Ravioli with Chicken & Spinach is full of flavor and takes less than 15 minutes to make. This is great with crusty bread & a bottle of wine.

1 Tablespoon olive oil
1 Large Shallot
1/2 teaspoon Salt
3 Cloves garlic
1 Cup Shiitake Mushroom (Portobello mushrooms will work also)
2 Cups Spinach (2 Cups PACKED Spinach)
1 1/2 Cups Chicken breast (Rotisserie Chicken works great)
10 Ounces Cheese Ravioli (We used Rana brand Fresh Ravioli)
1 Ounces Parmesan cheese
1 Teaspoon Crushed Red Pepper Flakes (Optional)

Steps:

  • Chop Shallot and Garlic.Rinse Spinach. Slice mushrooms
  • Bring water to boil and add a couple Tablespoons of Salt
  • Just before the water starts to boil. Sauté the Shallot and Garlic with 1/2 teaspoon sea salt in 1 Tablespoon Olive Oil
  • Place Ravioli in boiling water and cook according to package. Minus one minute. So if the package says to cook for 5 minutes only cook for 4 minutes. The additional minute will be cooked with the Shallot and Garlic.
  • Add the Mushrooms and Chicken with the Shallot and Garlic
  • Sauté for 3 or 4 minutes until they cooked to your desired firmness If you want some spice add the Crushed Red Pepper. If you don't want it spicy skip this step. Cook for 1 minute
  • Add the cooked Ravioli.
  • Add 1 1/2 cup of the water from the Ravioli. Toss Gently with the mushrooms
  • Cook gently stirring for one to two Minutes and add 1 ounce of the cheese to the mixture. This will thicken and make a great sauce.
  • Add spinach and stir in gently into the Ravioli/mushroom mixture.
  • Add some black pepper and salt to taste
  • Enjoy!!!!

Homemade Ravioli with Goat Cheese and Spinach Filling image

Learn how to make ravioli from scratch at home using a ravioli mold. Then, you can make these delicious homemade ravioli filled with goat cheese and spinach and smothered in a creamy mushroom and Parmesan cheese cream sauce.

1 1/4 cup flour
1 egg
1/4 cup hot water
1/4 teaspoon salt
1/3 cup spinach (, cooked)
2 oz goat cheese
1/3 cup Parmesan cheese (, shredded)
1/4 teaspoon nutmeg
salt and pepper
2 tablespoons olive oil
1/2 lb mushrooms (sliced)
4 garlic cloves (chopped)
1/4 teaspoon nutmeg
2 tablespoons white wine
1 cup half and half
1 1/2 cups parmesan cheese (shredded)
1/4 cup chives (chopped, for garnish)

Steps:

