EASY CREAM CHEESE BROWNIES
This makes a big 13x9 pan of brownies, using a brownie box mix. Super easy and looks gormet when you are done! (Be sure to buy the box mix that says that it makes a 13x9 recipe or you'll have problems.) The mix I use is by Betty Crocker.

Steps:
- Preheat oven to 350 F degrees.
- Prepare the brownie mix according to package directions (water, oil, eggs).
- Pour into a greased 13x9-inch baking pan.
- Beat cream cheese with electric mixer on medium speed until smooth.
- Add sugar and mix. Add vanilla and egg; mix until well-blended.
- Place cheese mixture in dolups over the whole pan, leaving some brownie showing inbetween.
- Cut or swirl through batter several times with a knife or fork for a marbled effect. It can be tricky to get a good marble effect so be careful not to over work it.
- Bake for 35 to 40 minutes. Cool; cut into squares. (These will also freeze well).
CREAM CHEESE BROWNIES
These brownies offer a small taste of heaven. You have to follow the directions, otherwise they won't be so heavenly.

- Preheat the oven to 325°F.
- Lightly grease a square 8X8-inch pan.
- To make the cream cheese layer, put the cream cheese in a mixer bowl and mix with the paddle attachment until it's smooth.
- Add the rest of the cream cheese layer ingredients, beating well and scraping down and of the batter that dares try to escape up the sides of the bowl.
- To make the brownie layer, melt the butter and the chocolate together until smoothly melted.
- Put aside and let come to room temperature.
- Be patient, it's worth it.
- In a separate bowl from the cream cheese mixture, mix the eggs and the sugar until it's thick and a gorgeous lemon color.
- Add the chocolate mixture and mix well until combined.
- Again, scrape down the sides of the bowl.
- Add the flour, vanilla, baking powder, salt and the chocolate chips, mix well until combined.
- Pour half the chocolate mixture into the prepared pan.
- Dollop the cream cheese mixture over that.
- Don't worry if it doesn't cover the chocolate. It won't.
- Add the remaining chocolate mixture.
- Take a knife and gently draw it through the batters, from left to right and from top to bottom, making a checkerboard pattern.
- Don't allow the mixtures to combine, be careful.
- Sprinkle with the nuts.
- Bake in the oven until the sides, but not the tops, begin to brown, about 25 to 30 minutes.
- Don't wait until a tester comes out clean, if you do then you have overbaked and basically murdered the brownies.
- Set aside to cool for about 10 minutes, cut into 12 or 16 brownies, cover and refrigerate.

- Stir together flour, salt and baking powder.
- Melt butter and remove from heat.
- Stir in the cocoa.
- Beat in the eggs, sugar and the vanilla.
- Fold in the dry ingredients.
- Pour in 1/2 the batter in a 9" greased square casserole dish or baking pan.
- Spread Cream Cheese Filling on top CAREFULLY!
- Top with remaining chocolate batter.
- Pull a knife through all of the layers to create a marbled effect.
- Bake covered with tin foil or a glass lid for 40-45 minutes or until a toothpick inserted into the brownies comes out clean.
- Cream Cheese Filling: Beat the cream cheese.
- Gradually add the 1/3 cup sugar, 1 egg and the 1/2 tsp vanilla until the filling is very smooth.

