Perfect for the hot days of summer the sweet orange-ginger glaze has just a tinge of heat from hot pepper flakes. If you prefer, an indoor grill or saute pan can be used to cook the salmon. 1/4 cup lime juice (about 2 large limes)
1/4 cup light orange juice
1/4 cup low-sugar orange marmalade
2 teaspoons freshly grated ginger or 1 teaspoon powdered ginger
1/2 teaspoon dried mustard
1 pinch salt
1 dash hot pepper flakes
2 teaspoons butter
4 (5 ounce) salmon fillets, rinsed and dried

Steps:

  • Combine the lime juice, orange juice, orange marmalade, ginger, mustard, salt and pepper flakes in a small saucepan and bring to a boil. Reduce the heat and simmer on low heat for 5 minutes. until reduced to almost half. Remove from heat; swirl in the butter. Set aside.
  • While sauce is cooking, place salmon on a hot grill and cook for 5 minutes per side, or until fish flakes easily when tested with a fork.
  • Spoon sauce across salmon and serve.

2 pounds salmon fillet
1 cup orange juice
2 teaspoons balsamic vinegar
1 teaspoon finely chopped fresh ginger root
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place orange juice in a small saucepan over medium low heat. Cook and stir 10 to 15 minutes, until reduced by about 1/2 and thickened. Remove from heat, and allow to cool.
  • Stir balsamic vinegar and ginger root into orange juice.
  • Line a medium baking dish with parchment paper. Place salmon fillet on paper, skin side down. Season with salt and pepper. Cover with 1/2 the orange juice mixture.
  • Bake salmon in the preheated oven 10 to 15 minutes. Brush with remaining marinade, and continue baking 10 to 15 minutes, until easily flaked with a fork.

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)
3 tablespoons soy sauce
2 tablespoons olive oil
Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
  • Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.

4 (6 ounce) salmon fillets or 4 (6 ounce) salmon steaks
2 tablespoons honey
1 teaspoon balsamic vinegar
2 teaspoons soy sauce
1 tablespoon orange juice or 1 tablespoon lemon juice
1 tablespoon orange zest or 1 tablespoon lemon zest
1 inch gingerroot (either peeled and minced or grated with microplane grater)
2 teaspoons oil
salt and pepper

Steps:

  • Preheat oven to 350 degrees and season both sides of salmon generously with salt and pepper.
  • In a bowl, combine honey, balsamic vinegar, soy sauce, orange juice, orange zest, ginger, and oil to make glaze.
  • Place salmon in a baking pan and pour glaze over fish.
  • Place salmon in preheated oven until fish flakes easily with a fork.

1/4 cup basil
3 tablespoons fresh ginger
1/2 teaspoon black pepper
2 tablespoons Grand Marnier
4 lbs fresh salmon
5 tablespoons fresh grated orange peel
2 shallots, minced
2 teaspoons cornstarch
1/2 cup low sodium soy sauce
1/2 cup Grand Marnier
1 cup maple syrup
2 small oranges, sliced thin

Steps:

  • If you use dry rind instead of fresh you will need to rehydrate it with orange just for the best results.
  • Wash salmon and pat dry.
  • Combine ginger, basil, pepper, rind and shallots.
  • Lightly brush salmon with Grand Marnier. Coat salmon on both sides with herb mixture and refrigerate overnight (at least 4 hours).
  • Preheat oven to 350°F.
  • Dissolve cornstarch in enough hot water to make a smooth paste. Slowly whisk in liquid glaze ingredient. Whisk until smooth.
  • Place salmon in shallow baking dishes. Spoon glaze over fish.
  • Cook until done (about 20 minutes for 1 inch fillets or 25 for 2 inch fillets. )Baste the fish once or twice during cooking It should flake easily.
  • Decorate with orange slices. Shown in the picture here with a lemon pig.
  • To make a lemon pig - choose the snout end of the pig and decide which will be the bottom. Cut the bottom off so the pig will sit flat. At the snout end cut two flaps for the ears. Pull them out a little so the will stand out but not too much or it will break. Use cloves for the eyes.

Sometimes I just don't have time to prep a sauce when I need salmon in a hurry. The premade sauce I use makes this meal quick & tasty and ready to eat in a flash, not to mention super easy clean up.

1 lb salmon fillet
1/4 teaspoon ground ginger
1/2 cup kikkoman orange sauce

Steps:

  • Preheat oven to 450°.
  • Line a shallow baking sheet with aluminum foil.
  • Place salmon filets on foil skin side down, the skin should stick to the foil and the fish come off beautifully when removing from the pan.
  • Mix ground ginger into the Kikkoman Orange Sauce and stir well.
  • Brush a light coat of sauce on the filets.
  • Bake for 5 minutes.
  • Add another layer of glaze sauce and bake for 10 minutes.
  • Add a final layer of glaze sauce and bake for 5 more minutes.
  • Test for doneness by using a fork to see if flaky and cooked through.
  • You can add cayenne pepper or crushed red pepper for heat or add sliced green onions to the top just before serving.