  • Mix flour with salt.
  • Stir water with egg until well mixed.
  • In a bowl, combine flour and egg-water mixture together and mix until well incorporated. Sprinke some flour over working surface and over your hands as you knead the dough. Knead the dough until well-textured and firm. The dough should not be too wet or too sticky. It should only stick to itself, but not to your hands. It should not be too dry, either. Make the dough into a ball or disk, wrap with plastic wrap. Let the dough stand for 1 hour at room temperature before using. This allows gluten to work.
  • This amount of dough enough to make dough for 12 raviolis, using the mold (ravioli mold makes 12 ravioli). If you need to make 24 ravioli, make a second batch of this dough.
  • If you don't have cooked spinach on hand, cook spinach until wilted and all liquid is gone. All liquid should be evaporated - it's important. Chop spinach.
  • Soften goat cheese by heating it up in microwave oven for about 5-10 seconds.
  • Mix all ingredients together in a medium bowl: chopped spinach, goat cheese, Parmesan cheese. Add a little bit of nutmeg to taste. Salt and pepper to taste. Set aside.
  • Your filling should not be runny, it should be pretty firm, which is why it's important to make sure spinach has no liquid from step 1. If your filling is a bit runny from softened cheese, put the bowl with ravioli filling in the refrigerator to firm up.
  • Unwrap ravioli dough from plastic, divide in 2 equal parts. Flour working area. Roll out each part of pasta dough very thinly, on a floured surface, using a roller. Make sure to flour the upper portion of pasta dough and the roller to avoid sticking. Lift the rolled dough several times during rolling to make sure it doesn't stick to the counter, and flour working surface with more flour, if necessary.
  • Flour the ravioli mold. After you have rolled the 2 portions of dough very thinly, place first layer of dough on the ravioli mold, so that it covers all 12 holes.
  • Place a small portion of ravioli filling into each indentation, making sure not to overfill. The filling should be at the same level or lower as the flat part of the mold. Place second layer of pasta dough on top of filled ravioli.
  • Using a roller pin, roll across the mold and along the edges to separate ravioli. As you roll the pin, it also removes all air from ravioli, which is very important for ravioli success. By now you should have extra dough hanging off the outside 4 edges of ravioli mold - carefully separate it. Continue rolling the pin along the inside edges of 12 raviolis to separate them from one another: you could also use your fingers to press across the edges to separate ravioli.
  • Flip ravioli mold to release ravioli. Bring a large pot of water to boil Boil ravioli for 5 minutes, drain and set aside - to be used with sauce below.
  • Or, alternatively, if you're not using ravioli right away, place them on a plate or baking sheet in the freezer to freeze. After they are frozen, place them in a plastic bag and keep frozen until needed.
  • Heat oil in a skillet over medium-high heat. Add mushrooms, garlic, a bit of nutmeg and cook for about 7 minutes until mushrooms soften and garlic is fragrant.
  • Add half-and-half, bring to boil. Remove from heat, add grated parmesan cheese, mix until cheese is melted and mixture thickens. Add salt and pepper to taste.
  • After you have boiled ravioli for 5 minutes, drain them and add ravioli to the sauce to coat. To serve, place ravioli and sauce on plates. Garnish with with chopped chives or leeks.

1 recipe Pasta Dough for Ravioli, recipe follows
1 (15-ounce) container ricotta cheese
2 (8-ounce) balls fresh buffalo mozzarella, water drained and shredded
1/2 cup freshly grated Parmesan
2 cups fresh baby spinach, finely chopped
1 large egg
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 anchovy fillets
1/2 cup pitted kalamata olives
2 tablespoons capers, drained
1/2 bunch fresh basil leaves
2 (28-ounce) cans whole peeled tomatoes, drained and hand crushed
Kosher salt and freshly ground black pepper

Steps:

  • Make the pasta dough as directed in the master recipe.
  • To make the filling: Combine all the ingredients in a mixing bowl, stirring to incorporate.
  • To make the sauce: Coat a wide saute pan with olive oil and place over medium heat. When the oil gets hazy, add the onions, garlic, and anchovies; cook and stir for 5 minutes until fragrant and soft. Add the olives, capers, and hand torn basil. Carefully add the tomatoes (nothing splashes like tomatoes), cook and stir over low heat, until the liquid is cooked down and the sauce is thick, about 20 minutes. Season with salt and pepper.
  • Yield: 24 ravioli
  • Pasta Dough for Ravioli:
  • 2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 3 large eggs, plus 1 for egg wash
  • 2 tablespoons extra-virgin olive oil
  • Cornmeal, for dusting
  • To make the pasta dough: In an electric mixer fitted with a dough hook*, combine the flour and salt. Add the eggs, 1 at a time, and continue to mix. Drizzle in 1 tablespoons of the olive oil and continue to incorporate all the flour until it forms a ball. Sprinkle some flour on work surface, knead and fold the dough until elastic and smooth, this should take about 10 minutes. Brush the surface with the remaining olive oil and wrap the dough in plastic wrap; let rest for about 30 minutes to allow the gluten to relax.
  • *Alternatively if you don't have an electric mixer: Combine the flour and salt on a flat work surface; shape into a mound and make a well in the center. Add the eggs and 1 tablespoon of the olive oil to the well and lightly beat with a fork. Gradually draw in the flour from the inside wall of the well in a circular motion. Use 1 hand for mixing and the other to protect the outer wall. Continue to incorporate all the flour until it forms a ball. Continue as directed above.
  • Cut the ball of dough in 1/2, cover and reserve the piece you are not immediately using to prevent it from drying out. Dust the counter and dough with a little flour. Press the dough into a rectangle and roll it through a pasta machine, 2 or 3 times, at widest setting. Pull and stretch the sheet of dough with the palm of your hand as it emerges from the rollers. Reduce the setting and crank the dough through again, 2 or 3 times. Continue tightening until the machine is at the narrowest setting; the dough should be paper-thin, about 1/8-inch thick (you should be able to see your hand through it.). Dust the sheets of dough with flour as needed.
  • Beat 1 egg with 1 tablespoon of water to make an egg wash. Dust the counter and sheet of dough with flour, lay out the long sheet of pasta, and brush the top surface with the egg wash, which acts as a glue. Drop tablespoons of your favorite filling on 1/2 of the pasta sheet, about 2-inches apart. Fold the other 1/2 over the filling like a blanket. With an espresso cup or fingers, gently press out air pockets around each mound of filling. Use a sharp knife to cut each pillow into squares and crimp the 4 edges with the tins of a fork to make a tight seal. Dust the ravioli and a sheet pan with cornmeal to prevent the pasta from sticking and lay them out to dry slightly while assembling the rest.
  • Cook the ravioli in plenty of boiling salted water for 4 minutes; they'll float to the top when ready, so be careful not to overcrowd the pot. Lift the ravioli from water with a large strainer or slotted spoon. Bath the ravioli in your favorite sauce to lightly coat and serve.

