1.5 Tbsp all-purpose flour (10g)
1.5 Tbsp coconut flour (10g)
3/4 tsp Xanthan gum (2g) - or can replace with corn starch or baking powder, just won't be as fluffy
3/4 cup egg whites or egg beaters (180g)
For savory: add 1/2 to 1 tsp ranch seasoning mix (or salt/pepper/onion powder)
For sweet: add 1/2 to 1 tsp granulated sweetener of choice

Steps:

  • In a small mixing bowl, add the all-purpose flour, coconut flour, and Xanthan gum. If you are making savory waffles, add the ranch seasoning (or salt, pepper, and onion powder). If you are making sweet, add the sweetener. Or just omit all seasonings completely. Mix the dry ingredients with a whisk until there are no clumps.
  • Add the egg whites and whisk again until batter is smooth and there are no clumps.
  • Let batter sit for 5 minutes. In this time, it will thicken. In the meantime, cut waffle iron and let get warm.
  • Spray waffle iron with cooking spray then add waffle batter. Cook for 3-4 minutes, or until the waffle is golden brown.

2 cups sprouted whole wheat flour (can use regular or freshly milled - freshly milled may need 1/4 cup extra)
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs (SEPARATED)
1 1/3 cups low fat buttermilk
1/3 cup club soda
3 tablespoons melted butter
2 tablespoons maple syrup (can use favorite sweetener in place, add 2 extra tablespoons of club soda if omitting maple syrup)
1 teaspoon vanilla extract

Steps:

  • Combine dry ingredients: Mix the flour, baking powder, cinnamon and salt in a large bowl.Mix wet ingredients: Whisk the egg YOLKS, buttermilk, club soda, butter, maple syrup and vanilla extract in a large measuring jug until smooth.
  • Beat egg whites: Beat the egg WHITES in a clean bowl with electric beaters until stiff peaks form.Combine batter: Add wet ingredients to dry ingredients and stir just to combine (4-5 stirs should be enough!). Add the beaten egg whites and carefully fold in just until incorporated. Do NOT overmix. Batter will be thick. If it's too thick, add a few extra tablespoons club soda.
  • Bake waffles: Cook the waffles according to your waffle iron's instructions. I scoop the batter with a cookie scoop to make less of a mess.
  • Serve: Serve the waffles hot right out of the waffle iron - that's when they're the crispiest!

1 1/2 cups any milk (I used unsweetened almond milk)
3 tbsp maple syrup or honey
3 tbsp any mild oil or melted butter
1 tsp pure vanilla extract
1/2 tsp baking powder
1/2 tsp salt
2 cups whole wheat flour

Steps:

  • In a large mixing bowl, lightly beat eggs. Add milk, maple syrup, olive oil, vanilla, baking powder and salt; whisk until well combined. Add whole wheat flour, mix well.
  • Preheat waffle maker. If your waffle maker is cast iron you might have to spray it with cooking spray to prevent waffles from sticking but maybe not since batter has enough oil. Try one and see how it comes out.
  • Make waffles according to your waffle maker's instructions. Amount of batter depends on the size of your waffle maker. I used about 1/3 cup batter per waffle. For crispier waffles, I also cook a bit past the green Ready indicator.

This recipe yields 16 small square waffles for me (using just under 1/3 cup of batter per waffle). These freeze well.

These are basically the only waffles I make. They are super simple, and a healthy, filling breakfast. I use Robin Hood Nutri Flour Blend for these. You can add fresh fruit or chocolate chips to the batter for a twist. I have also make chocolate waffles with this recipe, substituting milk for chocolate milk and adding some cocoa and a handful of chocolate chips.

2 tablespoons almond butter (OR nut or seed butter of your choice)
3 tablespoons granulated monkfruit sweetener (, can also use SWERVE OR erythritol, add more if you prefer a sweeter waffle)
2 tablespoons unsweetened almond milk
1/8 teaspoon apple cider vinegar (, optional - helps give the waffles that fluffy buttermilk texture)
1 teaspoon maple extract (OR vanilla extract)
1 cup superfine blanched almond flour
2 tablespoons coconut flour
1.5 teaspoons baking powder
1 teaspoon ground cinnamon (, leave out if you prefer)

Sugar free syrup (raspberries, strawberries, blackberries etc.)

Steps:

  • In a large mixing bowl, beat the eggs or egg yolks** then whisk in the almond butter, sweetener, milk, apple cider (if using) and maple or vanilla extract. **FOR extra fluffy waffles - separate the yolks and whites first & whip the whites until stiff peaks then fold into batter after you add the cinnamonAdd the almond flour, coconut flour, baking powder and cinnamon. Mix until smooth and just combined - do NOT overmix.Allow the batter to thicken up 3-5 minutes while you preheat the waffle maker. This allows the baking powder to activate.
  • Preheat the waffle maker and spray generously with pure coconut oil spray (or olive oil spray).Spoon in 1/4 cup of the batter for mini waffles or 2/3 cup for Belgian waffles. Close the lid and cook until waffle light turns green (about 4-5 minutes depending on your waffle maker). For crispier waffles (recommended) , use a silicone spatula to flip the waffle over and cook again for another round (another 4-5 minutes) until the light turns green. Allow to sit for 15 seconds, then transfer the crispy waffles onto a plate.Repeat with remaining batter. This makes about 6 (1/4 cup) waffles or 3 (2/3 cup) Belgian waffles.
  • Serve with your favorite toppings and sides: whipped cream, melted butter, low carb syrup or fresh berries.

1 tsp cinnamon
2 tsp baking powder
2 bananas (approx 220g)
2 eggs
1 cup milk (250 ml)
1 cup blueberries (150g)

Steps:

  • Place the dry ingredients (flour, oats cinnamon and baking powder) into a large mixing bowl
  • Mix the dry ingredients so they are evenly distributed
  • Place the bananas, milk, and eggs in a blender or smoothie maker (I use a nutribullet)
  • Blend
  • Add the smoothie mix to the dry ingredients, mix with a wooden spoon
  • Stir the blueberries into the waffle batter
  • Prepare your waffle iron as per it's instructions. I find a medium heat best for this recipe
  • I use spray oil on the waffle before adding the waffle batter
  • Cook as per your waffle iron instructions
