This Japanese-inspired tuna should be grilled very rare for the best flavour. The glaze keeps for two weeks refrigerated, but if it becomes too thick, thin down with a little water before using. Serve with rice and a cucumber salad. To crack peppercorns, place in a plastic bag and bash with rolling pin or back of a pot. Prep time includes marinating time. From Food and Drink.

1 tablespoon sesame oil
1 tablespoon vegetable oil
1 tablespoon grated gingerroot
1 tablespoon cracked black pepper
4 (8 ounce) tuna steaks, about 1-inch thick
kosher salt
1/2 cup granulated sugar
1/2 cup water
1/2 cup rice vinegar
1/4 cup light soy sauce
4 slices ginger, smashed
2 teaspoons wasabi powder
1 tablespoon water

Steps:

  • Combine oils, ginger and pepper. Brush on steaks.
  • Sprinkle with kosher salt.
  • Marinate for 30 minutes.
  • Combine sugar, water, rice vinegar, soy sauce and ginger.
  • Stir to dissolve.
  • Bring to boil on high heat and reduce until syrupy, about 15 minutes.
  • Make a apste of the wasabi powder and the water.
  • Whisk in wasabi paste.
  • The glaze should be used at room temperature.
  • Grill tuna 2 minutes per side with lid closed for very rare - 3 to 4 minutes per side for medium-rare.
  • Use either a squeeze bottle or a fork to streak glaze over fish.

Olive oil
Kosher salt and freshly ground black pepper

Steps:

  • To grill the tuna, get a charcoal or stove-top cast-iron grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for only 2 to 2 1/2 minutes. The center should be raw, like sushi, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes and serve.

4 tuna steaks
1/4 cup olive tapenade
1 teaspoon crushed garlic (recommended: Christopher Ranch)
1 tablespoon capers, drained
1/2 cups Italian dressing (recommended: Newman's Own)
4 cups mixed salad greens (recommended: Fresh Express)
2 hard-boiled eggs, quartered
1 cup frozen French cut green beans, thawed
2 tomatoes, quartered
1 (15-ounce) can sliced potatoes

Steps:

  • Cut a pocket into the side of the tuna steaks; set aside.
  • In a bowl, combine olive tapenade, garlic, and capers. Stuff tuna steaks with olive mixture and secure opening with toothpicks. Place stuffed tuna steaks in a large resealable plastic bag with the salad dressing. Squeeze out air and seal bag. Place in second bag to prevent any leaking. Marinate in refrigerator 1 to 3 hours.
  • Remove tuna from marinade and let come to room temperature, about 20 minutes. Discard marinade.
  • Heat an oiled grill pan over medium-high heat. Place tuna in grill pan and cook 3 to 4 minutes per side or until done. Be careful not to cook past medium or tuna will dry out quickly. Remove from grill pan and set aside.
  • Place salad mix onto a large serving platter. Garnish with slices of boiled egg, green beans, tomato wedges, and sliced potatoes. Remove toothpicks from tuna and place on top of greens.

  • Mix all the ingredients for the sauce. Add the chopped tomato, cilantro and onion. Season the tuna very well with salt and pepper. Heat a large skillet over high heat and add the vegetable oil. When the oil is hot, sear the tuna for 30 seconds on each side. Remove from heat and slice the tuna into 1/4-inch slices. To serve, neatly arrange the tuna slices and avocado slices on a plate and drizzle the sauce over the tuna.

2 cups teriyaki sauce
1/2 cup dry Sherry
4 tablespoons finely chopped ginger
1/2 cup chopped scallions
2 cloves garlic, peeled and minced
1/2 teaspoon cayenne pepper
2 teaspoons freshly ground pepper
1/2 cup lemon juice
4 3-by-3-by-2-inch cubes of fresh tuna, 6 ounces each
5 teaspoons olive oil
10 cups washed and stemmed fresh greens, like spinach, Swiss chard, dandelions or a mixture
1/4 cup water
1/8 teaspoon salt
Freshly ground pepper to taste
1/4 cup Japanese pickled ginger pieces

Steps:

  • Combine the marinade ingredients in a medium-size bowl. Add the tuna and refrigerate for 2 to 3 hours. Thirty minutes before cooking, remove the tuna from the refrigerator and let it come to room temperature. Preheat a grill or broiler.
  • In a large, nonstick skillet, heat 2 teaspoons of the olive oil. Add the greens and cook until wilted. Add the water, salt and pepper. Cook just until greens are tender. Set aside and keep warm.
  • Drain the tuna steaks and pat them dry. Brush with the remaining olive oil. Grill or broil until charred on the outside but still pink in the center, about 1 to 2 minutes on each side. Divide the greens among 4 plates. Place a piece of tuna over the greens. Top with some of the pickled ginger and serve immediately.

Japanese Marinade
Salt and pepper

Steps:

  • Heat grill to high; oil grates. Place 4 tuna steaks (each 3/4 inch thick and about 6 ounces) in a shallow dish or resealable plastic bag. Add Japanese Marinade; turn to coat. Cover; marinate 15 to 30 minutes in refrigerator, turning fish occasionally.
  • Just before grilling, remove from refrigerator; remove tuna from marinade. Season with salt and pepper. Grill fish until charred on the outside but still pink inside, 2 to 5 minutes per side.

This is great at a tailgate party, or at your Saturday afternoon summer barbecue. You can add a little cayenne pepper or minced fresh ginger to the marinade to give it a little extra kick."

1 cup teriyaki sauce
3/4 cup olive oil
2 tablespoons minced garlic cloves
1 teaspoon ground black pepper
4 (4 ounce) yellowfin tuna fillets

Steps:

  • In a large resealable plastic bag, combine the teriyaki sauce, oil, garlic, and pepper. Place the tuna fillets in the bag. Seal the bag with as little air in it as possible. Give the mix a good shake, to ensure the tuna fillets are well coated. Marinate for 30 minutes in the refrigerator.
  • Meanwhile, preheat an outdoor grill for high heat, and lightly oil grate.
  • Remove tuna from marinade, and place on grill. For rare tuna, grill for 3 to 5 minutes on each side. For medium, grill 5 to 8 minutes per side. For well done, grill for 8 to 10 minutes per side.

3 (4 ounce) fresh tuna steaks
ground black pepper (to taste) or lemon pepper (to taste)
1/4 cup orange juice
1/4 cup low sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon lemon juice or 1 tablespoon lime juice
3 tablespoons oil
2 tablespoons chopped fresh parsley
3 fresh garlic cloves, minced (can use less if desired)

Steps:

  • In a bowl combine all marinade ingredients until well blended.
  • Place the tuna steaks into a shallow glass dish (I use an 11 x 7-inch baking pan for this).
  • Pour the marinade over the tuna steaks and turn to coat.
  • Cover with plastic wrap.
  • Refrigerate 8-24 hours (turning a couple of times during chilling).
  • Preheat the grill to HIGH heat.
  • Oil the grill grate.
  • Remove the steaks from marinade (discard any marinade) and place on a plate.
  • Season lightly with freshly ground black pepper on both sides.
  • Grill the steaks for 5 minutes per side or until rare or medium-rare (DO NOT overcook the tuna or it will be dry!).
  • Delicious!
