1 (18 1/4 ounce) box yellow cake mix
2 eggs
1/4 cup vegetable oil
1 1/2 teaspoons cinnamon, divided
2 tablespoons granulated sugar
1 small amount flour
cooking spray

Steps:

  • Preheat oven to 400 degrees F.
  • Spray 3 baking sheets w/ nonstick cooking spray.
  • In a large bowl, beat cake mix, eggs, 1.4 cup vegetable oil & 1/4 teaspoon cinnamon with a wooden spoon until it forms a soft dough.
  • In a small bowl, combine sugar and remaining cinnamon; mix.
  • Form small ( 1 inch) balls w/ cake mixture then roll in sugar mixture.
  • Place dough balls, spaced well apart, on baking sheets.
  • Using the base of a glass, ( dip in a little flour so it doesn't stick) gently flatten each ball.
  • Bake until edges are light brown. 3- 6 minutes.
  • Let cool for 1 minute before transferring to wire racks.

This is a European version of the snickerdoodle. This cookie has the softest dough and makes a bakery-style cookie that will impress you. (Recipe from Chef Express: Home Baking translated cookbook) Tip: You can make caster sugar by putting granulated sugar in your blender and pulse for about 1-2 minutes. The sugar should be reduced to half. It doesn't take long.. be careful not to turn it into sugar powder. However, most supermarkets do carry 10X sugar aka SuperFine sugar.

4 ounces butter
1 cup caster sugar (see cooking tip in description) or 1 cup superfine sugar (see cooking tip in description)
1 egg
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon

Steps:

  • Place butter and 3/4 cup of sugar in a bowl and beat until light and fluffy. Add egg and beat well.
  • Sift together flour, baking powder, baking soda. Now, stir into butter mixture.
  • Turn dough onto a lightly floured surface and knead briefly. Wrap in plastic food wrap and refrigerate for 30 minutes or until firm.
  • Place cinnamon and remaining 1/4 cup of sugar in a small bowl and mix to combine. Roll dough into small balls, then roll balls in sugar/cinnamon mixture.
  • Place 2 inches apart on lightly greased baking trays and bake at 350 degrees for 4-8 minutes or until golden.
  • Remove to wire racks to cool.

Inspired by blogger Sarah Kieffer's internet-famous crinkled chocolate chip cookies, we pulled the snickerdoodles out of the oven midway through cooking and banged the baking sheet on the counter, producing a cookie with the best of both worlds--crispy ripples around the edge and a soft, chewy center.

2 cups all-purpose flour (see Cook's Note)
1 tablespoon ground cinnamon
1 1/2 teaspoons kosher salt
1/2 teaspoon baking soda
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 1/3 cups granulated sugar
1/4 cup packed dark brown sugar
1 large egg, at room temperature
Five 1.4-ounce chocolate toffee bars, chopped
3/4 cup pecans, finely chopped

Steps:

  • Adjust the oven rack to the middle position and preheat to 375 degrees F. Line 3 baking sheets with foil.
  • Whisk together the flour, cinnamon, salt and baking soda in a medium bowl.
  • Add the butter to the bowl of a stand mixer fitted with a paddle attachment (or a large bowl if using a hand mixer). Beat on medium-high speed until fluffy, about 2 minutes. Add the granulated sugar and brown sugar and beat on medium-high speed until pale and fluffy, about 4 minutes. Add the egg and beat until combined.
  • With the mixer on low speed, gradually add the dry ingredients. Beat on low until just combined. Add the chopped chocolate toffee bars and pecans and stir to combine.
  • Use a 1/3 cup measuring cup to scoop leveled mounds of cookie dough evenly spaced on the prepared baking sheets. Roll each mound into a ball. Transfer 1 baking sheet to the freezer and freeze until firm, about 20 minutes.
  • Transfer the frozen baking sheet to the oven (meanwhile, transfer the second baking sheet to the freezer) and bake until the edges have melted and the center is still domed, about 10 minutes. Remove the sheet from the oven and bang it firmly on a work surface until a small ripple forms around the outer edge. Return it to the oven and bake until the center puffs up, 3 to 4 minutes. Remove the sheet from the oven and bang it again firmly on a work surface until the edges are rippled and golden brown and the center is soft. Let the cookies cool on the baking sheets, about 10 minutes. Transfer to a wire rack to cool completely. Repeat with the remaining baking sheets, freezing the third baking sheet for 20 minutes while the second baking sheet is in the oven.

