1 pound lean ground pork
2 tablespoons olive oil
4 medium onions, chopped
4 cloves garlic, minced
1 (8 ounce) can mushroom pieces
1 (14.5 ounce) can wax beans
1 (15 ounce) can sweet peas
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (28 ounce) can tomato sauce
chili powder to taste
ground nutmeg to taste
dried marjoram to taste
salt to taste

Steps:

  • Heat the olive oil in a large, deep skillet over medium heat, and cook the ground pork until evenly browned. Reserving the juices in the skillet, remove pork, and set aside.
  • Stir the onions and garlic into the skillet, and cook in the pork juices over medium heat until tender. Mix in the mushrooms, wax beans, peas, green bell pepper, and red bell pepper. Cook and stir until tender and heated through.
  • Return the pork to the skillet. Mix in the tomato sauce. Season with chili powder, nutmeg, marjoram, and salt. Reduce heat, and simmer about 45 minutes to allow the flavors to blend.

ROASTED GARLIC AND CHILE-CRUSTED PORK LOIN

2 bulbs Roasted Garlic (see Note)
1 tablespoon kosher salt
2 teaspoons ground ancho chile
2 teaspoons dried flaked chipotle chile
1 teaspoon ground cumin
2 teaspoons brown sugar
1 tablespoon olive oil
1 boneless double pork loin roast (about 3 pounds)
4 large cloves garlic, quartered
Kosher salt and black pepper

Steps:

  • Squeeze the roasted garlic pulp from each clove into a bowl. Add the salt, ground and flaked chiles, cumin, brown sugar, and olive oil and make a wet rub.
  • Stab holes into the pork loin and insert a quarter of a garlic clove into each. Massage the wet rub all over the meat, pushing some of it in between the two loins. Do this ahead, cover, and refrigerate overnight for maximum flavor penetration.
  • Fire up the grill, mounding a hot coal bed on one side. Just before grilling, season the meat all over with the salt and a grinding of black pepper.
  • Set the meat directly over the coals to sear for 2 minutes, making sure to scrape onto the roast any of the coating rub stuck to the plate it was setting on. Sear the remaining 3 sides for 2 minutes each. Push the meat to the other side of the grill, away from the coals. Cover the grill and adjust the heat so that it's from 325 to 350 degrees F inside. Roast for about 1 hour, till the meat reaches an internal temperature of 150 degrees F. Pull the roast off the grill and let it rest for 15 minutes.
  • Carve and serve immediately, or let it cool completely and then slice for sandwiches.

Whenever I eat at a Chinese restaurant, I order this appetizer. Yum! When I make this at home, it is even better than at the restaurant and not only is it less expensive, you can have more of it--like a main dish. The original came from the Ultimate Chinese cookbook. The recipe indicates that this should be served cold, but I warm it in the microwave.

18 ounces pork loin
1 teaspoon garlic, chopped
2 tablespoons light soy sauce
1 teaspoon red chili oil
1/2 teaspoon sesame oil
water, as needed

Steps:

  • In a large pot, place pork and add enough cold water to cover.
  • Bring to a rolling boil.
  • Skim froth from the surface of water, then cover pot and simmer for 25 to 30 minute.
  • Remove pot from heat and leave pork in the undrained pot to cool for at 1 to 2 hours.
  • Remove meat from pot cover lightly and cool completely in refrigerator for 2 to 3 hours.
  • Cut the meat in small thin slices across the grain.
  • Arrange on serving plate in an overlapping pattern.
  • In a small bowl, mix all the other ingredients, then pour the sauce over the meat.
  • If you wish, you might garnish with cilantro and green onions.

  • Although the recipe seems to indicate that this dish should be served cold, I always warm the meat in the microwave.

1 kg pork (neck steaks 1cm thick cut into 3cmx3cm pieces)
2 tablespoons soy sauce
100 ml extra virgin olive oil
80 g white onions (sliced thin half-moon)
3 garlic cloves (finely chopped)
3 cm piece ginger (cleaned and grated)
2 tablespoons green chili peppers (finely chopped)
2 tablespoons fresh lemongrass (finely chopped tender white part only)
1 teaspoon ground cinnamon
500 ml chicken stock (or beef 2 cups)
basil (Vietnamese leaves torn or chopped for garnish)

Steps:

  • Marinade the pork in soy sauce and set aside.
  • Heat a non-stick frypan and add 50ml of extra virgin olive oil, onion, garlic, ginger, chilli, lemongrass and cinnamon, stirring and cooking until the onion is soft, then set aside.
  • Add 50ml extra virgin olive oil to the hot pan and add the marinated pork in batches and stir-fry on high heat until well sealed and coloured and then set aside each batch until all pork is done.
  • In the same unwashed frypan add the stock, followed by the onion mix, stir well and then add the cooked pork and then cover and simmer gently stirring occasionally, for 45 minutes.
  • DON'T allow to dry out - add a little water if you have to.
  • Just before serving, add Vietnamese basil leaves for a fresh tang.

A simple and, in my opinion, authentic version, this recipe comes down at least 3 or 4 generations of my family. You will know it's done when the sauce has a medium thickness. Remember, the longer it cooks, the better it will taste. You can serve smothered over burritos or with warm tortillas, beans and/or fried potatoes. Also delicious with fried eggs (Huevos rancheros). Substitute 4 or 5 chopped roasted chiles for green chiles and jalapenos if you prefer.

1 ½ pounds cubed pork stew meat
2 tablespoons all-purpose flour
1 (4.5 ounce) can diced green chile peppers, drained
½ (3.5 ounce) can chopped jalapeno peppers
½ medium onion, chopped
5 tablespoons tomato sauce
3 ½ cups water
onion salt to taste
garlic salt to taste
salt and black pepper to taste

Steps:

  • Heat oil in a large cast iron skillet over medium-high heat. Stir in cubed pork, and cook until nicely browned and cooked through, about 15 minutes. Remove skillet from heat, and allow to cool briefly.
  • Sprinkle flour over pork. With a wooden spoon, stir pork to coat, scraping the bottom of the skillet to loosen browned bits. Add chile peppers, jalapenos, and onions. Stir in tomato sauce and water. Season to taste with onion salt, garlic salt, and salt and pepper.
  • Return skillet to medium heat. Bring to a simmer, cover, and cook 30 minutes, stirring occasionally. Remove cover, and cook 10 minutes more.

Steps:
