PORK CHOPS WITH GOLDEN APPLE SAUCE

Number Of Ingredients 12

4 Golden Delicious apples, chopped
2 teaspoons lemon juice
2 ounces golden raisins, a handful
1-inch piece fresh ginger root
3 tablespoons light brown sugar
2 cups all natural apple juice or cider, plus a splash for pan sauce
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons vegetable oil or olive oil, 2 turns of the pan
4 (1-inch) thick center cut boneless pork loin chops, 6 to 8 ounces each
Salt and pepper
2 tablespoons butter

Steps:

  • Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 12 minutes, stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.
  • Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear. Remove chops from heat and let them rest a couple of minutes for juice to redistribute. Deglaze the pan with a splash of apple juice and 2 tablespoons of butter. Pour pan sauce over chops. Remove ginger from the sauce and top chops with generous portions of warm golden apple sauce.

Well, I have yet to really eat good BBQ pork chops. I was tired of the three or four different baking methods and I decided to try something a bit different. If you are not into sweet, then this probably isn't the recipe for you. I would suggest squeezing a bit of lime juice over the meat in order to break up the sweetness. I have never paid attention to what type of pork chops I had either, I just grabbed and baked...but apparently it is all in the cut of the meat! I also froze a few heads of romaine lettuce for about an hour, divided it up into 8 portions, and added Parmesan cheese and dressing of choice.... MMMM!

1 cup light brown sugar
1 cup soy sauce
1 cup orange juice
½ cup spicy brown mustard
⅓ cup honey
2 tablespoons Worcestershire sauce
2 tablespoons ground black pepper
1 tablespoon ground cumin
8 pork chops, 1/2 to 1 inch thick
1 lime, juiced
½ cup butter
1 tablespoon light brown sugar, or to taste
2 tablespoons ground cinnamon
4 large green apples - peeled, cored, and cut into eighths
4 Bartlett pears - peeled, cored, and cut into eighths

Steps:

  • In a large bowl, mix together 1 cup brown sugar, soy sauce, orange juice, brown mustard, honey, Worcestershire sauce, black pepper, and cumin until thoroughly combined and the sugar has dissolved. Place the pork chops into the marinade, and spoon marinade to cover the chops. Let stand at room temperature for 45 minutes to 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the chops from the marinade, and discard marinade. Shake any excess drops of liquid from the chops, and grill until they are browned, no longer pink inside, and show good grill marks, about 8 minutes per side. Squeeze lime juice over the chops as they grill. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F (63 degrees C).
  • Melt butter in a large skillet over high heat, then stir in 1 tablespoon of brown sugar and cinnamon; bring the mixture to a boil, stirring to dissolve the sugar. Stir in the apple and pear slices, and cook, stirring often, until the fruit is coated with the butter mixture and softened but not mushy, about 5 minutes. Transfer the apple and pear slices to a grilling basket.
  • Grill the fruit on the outdoor grill until the slices are browned, about 5 more minutes. Serve grilled fruit with pork chops.

1 tablespoon vegetable oil
4 large boneless pork chops, that can be butterflied
3 tablespoons butter
2 sweet apples of your choice, peeled and chopped
1 ½ cups crumbled gorgonzola cheese

Steps:

  • Butterfly each pork chop by slicing horizontally through the center with a sharp knife. Leave them attached on one side so they can be flipped open to create a butterfly shape.
  • Heat oil in a large skillet over medium high heat. Add pork chops, reduce heat to medium and cook slowly for 5 to 7 minutes each side, or until they are done to your liking. Set aside.
  • Melt butter or margarine in a medium skillet over medium heat. Add apples and saute until tender, then turn off heat and add cheese to skillet. Mix together slowly to form a creamy thick sauce.
  • Place reserved chops on serving plate and stuff each one with 1/4 of the apple/cheese mixture. Serve hot.

