GARLIC SOUFFLE
This gentle, earthy soufflé first appeared on the menu of Chez Panisse, Alice Waters's groundbreaking restaurant in Berkeley, Calif., and was brought to The Times by Craig Claiborne and Pierre Franey, who called it "splendid." That it is. (The New York Times)

Steps:
- Preheat oven to 250 degrees.
- Set aside three cloves of garlic for the basic sauce. Put the remaining garlic cloves in a small, shallow baking dish and add the olive oil, water, one-half teaspoon thyme, one bay leaf, salt and pepper. Cover closely and place in the oven. Bake one and one-half hours or until the garlic is totally tender. Baste the garlic pieces occasionally as they cook.
- Meanwhile, melt the six tablespoons butter in a heavy saucepan and add the flour, stirring with a wire whisk. Bring the half-andhalf and heavy cream to the boil in a small saucepan and add it to the flour and butter mixture, stirring rapidly with the whisk. When thickened and smooth, add salt to taste. Set the saucepan in a basin of simmering water.
- Tie the quartered onion, the reserved garlic cloves, one-half teaspoon thyme, the remaining two bay leaves, parsley sprigs and peppercorns in a small square of cheesecloth. Bring up the ends and tie them to make a bag. Add this to the sauce. Cover closely and let the sauce cook in simmering water about one hour, stirring the sauce occasionally. Remove the saucepan from the water and let it cool briefly. Remove and discard the cheesecloth bag.
- Increase the oven heat to 450 degrees.
- Put the baked garlic through a food mill, pressing to extract as much pulp and liquid as possible from the solids. Or press it through a sieve, using a pestle. There should be about one and one-half tablespoons. Add this to the cream sauce and stir.
- Add the egg yolks, the Gruyere or Swiss cheese and two-thirds cup of the Parmesan and beat well to blend. Add the cayenne, salt and pepper and blend well.
- Beat the egg whites until stiff. Add half of them to the cheese sauce and beat them in. Add the remaining whites and fold them quickly until well distributed.
- Generously butter a 12-inch oval, ovenproof platter. Pour in the souffle mixture. Sprinkle with the remaining cheese and thyme. Place on the top rack of the oven and bake 10 minutes until well browned.

Steps:
- Fry the mushrooms in the butter for about 3 mins, then remove from the heat and reserve a good spoonful. Add the flour to the rest, then blend in the milk and return to the heat, stirring all the time to make a thick sauce. Stir in the cheese, season to taste, then leave to cool.
- Heat oven to 200C/fan 180C/gas 6. Butter 8 x 150ml soufflé dishes and line the bases with baking paper. Stir the egg yolks into the soufflé mixture, then whisk the egg whites until stiff before folding in carefully. Spoon into the soufflé dishes and bake in a roasting tin, half-filled with cold water, for 15 mins until risen and golden. Leave to cool (they will sink, but they are meant to). You can make the soufflés up to this stage up to 2 days ahead. Cover and chill.
- When ready to serve, turn the soufflés out of their dishes, peel off the lining paper, then put them on a baking sheet lined with small squares of baking paper. Top each soufflé with 1 tsp crème fraîche and a little cheese, then scatter with the reserved mushrooms. Bake at 190C/fan 170C/gas 5 for 10-15 mins until slightly risen and warmed through. Sprinkle with chives and serve.

MUSHROOM SOUFFLé WITH PARMESAN
A creamy, airy, whole grain soufflé with earthy wild mushrooms and bright, fresh basil.
Provided by Nancy Anne Harbord
Number Of Ingredients 13
Steps:
- Preheat the oven to 190c. Grind the bread to breadcrumbs in a food processor. Butter and breadcrumb the inside of the soufflé dish, knocking out any excess. My dish was 20cm wide and 8cm high - with this size of dish, the soufflé will rise about 3cm above the edge. If you want a higher, more spectacular rise, use a dish with a smaller volume.
- In a medium saucepan, whisk together the milk, cream and rye flour (sprinkle the flour in gradually to avoid lumps). Add the mushrooms, garlic, paprika and black pepper and heat over medium heat until very well thickened. Add the fresh basil and salt. Taste a little of the mixture and add more salt if you think it needs it - it should be fairly salty to allow for the addition of egg whites - and stir to combine. Transfer to a large mixing bowl and set aside to cool for about 10 minutes.
- Separate the eggs, adding the yolks to the mushroom mixture and the whites to a very clean bowl for whisking (the bowl you choose will depend on your whisking method and whether you are using a machine or not.) Beat the yolks into the mushroom mixture until thoroughly incorporated. Whisk the whites to stiff peaks (I used a stand mixer). Gently fold the whites into the mushroom mixture - there should still be lots of air in the batter, but there should be no large blobs of egg white.
- Pour into the prepared dish - if necessary, the uncooked soufflé will hold for about an hour after it has been added to the dish. Bake at 190c for 35 minutes, until well risen and firm, but still moist and creamy in the centre. Serve immediately.
MUSHROOM SAUCE
Recipe video above. From steaks to chicken, chops to pasta, this creamy Mushroom Sauce is one you'll make over and over again. See in post for more uses!Luxurious yet simple, the key here is getting complexity into the sauce using wine, parmesan and broth. See note for how to lighten this up.Makes around 3 cups - enough to generously smother 4 to 5 pieces of protein, or toss through pasta for 3 to 4 people.

Steps:
- Heat oil and melt butter in a skillet over medium high heat. Add mushrooms and leisurely cook until golden brown - takes about 4 to 5 minutes. No need to stir constantly.
- Just before they're done, add the garlic and a pinch of salt and pepper. Cook until garlic is golden (~ 1 minute).
- Add white wine - it will sizzle! Stir, scraping the bottom of the skillet, for 1 minute or until mostly evaporated.
- Add broth, cream and parmesan. Stir, then lower heat to medium so the sauce is simmering - do not boil rapidly, cream may split.
- Stir occasionally and simmer for 2 - 3 minutes until it thickens. It shouldn't be super thick, this is a rich sauce.
- Stir through thyme, adjust salt and pepper to taste. Remove from stove.
- Serve over steak or other cooked protein. Toss through pasta, stuff into baked potatoes, serve with roast beef, chicken or pork, smothered omelettes. See in post for more ideas!

GARLIC AND GRUYERE CHEESE SOUFFLES WITH MOREL AND CHANTERELLE
This recipe is from my time as a chef assistant at a cooking school while assisting Nell Newman's class (Paul Newman's daughter). I loved all her recipes she shared with us including stories about her Dad. Although arugula salad offers a textural and taste contrast with rich souffle, you can skip arugula salad if you prefer. If you cannot find morel or chanterelle mushrooms, use any combination of mushrooms. Green Garlic can be found in farmer's market and also you can grow them. If not available, please substitute scallions, chopped and 4 - 5 garlic cloves, minced to make 1 1/2 cups required for the recipe.