  • In a large mixing bowl beat togethor the 3/4c sugar, butter, egg, and vanilla.

  • Cover and refrigerate the dough for several hours.
  • In a small bowl combine the 2T of sugar and the 2t of cinnamon.
  • Grease a cookie sheet with non-stick spray, shortening, etc.
  • Shape the cookie dough into 1-inch balls; roll each in the cinnamon-sugar mixture.
  • Place the cookies on the cookie sheet making sure they are 2-inches apart.
  • Bake for 8-10 minutes at 375 degrees.
  • Remove with a pancake turner or something else and place on a cooling rack.

2 teaspoons baking soda

1 tablespoon light corn syrup
2 1/2 teaspoons vanilla extract

Steps:

  • In a small bowl, stir together the sugar and cinnamon and set aside.
  • To make the cookie dough, stir together the dry ingredients.
  • In a bowl with a paddle attachment, cream the butter. Add the sugar and continue to mix, then add the eggs, corn syrup, and vanilla, and mix thoroughly. Add the dry ingredients and mix until blended. Chill dough 1 hour if it's sticky or difficult to handle.
  • Preheat oven to 375 degrees F.
  • Roll balls of dough about the size of a walnut then roll them in the cinnamon sugar to coat. Place on an un-greased sheet pan 2 1/2 inches apart. Bake for 10 to 12 minutes until puffed up and the surface is slightly cracked. Let cool on the sheet pan a few minutes before removing to a wire rack to cool.

2 teaspoons cream of tartar
1 teaspoon baking soda

Steps:

  • Preheat the oven to 400 degrees F (205 degrees C).
  • Mix the shortening , sugar, and eggs until creamy. Mix the flour, cream of tartar, baking soda and salt in another bowl. Blend the wet with the dry ingredients using a wooden spoon until well-blended.
  • Roll the dough into the size of small walnuts.
  • Prepare the cinnamon and sugar mixture by mixing the cinnamon and sugar.
  • Roll the cookie dough into the cinnamon and sugar mixture until coated and place onto an ungreased cookie sheet. Bake 6-10 minutes watching to make sure they don't burn. They should be very lightly brown and still soft looking on top. When they cool, they will crack a little on top.

200g unsalted butter, softened
150g caster sugar
50g light brown soft sugar
2 tsp vanilla bean paste
300g plain flour
1½ tsp cream of tartar
1 tsp bicarbonate of soda
3 tbsp milk
3 tbsp caster sugar
1 tbsp ground cinnamon

Steps:

  • Heat the oven to 200C/180C fan/gas 6, and line a baking tray with baking parchment. Beat the butter and both sugars in a large bowl using an electric whisk for 2 mins until smooth and fluffy.
  • Add the vanilla and beat until combined, scraping down the sides once. Add the flour, cream of tartar, bicarbonate of soda and ¼ tsp salt, and mix until just combined. Stir in the milk to loosen the mixture.
  • For the topping, combine the sugar and cinnamon in a shallow bowl. Roll 40g of the dough into a ball. Roll the dough ball in the cinnamon-sugar mixture, then place it on the prepared tray and press it down lightly. Repeat with the remaining dough and topping, spacing the balls about 5cm apart.
  • Bake for 10-12 mins until golden and puffed up. Leave to cool on the tray for 5 mins, then transfer to a wire rack and leave to cool completely. Will keep in an airtight tin for up to four days.