1 boneless pork loin roast (3 to 3-1/2 pounds), trimmed
1/2 teaspoon poultry seasoning
1 jar (10 ounces) apple jelly
1 cup apple juice
1/2 teaspoon ground cardamom
1 cup chopped peeled tart fresh or dried apples
3 tablespoons chopped fresh or dried cranberries
5 teaspoons cornstarch
2 tablespoons water

Steps:

  • Place roast on a rack in a shallow roasting pan and rub with poultry seasoning. Bake, uncovered, at 325° for 2-1/2 hours or until a thermometer reads 160°. , For topping, combine the apple jelly, juice and cardamom in a saucepan. Cook and stir over low heat until smooth. Add apples and cranberries; cook until tender, about 5-10 minutes. , Combine cornstarch and water until smooth; stir into apple mixture. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. , Remove roast from oven and let stand for 10 minutes before slicing. Serve with apple topping.

4 boneless pork loin chops (4 ounces each)
1 teaspoon canola oil
1/4 cup white wine or chicken broth
2 medium tart apples, peeled and sliced
1 tablespoon butter
1/2 cup plus 2 tablespoons unsweetened apple juice, divided
1/4 cup honey
2 teaspoons cornstarch

Steps:

  • In a nonstick skillet, brown pork chops on both sides in oil. Place in an 11x7-in. baking dish coated with cooking spray. Add wine or broth to the skillet, stirring to loosen brown bits. Pour over chops. Cover and bake at 350° for 20 minutes., Meanwhile, in the same skillet, saute apples in butter for 3-4 minutes. Add 1/2 cup apple juice and honey; cook for 1-2 minutes. Spoon over chops. Bake, uncovered, for 5-10 minutes or until heated through. Remove chops and apples to a serving platter and keep warm, reserving pan juices. , In a saucepan, combine cornstarch and remaining apple juice until smooth; add reserved pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over pork and apples.

Crumpets warmed and served toasted with lots of butter and jam are also a favorite. So, when a friend of mine passed on this recipe to me, I just had to try it. They do work and, with lots of butter, are delicious".

Number Of Ingredients 4

4 cups all-purpose flour
2 teaspoons salt
2 tablespoons dried yeast
2 1/2 cups warm water

Steps:

  • Sift together the flour and salt.
  • Mix the yeast with a few tablespoons of the warm water.
  • Whisk three-quarters of the remaining warm water into the flour and then add the yeasty liquid.
  • Cover and leave in a warm place until the mixture has risen.
  • Once risen, check the consistency.
  • If the batter is very thick, loosen with the remaining water.
  • The batter should now be left to stand for 8-10 minutes.
  • Warm a non-stick frying pan on a low heat.
  • Butter some crumpet rings or small tartlet rings.
  • Place the rings into the frying pan and pour in some of the batter until half-full (1/4 to 1/2 inches deep).
  • Cook on a low heat until small holes appear and the top has started to dry.
  • The bottom of the crumpet will now be golden and it can be turned over and cooked for another minute.
  • The crumpets are now ready for lots of melting butter!
  • Note: The crumpets can be cooked without turning - simply cook until the tops are completely dry.
  • The finely grated zest of 1 lemon can also be added to the batter to give a lemon bite.

5 -6 apples, peeled, cored and roughly chopped
2 -3 apples, left whole
25 g caster sugar
1/2 lemon, juice of, only
4 pork chops
25 g butter, melted
salt & freshly ground black pepper, to taste

Steps:

  • Put the cored and peeled apples in a saucepan, add half the caster sugar, the lemon juice and three tablespoons of water.
  • Cover with a lid and cook over a medium to low heat for 10-15 minutes until tender, stirring from time to time.
  • The applesauce can be very chunky or lightly whisked for a smoother finish.
  • Pre-heat the grill.
  • Brush the pork chops with a little of the melted butter, seasoning with salt and freshly ground black pepper.
  • Put the chops on a grill tray with a rack, and grill them for 4-5 minutes on both sides.
  • Meanwhile peel and core the remaining apples.
  • Cut into thin long slices, maintaining the shape of the apple.
  • Spread the applesauce over the chops and arrange the apple slices on top, slightly overlapping as you would for apple tart.
  • Brush or drizzle the chops with the remaining melted butter, sprinkling with the remaining sugar and return under the grill.
  • Cook for a few minutes and the apples are nicely toasted.
  • Serve and enjoy.
