THE WORLD'S BEST ROASTED GARLIC BREAD

- In a large bowl or in the bowl of your stand mixer, stir together the water, yeast, and sugar. Set aside for about ten minutes, or until foamy.
- Add the salt, garlic powder, and 1 tablespoon olive oil to the yeast mixture and stir to combine.
- If using a mixer, use the dough hook attachment and add the flour about 1/2 cup at a time. Continuing adding flour until the dough pulls away from the edge of the bowl and is just a little sticky to touch. Knead with the dough hook on low speed for about five minutes. To knead by hand, stir in flour 1/2 cup at a time until it becomes to difficult to stir. Turn the dough onto a well-floured surface and continue to knead in the flour a bit at a time, until barely sticky to the touch.
- Oil a large bowl with a little olive oil. Add the dough to the bowl and turn to coat. Cover with plastic wrap and leave in a warm place to rise until doubled, about an hour to an hour and a half.
- While the dough is rising, roast the garlic. Preheat oven to 400°F (200°C). Arrange the garlic cloves on a piece of foil large enough to wrap around them. Pour 2 tablespoons olive oil over the cloves and wrap the foil tightly around them. Bake for 15-20 minutes, or until cloves are just soft. Roughly dice the cloves.
- After dough has risen, punch it down. Move one oven rack to the bottom of the oven, another to the middle. Preheat oven to 425°F (218°C). Lightly oil and flour a baking sheet.
- On a lightly floured surface, knead the garlic cloves into the dough. Form the dough into a loaf on the baking sheet. Cover and let rise until almost doubled, about 45 minutes to an hour.
- Once risen, lightly sprinkle the top with flour. Using a sharp knife, make three diagonal slits in the loaf.
- Place an empty rimmed baking sheet on the bottom rack in the oven. Place the baking sheet with the shaped dough on the middle rack. Before closing the oven door, pour 1/2 cup water onto the empty sheet pan on the bottom rack. Close the oven door quickly to trap the steam. Bake for 15-20 minutes, or until golden brown.
40-CLOVE GARLIC BREAD RECIPE BY TASTY
This easy-to-make, yet impressive garlic bread is hard not to love. In this recipe, forty cloves of garlic are drizzled with olive oil, salt and pepper, and roasted until they're soft and sweet. Then, mashed and mixed with softened butter and herbs. A sourdough bread boule is cross-hatched and then stuffed with mozzarella cheese, and lathered with our garlicky compound butter. - Preheat the oven to 400°F (200°C). Place a sheet of foil on a small baking sheet and line another baking sheet with parchment paper.
- Cut ½ inch off the tops of the garlic heads and place on the baking sheet with the foil. Drizzle the garlic with the olive oil and season with 1 teaspoon salt and the black pepper. Place the tops back on each garlic bulb. Bring up the corners of the foil around the garlic, then roll closed to form a tight packet. Place in the oven and roast until the garlic is caramelized, about 45 minutes. Remove from the oven and let sit for 30 minutes, until cool enough to handle. Leave the oven on.
- Unwrap the foil packet and squeeze the heads to release the roasted garlic cloves into a medium bowl. Mash with a fork until a thick paste forms (some chunks are okay).
- Add the butter, parsley, oregano, and remaining ½ teaspoon salt and stir to combine.
- Using a serrated knife, carefully cut the bread into 1-inch-thick (2.54 cm) slices, stopping ½ inch (1.24 cm) from the bottom of the loaf to keep intact. Turn the loaf 90° and repeat cutting in the opposite direction.
- Place the loaf on the parchment-lined baking sheet and stuff the mozzarella between the bread slices. Spread the roasted garlic butter over the entire loaf.
- Place the loaf into the oven and bake until the cheese is melted and the top of the loaf is golden brown and crispy, 25-30 minutes.
- Remove the loaf from the oven and transfer to a serving platter. Grate the Parmesan cheese directly over the top. Serve hot.

- Cut or snip off pieces of dough about the size of an English walnut.
- Place into a greased 10" bundt pan.

- Slice bread legnth wise and lay on a cookie sheet.
- Drizzle melted butter on both halves and spread with a spoon as best you can (I do a little at a time to ensure I get it spread before it seeps into the bread).
- Put 2 tbs dressing on each half and spread out evenly.
- Then sprinkle the parmesan on top.
- Then sprinkle on the seasoning.
- Then the pepper, and you dont want to use too much of this, just a little.
- Bake at 375 for ten minutes.
- Take out of oven and slice in 10-12 slices.

- Dissolve the yeast in the warm milk.
- Mix in remaining ingredients (except milk for brushing the top and poppy seeds). Add enough flour to make a stiff dough.

ARTISAN SOURDOUGH GARLIC BREAD
I love to buy the garlic bread with the whole cloves of garlic from Costco, however I can't always get there when I want. I fiddled around a little and this one is pretty close, you do have to plan ahead because the sponge takes at least 18 hrs but the bread is well worth the trouble. This bread makes the BEST grilled sandwiches! I also like to butter it and grill it to go with a salad. YUMMY!!!

- The Sponge: Combine the sponge ingredients in a large plastic bowl, cover with plastic wrap and keep in a warm place for 18-20 hours.
- When ready the sponge should have expanded and smell pleasantly sour and bubbling. (at this point you may wish to refrigerate for up to 7 days, just remember to bring back to room temp).
- Bread: Place sponge and all other ingredients except garlic in mixing bowl, mix well and let rest 20-30 minutes.
- Mix again for 5-10 minutes, then cover and allow to rise 2-3 hours.
- Turn out onto lightly greased surface and flatten like you would cinnamon rolls .
- Sprinkle the garlic cloves evenly over the dough and roll up in cinnamon roll fashion pinching the sides in as you make a long oblong shaped loaf.
- Allow the loaf to rise covered with a towel for 2 hours or till almost doubled in size.
- Preheat oven to 475°F.
- Slash the top of the loaf 4 times with a sharp knife.
- Spritz loaf and oven with water.
- Bake in 475°F oven for 3 minutes spraying 2 more times.
- Turn the oven down to 375°F (if it is baking to fast try 350°F).
- Spray often with the water and watch for the bread turning brown too fast. If it does, cover with a foil tent.
- Bake approx 30-40 minutes or till nicely browned and bottom thumps hollow.
- This bread can be a little temperamental, just watch the coloring and adjust temp and cook time as needed.
