Steps:
- Heat 1 tbsp of butter with 1/2 tsp of olive oil (this prevents the butter from burning) over med heat until melted.
- Add garlic and shallots.
- Cook 1-2 minutes, until soft.
- Add cherry tomatoes and kosher salt to taste.
- Cook 8 minutes on low heat covered, until soft.
- Add mushrooms and 1 tbsp of butter.
- Cover and cook for 5 minutes.
- Add baby spinach and thyme.
- Cook low for 5-8 more minutes.
- Add 1 -2 tbsp more butter and a tiny bit of water to make a sauce to coat. Yum!
- Add pepper.
- Turn off heat, add Parmesan and hot cooked gnocchi.
- Serve and enjoy!

- Tip the spinach into a pan of boiling water. Leave until just wilted and bright green, then drain and cool under cold running water. Squeeze as much water as you can from the leaves. Can be done up to 1 day ahead.
- To serve, heat the oil in a frying pan. Sauté the shallots for 5 mins or until tender. Add the garlic, fry for 30 secs, then toss in the spinach. Season, then stir until reheated.

MUSHROOM PASTA WITH SPINACH
This simply delicious pasta is tossed with a savory mushroom spinach sauce. You can make this delicious dish at home in less than 30 minutes!

- Bring a large pot of salted water to a boil.
- Place a large (12-inch) pan over medium heat. Add the olive oil and shallots to the pan along with ½ teaspoon kosher salt. Cook until the shallots are softened, stirring frequently, about 5 minutes.
- Add the mushrooms to the pan in one layer. Cook undisturbed for 5 minutes, then sprinkle with ½ teaspoon salt and stir them around with the shallots. Stir in the garlic, chili and black pepper and continue cooking 5 more minutes, or until they are softened and have released their juices.
- While the mushrooms cook, add the pasta to the boiling water and cook according to package directions. Note that fresh pasta will usually be done in 2-4 minutes and dried pasta in 10-12 minutes. Drain.
- Raise the heat under the mushrooms to medium-high and pour in the wine. Let it bubble and cook for 2 minutes. Stir in the butter until it melts. Remove the pan from the heat and add ¼ cup cheese and spinach to the pan. Stir until the leaves are wilted.
- Add the cooked pasta to the pan and toss gently with the sauce. Serve in bowls with additional cheese sprinkled over the pasta. Pour a glass of wine and enjoy!

This recipe comes from Chef John Currence of the City Grocery Restaurant in Oxford, MS. The dressing for this salad has a wonderful flavor, but I found it too oily as written. I've left the recipe as he wrote it, but I now skip the 3 tablespoons of olive oil, and only add about 1/2 of the oil from the roasted garlic. The flavor is great.

- Preheat oven to 375.
- Combine 1/4 cup oil and garlic in small baking dish.
- Cover with foil; bake until garlic is very tender, about 35 minutes.
- Using slotted spoon, transfer garlic to work surface and finely chop.
- Transfer garlic to medium bowl. Reserve roasted garlic oil.
- Cook bacon in large skillet over medium heat until crisp, about 4 minutes.
- Using slotted spoon, transfer bacon to paper towels.
- Pour drippings into medium bowl.
- Add vinegar, shallot, mustard, honey, molasses and tarragon and whisk to blend.
- Add roasted garlic, garlic oil, bacon and remaining 3 tablespoons olive oil and whisk to blend well.

- Place spinach, sliced onion and blue cheese in large bowl.
- Toss with enough dressing to coat.
- Serve.

- In a large pot, bring ½ inch of water to a boil over high. Add spinach in 3 batches, stirring until each batch is wilted before adding another, until all of the spinach is wilted, about 3 minutes. Drain in a colander and run under cold water until cool. Drain again, pressing out excess water, then coarsely chop for a total of 4 packed cups.
- In the same pot, melt 2 tablespoons of the butter over medium-low. Add shallot and cook, stirring, until softened with no color, about 2 minutes. Stir in garlic until fragrant, 30 seconds. Add the remaining 1 tablespoon butter and stir until melted, then add flour and cook, stirring constantly, until flour is light golden but the shallots still have no color, about 3 minutes. While whisking constantly, drizzle in milk and cream until smooth, and season with salt and pepper. Bring to a simmer, then add chopped spinach and season with salt and pepper. Cook, stirring, until the spinach is totally incorporated and the sauce is thickened, 2 to 3 minutes. Stir in sour cream until combined. Transfer to a bowl and serve warm.

- To a large sauté pan, add the vegetable oil over medium heat. The oil is ready when you drop a small piece of shallot and it sizzles. Fry the shallots for about 5 minutes, turning until they are evenly browned. Remove, drain on a paper towel and set aside.
