rack.
- Repeat with another cutlets.
- After frying 2 cutlets, add the remaining 2 Tbsp of butter and additional oil if necessary. Heat the oil/butter mixture again to frying temperature, and continue frying your remaining two cutlets.
- To serve, garnish the chicken schnitzel with lemon slices and parsley. Serve with spätzel, fries, braised cabbage, and/or German potato salad.
ASPARAGUS & CHICKEN SALAD (SCHWETZINGER SPARGELSALAT)
The unusual combination of pineapple and asparagus makes this German chicken salad distintive and appealing. Though it is untried, I plan to make it soon and add my own tweaks. Note the brief preparation time does not include cooking the chicken or asparagus. Submitted for 'Zaar World Tour.

- Combine mayonnaise, vinegar, parsley, calt and sugar. Let stand for 5-10 minutes.
- Combine cubed chicken, pineapple and tomatoes in a large bowl. Add the dressing mix, tossing lightly
- Arrange half the Asparagus in a large salad bowl or serving platter. Spoon chicken salad on top. Scatter remaining asparagus on top.