MAMA'S OLD FASHIONED RAVIOLI

2 cups water
4 cloves garlic, whole
1 teaspoon whiskey
1 teaspoon gray salt
1 skinless boneless whole chicken breast (about 3/4 pound)
2 pounds spinach, washed 3 times
1 yellow onion, chopped
1/2 cup chopped Italian parsley leaves
1/4 cup chopped basil leaves
3 eggs
1 cup breadcrumbs
1/2 cup Parmesan
1/2 teaspoon gray salt
1/2 teaspoon freshly ground black pepper
4 to 5 packages wonton skins

Steps:

  • Poach chicken: In a 1 1/2-quart saucepan bring water to a boil with garlic, whiskey, and salt. Add chicken and simmer, covered, 12 minutes, or until just cooked through. Transfer chicken to a bowl and chill, covered, 20 minutes.
  • Bring a large pot of salted water to a boil and cook spinach for 30 seconds. Drop the spinach into a bowl of ice water to stop the cooking, then drain well. In the bowl of a food processor, combine the spinach, onion, parsley, and basil. Cut the chicken into pieces and add them. Pulse until the ingredients are finely ground. Put this mixture into a bowl and add the eggs, breadcrumbs, and Parmesan and season with salt and pepper. Mix well, cover, and refrigerate for 1 hour.
  • To form the ravioli, drop 1 tablespoon chicken mixture in the center of a wonton wrapper. Dip a pastry brush or your finger in water and lightly wet the edges of the wrapper. Top with another wrapper and press the ravioli closed. Repeat until all the filling is used. Cover with a damp towel until you are ready to cook.
  • Bring a large pot of salted water to a boil. Carefully drop in the ravioli in batches to avoid crowding the pot. Cook until the ravioli rise to the surface, about 3 to 5 minutes. Drain well.

¾ cup water
3 ¾ cups sifted all-purpose flour
1 ½ teaspoons salt
½ pound ground chicken

  • In a skillet over medium heat, cook the ground chicken until evenly brown; drain.

  • Bring a large pot of lightly salted water to a boil, and cook the ravioli in small batches for about 8 minutes, or until al dente. Drain, and rinse under cold water.

1 ½ cups fresh spinach
5 tablespoons grated Parmesan cheese
1 ¼ tablespoons dried parsley
¼ cup bread crumbs
¼ cup olive oil
1 large egg

Steps:

  • Heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the spinach and cook until wilted, about 1 to 2 minutes. Remove from heat and allow to cool for 10 minutes.
  • Transfer the beef mixture to a bowl. Add the Parmesan, parsley, bread crumbs, olive oil, egg, garlic salt, and pepper and mix well. Run the filling through a grinder until smooth (or puree in a food processor until smooth).

9 oz package small refrigerated cheese ravioli
2 tsp avocado oil (or coconut/olive oil)
3 cups fresh spinach
1 small onion ((approx. 1 cup finely chopped))
2 cloves garlic
2 TBSP unsalted butter
2 TBSP all-purpose flour
1 cup milk (plus extra to thin sauce as desired)
1/4-1/2 cup freshly grated parmesan cheese
2 TBSP pesto
salt and pepper (to taste (don't skip but season to taste))
1/4-1/2 cup grated mozzarella cheese

Steps:

  • Bring a medium pot of water to a boil. Cook the ravioli according to package directions until al dente. Drain ravioli in a colander and set aside.
  • While the pasta cooks, chop your onion and spinach and mince your garlic.
  • Heat the oil in a large stainless pan/skillet over medium-high heat. Once the oil is hot, add the onion and cook until tender and translucent, approx. 5 minutes. Add garlic towards the end to prevent burning.
  • Add butter and garlic to the pan. Once butter has melted, add flour and whisk constantly with a metal whisk until the butter and flour are well combined and the mixture darkens in color a bit.
  • Pour in milk and whisk vigorously to combine. Whisk often until mixture thickens (this will happen faster for room temperature or warmed milk and a little slower if using cold milk) then add parmesan, pesto, salt, and pepper.
  • Once your sauce has reached desired thickness, fold in your chopped spinach and cooked ravioli. Thin sauce if desired with additional milk and adjust salt and pepper to taste. Remove from heat, top with grated mozzarella and cover with the pot's lid to melt the cheese. Dive in while it's hot!

1 (300 g) package frozen chopped spinach
2 large eggs
2 tablespoons olive oil
1 teaspoon powdered milk
2 tablespoons warm water
1 teaspoon salt
2 1/4 cups flour
300 g ground chicken
1 garlic clove, crushed
1 teaspoon basil
1 teaspoon parsley
1 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon pepper
1/4 teaspoon salt
5 tablespoons grated parmesan cheese (or your favourite kind)
1 egg

Steps:

  • For the dough:.
  • Cook as directed on package, or until leaves are soft.
  • Drain well and remove all extra water.
  • Add drained spinach, eggs, oil, and salt into a blender.
  • Mix milk powder with water and add to blender.
  • Cover and blend on medium speed until smooth.
  • Measure flour into a large bowl.
  • Add spinach mixture and mix well by hand.
  • Dough should be easy to work with and not stick to your hands, (if too dry add water, if too wet add flour).
  • Gather dough into a ball.
  • Knead on floured surface until smooth and elastic, about five minutes.
  • Let rest 10 minutes.
  • For filling:.
  • Scramble fry the chicken with the spices until chicken is white.
  • Remove from heat and add cheese.
  • Add egg and mix well.
  • To assemble ravioli.
  • Divide dough in half and roll out dough 1/4 inch thick.
  • Using a round cookie cutter (or drinking glass) cut dough into circles.
  • Place a spoonful of filling in each circle, then fold over to form a half circle and press the edges together with the fingers.
  • The edges should be free of filling.
  • Be sure the edges are sealed well to prevent the filling from running out.
  • Repeat for each ravioli.
  • When all ravioli are made, cook in boiling water for 15-20 minutes until cooked through, (The cooking period will depend upon the size you made it, the thickness of the dough and the filling)
  • Stir to separate them and to prevent them from sticking to the bottom of the pot.
  • Drain and rinse well.
  • Serve with your favourite pasta sauce.

This is Deee-licious and not at all difficult. A filling alternative to meat dishes. This is the "main" recipe. Please also refer to my Fresh Tomato Sauce recipe. I will also list a recipe for Homemade Pasta Sheets if you choose to go that route instead of purchasing them. *Both recipes to be published in next few days* I almost didn't post this as it's so long, but these are really fun to make and really not that hard.

1/2 lb spinach (fresh or frozen)
1/2 lb fresh ricotta cheese
1 tablespoon chopped garlic
2 tablespoons chopped shallots
1/4 cup extra virgin olive oil
1/2 cup grated provolone cheese
1 cup chopped mozzarella cheese
salt and pepper
6 sheets fresh pasta (fresh or purchased at local gourmet store)
1/2 cup butter
1/4 cup parmesan cheese

Steps:

  • FILLING: Preheat oven to 350 degrees.
  • Sauté spinach with garlic, shallots and olive oil.
  • Chop and drain all the liquid from the spinach.
  • In a bowl, place, spinach, Ricotta, Mozzarella and Provolone.
  • Mix well until you get a firm texture.
  • Add salt and pepper to taste.
  • RAVIOLI:.
  • Roll out dough and cut into sheets of manageable length, approximately 16 inches.
  • Do not roll out too many sheets at a time or the dough will begin to dry and be difficult to handle- trust me!
  • Make a row of generous teaspoons of filling, 1 inch apart, across the center of 1 pasta sheet.
  • Carefully fold the sheet in half toward you, matching the horizontal edges of the dough.
  • Gently press the filling down with your fingertips.
  • Press the dough down between each teaspoon of filling to enclose it.
  • Ttrim off the edges of the dough and cut apart the ravioli.

2 TBS butter
1 clove garlic (minced)
1 tsp flour
1/2 cup white wine
1/2 cup chicken stock
2 TBS lemon
Salt & pepper
2 TBS capers
Chopped parsley
Sprinkle of Parmesan or Asiago cheese

Steps:

  • In a saucepan, melt your butter. add in garlic and saute for 1-2 minutes (until fragrant but not browned).
  • Whisk in flour, add wine, stock and lemon and bring to a boil.
  • Remove from heat.
  • Season with salt & pepper, add capers, sprinkle with parsley and serve over pasta or ravioli.

A cheesy beef spinach filling that can be used for ravioli or other pasta such as manicotti or large shells.

1 pound ground beef
1 Tablespoon of Olive oil
2 teaspoons butter
1 package (10 oz. frozen chopped spinach, thawed)
2 pounds ricotta cheese
2 eggs
2 Tablespoons chopped parsley
1/2 cup grated Parmesan cheese
Garlic powder to your taste
salt and pepper to taste
1 egg lightly beaten with 1 Tablespoon water to egg wash.

Steps:

  • Place the thawed spinach between paper towels and squeeze out all of the water.
  • In a large fry pan, cook the ground beef in the olive oil and butter until done. Add the spinach and season with salt, pepper and garlic powder. Don't be shy with the seasonings. If there is a lot of moisture in the meat mixture put it in a strainer and make sure to get the juice out.
  • Place the meat mixture in the bowl of a food processor and pulse several times until the meat is the same consistency.
  • In a large bowl add the ricotta and mix it with the eggs, parsley and Parmesan cheese until smooth.
  • Add the spinach/meat mixture and mix well. Chill in the refrigerator for about 30 minutes. This makes it easier to handle.
  • Assemble your ravioli as you normally would or as we did in our Italian ravioli recipe --https://allourway.com/2014/08/24/homemade-italian-ravioli-meat-cheese-filling/ This time we added another step. We painted a little of the egg wash along the edges of the ravioli before adding the top sheet. Sometimes, although it is very rare, I have the tendency to overfill and a part of the ravioli edge doesn't seal properly. The egg wash helps make a firmer seal. You may eliminate this step if you wish.
  • Prepare ravioli as you normally would or freeze on cookie sheet lined with wax paper and when they are frozen package them in an air-tight freezer container.

My aunt would save leftover meat in the freezer until she had enough to make the filling. The dough should be made a day in advance, and the filling and the sauce can be made then. Allow about 2 hours to assemble and plan on putting them together several hours before cooking so they have time to dry.

