Hearty and delicious, this is a bean-lover's chili for sure! Could also be made with ground turkey instead of chicken.

2 lbs boneless skinless chicken breasts
2 tablespoons oil
1 medium onion, diced
1 garlic clove, minced
2 tablespoons fresh oregano
2 tablespoons lime juice
1 (12 ounce) can cream of chicken soup
1 (14 1/2 ounce) can chicken broth
2 (4 ounce) cans diced green chilies
1 (15 ounce) can garbanzo beans
1 (15 ounce) can pinto beans
1 (15 ounce) can great northern beans
1 (15 ounce) can white corn
4 slices turkey bacon (optional)
cumin
cayenne pepper

Steps:

  • In a large stock pot, add oil, onion, and garlic. Saute until onions are clear, then add chunked chicken stirring often until cooked through.
  • Add cream of chicken soup and chicken broth, all beans (drained and rinsed), corn (drained), and diced green chiles. Bring to a bubble, then reduce heat and simmer until chili begins to thicken - about 20 minutes - stirring occasionally.
  • If you choose to add bacon, cook this now while the chili is simmering. After it is cooked, crumble it into the chili.
  • Add roughly chopped oregano and lime juice and cook for 10 minutes more.
  • Remove from heat and serve immediately, or allow to cool to room temperature, portion, and freeze.

I am not a chili person but even I enjoy this version. Don't be frightened by the number of ingredients, they are mostly common seasonings.

2 lbs ground turkey
1 lb sweet Italian sausage (turkey or pork is fine)
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can chili beans, in zesty sauce
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large onion, diced
1 stalk celery, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 (7 ounce) can diced green chilies
4 chicken bouillon cubes
6 -8 ounces beer (I used something very hoppy such as Sam Adams Boston Lager)
2 tablespoons chili powder
1 tablespoon Worcestershire sauce
3 -4 garlic cloves, minced
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon honey
corn chips (to garnish)
cheese (to garnish)

Steps:

  • Brown ground turkey and sausage. Drain grease.
  • Add the rest of the ingredients EXCEPT the corn chips and cheese. Stir everything together then reduce heat and cover. Simmer over low heat for 2 hours, stirring occasionally.
  • After two hours, taste and adjust seasonings. This recipe is not very spicy, if you would like spicier, add more cayenne, chili powder and hot pepper sauce. The longer this chili simmers, the better it tastes.
  • Serve with corn chips and cheese.

1 lb ground turkey
1 teaspoon black pepper
2 minced garlic cloves
1 small onion, chopped
1 (15 ounce) can garbanzo beans
1 (15 ounce) can black beans
1 (15 ounce) can kidney beans
2 (15 ounce) cans chopped tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 tablespoon cumin
1 tablespoon chili powder
2 bay leaves

Steps:

  • Saute in pan chopped onion, minced garlic, black pepper and ground turkey until brown.
  • Meanwhile, open all your canned goods. I like to rinse my beans. Add all canned goods (beans, diced tomatoes, sauce and paste) into a large pot, or as I prefer, a slow cooker. Turn pot on medium or slow cooker on high. Add cumin, chili powder and bay leaves. Stir well until fully mixed and the paste is blended well.
  • By now your meat should be browned. Drain excess fat and add all to pot/slow cooker. Lower heat if cooking in pot to low (if cooking in slow cooker, keep on high). Simmer for 1 hour at least. I like to keep mine cooking over an hr to really let the flavors mingle. Stir occasionally.
  • Remove bay leaves prior to servince. Serve in bowls and sprinkle with grated cheese, sour cream, diced onion, or any other garnishes you wish. Makes wonderful leftovers too!

You may, as I did, substitute ground chicken for the turkey, and add whatever other seasonings you like - I myself added some garlic, cumin and oregano, which took this dish up an extra level.

1 onion, chopped
28 ounces diced tomatoes, undrained
15 ounces chickpeas, rinsed and drained
15 ounces red kidney beans, rinsed and drained
15 ounces black beans, rinsed and drained
8 ounces tomato sauce
4 ounces mild green chilies, chopped
2 tablespoons chili powder

Steps:

  • Cook and stir the turkey and onion in a medium skillet over medium-high heat until the turkey is no longer pink.
  • Drain and discard the fat.
  • Transfer to the slow cooker.
  • Add the remaining ingredients and mix well.
  • Cover and cook on high for 6 to 8 hours or until done.
