We have a flock of laying hens and usually an abundance of eggs. I'm always trying to find new ways to prepare them. Oh man are they good! It's a unique twist to the more traditional pickled egg recipes out there. These are great on salads, or just as is.

6 eggs
½ cup soy sauce
½ cup water
6 tablespoons white sugar
1 tablespoon dried minced onion
½ teaspoon sesame oil

Steps:

  • Place eggs in a large saucepan and cover with cold water. Bring to a boil; remove from heat, cover, and let sit until eggs are cooked through, about 10 minutes. Drain hot water; cover eggs with cold water.
  • Peel eggs and place in a quart-size Mason jar.
  • Combine soy sauce, water, sugar, minced onion, and sesame oil in a saucepan over medium heat. Cook and stir until sugar is dissolved, 3 to 5 minutes. Cool briefly, about 5 minutes. Pour over eggs in the jar.
  • Refrigerate eggs until flavors are absorbed, at least 6 hours.

Salt
1 pound whole-wheat spaghetti
3 tablespoons high-temperature cooking oil, such as canola, sunflower, or peanut
3/4 pound flank steak, patted dry and thinly sliced on an angle
Coarse black pepper
1 bunch scallions, cleaned and trimmed of root ends and rough tops, sliced on an angle
1 cup frozen shelled edamame, defrosted
2 inches fresh gingerroot, peeled and grated or finely chopped
3 to 4 garlic cloves, grated or chopped
1/3 cup teriyaki sauce

Steps:

  • Bring a large pot of water to a boil, over medium heat. Salt the water, add the pasta and cook to al dente. Drain the pasta and put it into a serving bowl.
  • Heat the oil in a skillet or wok over high heat. Add the meat and stir-fry for a couple minutes. Add a liberal amount of coarse black pepper, the scallions, edamame, ginger, and garlic. Stir-fry for 2 minutes more and stir in the teriyaki sauce. Add the stir-fry to the noodles and toss. Serve.

1 boneless, skinless chicken breast (about 8 ounces), diced
1 cup frozen peas and carrots, thawed
1 small red bell pepper, diced
1 bunch scallions, chopped
1 tablespoon grated fresh ginger
3 cups cooked white rice, cold or at room temperature
1/2 cup Food Network Kitchen™ Inspirations Japanese Style Teriyaki Cooking Sauce

Steps:

  • Whisk the eggs with a pinch of salt in a small bowl. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the eggs and cook, without stirring, until almost set, about 1 minute. Flip the egg pancake with a rubber spatula and cook until just set on the other side, about 1 minute. Transfer to a cutting board and cut into thin strips.
  • Heat the remaining 1 tablespoon oil in the same skillet over high heat. Add the chicken and cook, stirring, until almost cooked through, about 2 minutes. Add the peas and carrots, peppers and scallions and continue to cook, stirring, until crisp-tender, about 2 minutes. Add the ginger and cook, stirring, 1 minute. Add the rice and Japanese Style Teriyaki Cooking Sauce and cook, stirring, until warmed through. Stir in the egg strips and divide among 4 bowls.

1 tablespoon canola oil
3 tablespoons teriyaki sauce
4 egg roll wrappers
Oil for deep-fat frying
Sweet-and-sour sauce

Steps:

  • In a large skillet, saute coleslaw mix in oil until crisp-tender. Stir in teriyaki sauce; remove from the heat. , Position one egg roll wrapper with a corner facing you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Using a slotted spoon, spoon about 1/3 cup coleslaw mixture on bottom third of wrapper. Fold bottom corner over filling; fold sides over filling toward center. Moisten top corner with water; roll up tightly to seal. Repeat with remaining wrappers and filling., In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls for 1-2 minutes on each side or until golden brown. Drain on paper towels. Steps:

  • Drain water off of the tofu & dry as much as possible.
  • Dice the tofu.

  • Place cubed tofu in skillet carefully & cook until brown.
  • Add the teriyaki sauce & mix well.

2 garlic cloves (finely chopped)
ginger (gingerroot thumb size piece peeled and grated)
4 tablespoons dark soy sauce
4 tablespoons maple syrup
4 salmon fillets (skinned and cut into bit size pieces)
2 spring onions (green onion sliced)
1 red capsicum (bell pepper deseeded and sliced)
200 g snow peas (7 oz mange tout)
1 tablespoon sesame oil
1 lime (juice of)
400 g egg noodles (14 oz cooked according to packet instructions)

Steps:

  • Heat the vegetable oil in a wok or deep frying pan (skillet) over a high heat until smoking.
  • Add the garlic and ginger (gingerroot) and cook for 30 seconds then add the soy sauce and maple syrup.
  • Add the salmon pieces, gently sir-fry (scramble-fry) for 2 minutes and then add the spring onions (green onions), capsicum (bell pepper) and snow peas (mange tout).
  • Stir-fry 2 more minutes and then add the sesame oil and lime juice.
  • Stir in cooked noodles and mix well and serve immediately.