Yield Six to eight servings as antipasto, about 100 ravioli

Number Of Ingredients 8

3 to 3 1/2 cups sifted flour
2 large eggs mixed with 1/2 cup water
2 1/2 cups of cooked, finely chopped meat, such as turkey, chicken, veal and beef, including at least one pork chop
1 egg, lightly beaten
Salt and freshly ground pepper to taste
2 teaspoons olive oil
1 clove garlic, finely chopped
1 package (10 ounces) frozen spinach, cooked, well-drained and chopped

Steps:

  • In a small bowl, stir 3 or 4 tablespoons of flour into the egg-and-water mixture. Place the 3 cups of flour on a working surface and make a well in the center. Slowly pour the egg mixture into the well, working the liquid into the flour as you go. Knead for at least 15 minutes. The dough should be so stiff that when you poke it with your finger it doesn't bounce back immediately. If the dough is still sticky, add some of the remaining flour as needed.
  • Cut the dough into two pieces, wrap in plastic wrap and chill overnight in the refrigerator.
  • In a large bowl, mix the meats with the egg. Add salt and pepper to taste.
  • In a small saute pan, heat the 2 teaspoons of olive oil over medium-low heat. Add the garlic and saute until soft. Add the well-drained, well-chopped cooked spinach and cook for a few minutes. Add the spinach mixture to the meat mixture and combine well.
  • To assemble the ravioli, using a rolling pin or pasta machine, roll out one of the halves of dough as thin as possible on a well-floured board. (Refrigerate the remaining dough until ready to use.) This should be almost paper thin; the thinner the ravioli, the better. Leaving a 2-inch strip of dough at the top, place a rounded half-teaspoon of filling at 1-inch intervals across the dough.
  • Fold the strip over; on the unfolded sides, cut around each mound of filling with a small, serrated pastry wheel. If the ravioli do not stay closed, moisten your finger with milk and press the edges together. Place on a clean, lightly floured dish towel while you make the rest of the ravioli.
  • Continue in the same manner until the dough is used up. The ravioli should rest uncovered at room temperature for several hours before cooking. Turn them once during this time.
  • Fill two large pots with about 5 quarts of salted water each. Bring to the boil. Place the ravioli gently in the pots and cook at a full boil for 10 to 15 minutes. When done, skim them from the pot with a slotted spoon and drain in a colander. Slide them onto a platter and serve with tomato sauce and grated Parmesan cheese.

2 teaspoons olive oil
1 chicken breast, diced into small bite-sized pieces ((about 3/4 pound breast))
2 cups broccoli florets, diced into small bite-sized florets
2 cloves garlic, minced
¼ teaspoon kosher salt
¼ cup unsalted butter
¼ cup flour
3 cups milk (2% or whole is preferable )
1 ½ cups shredded mozzarella, divided
¼ cup shredded parmesan
28 ounces ravioli (fresh or frozen is fine) ((do not boil ahead of time))
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees. Heat olive oil in large skillet over medium high heat. Add diced chicken and cook until slightly browned (about 5-6 minutes). Add in the broccoli florets, garlic, and salt. Cook until broccoli has softened slightly, about 2-3 minutes. Remove chicken and broccoli from skillet and set aside.
  • In the same skillet, melt the butter over medium heat. Whisk the flour into the butter and cook until the mixture is golden, about 2-3 minutes. Gradually whisk in the milk and bring the mixture to a simmer then stir in 1 cup of mozzarella and all of the parmesan. Let simmer until the cheese has melted and sauce has thickened. Add in the chicken and broccoli mixture. Season with salt and pepper to taste.
  • Spread a thin layer of sauce onto the bottom of a 9 x 13 inch baking pan coated with cooking spray. Lay half of the ravioli in a single layer (overlapping slightly if necessary) on the bottom of the baking dish, then top with half of the remaining sauce. Repeat with remaining ravioli and remaining sauce. Top with remaining 1/2 cup of mozzarella cheese and bake 25-30 minutes until sauce is bubbly and ravioli are tender.
  • If you want a golden top to your dish, broil for 2-3 minutes on high. Let dish sit for 5 minutes before serving. Garnish with basil leaves, optional.