THE BROWNIE WITH A CHEESECAKE TOPPING

- Candies or cookies for decorating, such as pirouette cookies, white, pink or chocolate curls, dragees, edible glitter, chocolate cigars or wafer cookies
- For the brownies: Preheat the oven to 325 degrees F. Spray a 24-cup mini-muffin pan very lightly with nonstick cooking spray and line the bottoms with small rounds of parchment.
- In a double boiler, melt the butter and the chocolate together, stirring often to avoid scorching. Remove from the heat once everything is melted and combined.
- In a big bowl, whisk together the granulated sugar, brown sugar, eggs and egg yolk. Whisk in the salt and vanilla.
- Slowly add the chocolate mixture to the egg mixture to temper it and whisk just to combine.
- Gradually stir in the flour and mix until everything is combined and smooth. Stir in the walnuts if using. Set aside.
- For the cheesecake topping: With an electric mixer, beat the cream cheese with the granulated sugar and salt until smooth, then add the sour cream, vanilla and egg, and beat together just until incorporated. Transfer the cheesecake topping to a pastry bag or resealable plastic bag.
- Use a small ice cream scoop to add the brownie batter to the muffin pan (it should come halfway up the sides). Snip the tip off the pastry bag and pipe some cheesecake topping on top. Bake until a toothpick inserted in the center comes out clean, about 15 minutes. Let cool completely in the pan.
- For the buttercream frosting: Sift the confectioners' sugar into a medium bowl. In a stand mixer fitted with the paddle attachment, beat the butter on medium-high until smooth and light, about 1 minute. Add all but 1/4 cup of the confectioners' sugar and mix on low just to combine. Add the vanilla and increase the speed to high, then beat until light and fluffy, 1 to 2 minutes. (Add more confectioners' sugar or a bit of milk depending on how stiff or loose you want the frosting.)
- Frost the brownie bites with buttercream frosting, and decorate as desired with candy or cookies.

- Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk 1 cup flour, cocoa, baking powder, and salt; set aside.
- Place 8 tablespoons (1 stick) butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add 1 1/4 cups sugar; mix to combine. Add 3 eggs, and mix to combine. Add flour and cocoa mixture; mix just until moistened (do not overmix).
- Prepare cream-cheese mixture: Whisk cream cheese with 2 tablespoons room-temperature butter. Whisk in 1/4 cup sugar, 1 egg, and 2 tablespoons all-purpose flour. Alternately spoon chocolate batter and cream-cheese mixture into pan; with the tip of a paring knife, swirl to marble.
- Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.

I got this recipe out of my local newspaper in 1998. It is from Hershey's/Reese's. I've looked on their website and they do not have this recipe posted there. These are very rich and delicious!!

- BROWNIES: Preheat your oven to 325°F Grease a 9 inch square baking pan.
- In a medium sauce pan, combine the sugar, butter, and water. Cook on low heat, stirring to prevent burning, until it boils. Remove the pan from the heat.
- Add the chocolate chips; stir until completely melted.
- Next, add the eggs and vanilla. Mix with a spoon until well blended.
- In a separate bowl, combine the dry ingredients (flour, salt, baking soda). Add to the chocolate mixture, make sure it is mixed in well.
- Pour the batter into the 9 inch pan. Bake for 30-35 minutes or until the brownies begin to pull away from the sides of the pan. Do not over bake. Cool completely.
- PEANUT BUTTER CREAM: Beat the butter and peanut butter in a medium bowl.
- Alternately add the powdered sugar and light cream, mixing it to spreading consistency.
- Frost the brownies once they are completely cool.
- CHOCOLATE GLAZE: Using a small microwave safe bowl, melt the chocolate chips and the butter on high for about 45 seconds. Stir the mixture until the chips are completely melted.
- Drizzle the glaze over the frosted brownies. Refrigerate until chocolate is set. Cut into 24 bars.
- Cover and store the brownies in the refrigerator.

These are my favorite kind of brownies. I like chocolate, but I'm not into the serious fudgy-chocolate kind of stuff. With these brownies I can pick out the ones with more cream cheese and leave the more chocolaty ones for someone else (like my mom).

- Place the chocolate and butter in a microwave-safe bowl and cook on high for 2 minutes, or until completely melted. Stir in the sugar until well combined. Add the flour, eggs, and vanilla and stir until combined. Spread the mixture into the baking pan.
- To prepare the cream cheese: Place the cream cheese in a bowl and, using an electric mixer on medium speed, whip the cream cheese until smooth. Add the sugar, egg, and flour and mix until smooth.
- Drop spoonfuls of the cream cheese batter on top of the chocolate and swirl it into the chocolate by running a knife back and forth across the pan. Bake the brownies for 35 minutes, or until the cream cheese is light brown. Cool completely before cutting.