1/2 Tablespoon Olive Oil
1 Shallot, Finely Chopped
8 Ounces Fresh Baby Spinach Leaves
Salt & Pepper To Taste
1 Cup Ricotta Cheese
4 Tablespoons Grated Parmesan
1 Egg
2 Cups All-Purpose Flour
3 Eggs
1/2 Teaspoon Salt
2 Tablespoons Olive Oil
2 Tbsp. Olive Oil
2 Cloves Garlic, Minced
1/2 Tsp. Crushed Red Pepper Flakes
1 (28 ounce) Can Crushed Tomatoes
Salt & Pepper
1/4 Cup Chopped Fresh Basil
Grated Parmesan Cheese To Serve

Steps:

  • Combine the flour and salt on a flat work surface; shape into a mound and make a well in the center.
  • Add the eggs and 1 tablespoon of the olive oil to the well and lightly beat with a fork.
  • Gradually draw in the flour from the inside wall of the well in a circular motion and continue to incorporate all the flour until it forms a ball.
  • Wrap the ball in plastic wrap and let rest 30 minutes.
  • While the pasta is resting, prepare the filling.
  • Steam the spinach and drain well, pressing the spinach to remove all excess liquid, then chop finely.
  • Heat a large pan over medium heat, add the olive oil and heat until hot but not smoking.
  • Add shallots and cook for about a minute, stirring so that they do not brown.
  • Add the shallots to the spinach, along with the ricotta, Parmesan cheese and egg.
  • Taste and adjust seasoning with more salt, pepper as needed.
  • Cut the ball of dough in 1/2, cover and reserve the piece you are not immediately using to prevent it from drying out.
  • Dust the counter and dough with a little flour, then press the dough into a rectangle and roll it through a pasta machine, 2 or 3 times, at widest setting.
  • Pull and stretch the sheet of dough with the palm of your hand as it emerges from the rollers.
  • Reduce the setting and crank the dough through again, 2 or 3 times.
  • Continue tightening until the machine is at the second narrowest setting; the dough should be almost paper-thin.
  • Dust the counter and sheet of dough with flour, lay out the long sheet of pasta, and brush the top surface with a little water, which acts as a glue.
  • Drop 1 tablespoon of the filling on 1/2 of the pasta sheet, about 2-inches apart, then fold the other 1/2 over the filling like a blanket.
  • With your fingers, gently press out air pockets around each mound of filling, and use a sharp knife to cut each pillow into squares and crimp the 4 edges with the tins of a fork to make a tight seal. (A fluted pastry wheel also works well to make an attractive edge around the pasta.)
  • Dust the ravioli and a sheet pan with cornmeal to prevent the pasta from sticking and lay them out to dry slightly while assembling the rest.
  • If not using within an hour or two refrigerate until needed.
  • To prepare the sauce, heat the two tablespoons of oil in a heavy pot and cook the garlic for just a minute.
  • Add the tomatoes, salt, pepper, and pepper flakes and cook over medium low heat for 10 minutes.
  • Add the chopped basil, and mix well.
  • Cook over low heat an additional 10 minutes.
  • Keep warm while you cook the pasta.
  • Cook the ravioli in plenty of boiling salted water until tender.
  • They will float to the top when ready, so be careful not to overcrowd the pot.
  • Drain the ravioli and return to the pot.
  • Pour half of the sauce mixture into the pot and carefully stir until the ravioli is lightly coated.
  • Serve the ravioli with a spoonful of additional sauce and a sprinkling of grated cheese.
  • Serve hot.

  • For the pasta, mix the flour and semolina together on a clean work surface or in a large bowl. Make a well in the centre and break in the eggs. With a fork or with your hands, gradually mix the flour with the eggs to form a soft dough.
  • Flour the pasta machine with semolina and divide the pasta into 4 equal pieces. Starting at the lowest (thickest) setting, feed one piece of the dough through the machine, turning the handle with one hand and holding the dough as it comes through the machine with the other.

Brush a little of the beaten egg around each filling then lay another pasta sheet on top and carefully press down around each filling ball to remove any air.
  • To cook the ravioli bring some water to the boil and a good pinch of salt (the water should be as salty as the sea). Drop the ravioli in to the water in small batches and cook until the float to the surface, then add them to the sage sauce.
