I have a daughter that eats everything, but my boys don't like veggies and love this meat loaf.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Mix ground beef, eggs, bread crumbs, salt, and black pepper together in a large bowl. Add green bell pepper, red bell pepper, yellow bell pepper, and onion; mix. Spread the beef mixture into a 13x9-inch glass baking dish.
- Make a trough in the middle of the meat mixture. Put 3/4 of the Cheddar cheese and half the tomato sauce into the trough. Fold the beef mixture around the cheese and sauce filling to form a loaf, pinching to seal. Loosely cover the meat loaf with aluminum foil.
- Bake in preheated oven until the beef is cooked through and the cheese in the middle is melted, about 45 minutes. Remove and discard aluminum foil. Top meat loaf with remaining Cheddar cheese and tomato sauce. Continue baking until the cheese melts, about 15 minutes. Rest meat loaf 10 to 15 minutes before slicing to serve.

I make salsa from my garden, then can for later, and use to make this awesome meatloaf. I use garlic, fresh tomatoes, peppers and onions all from my garden. You can use commercially-made salsa, too.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- Lightly mix the ground chuck, onion, brown sugar, egg, salsa, and bread crumbs in a bowl, and spoon into the prepared baking dish.
- Bake in the preheated oven for about 45 minutes, until the meatloaf is cooked all the way through and the top is browned. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

- In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.

1770 HOUSE MEATLOAF

- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large (12-inch) saute pan over medium heat. Add the onion and celery and cook for 5 to 7 minutes, stirring occasionally, until the onion is translucent but not browned. Set aside to cool slightly.
- Place the beef, veal, pork, parsley, thyme, chives, eggs, milk, salt and pepper in a large mixing bowl. Put the panko in a food processor fitted with the steel blade and process until the panko is finely ground.
- Add the onion mixture and the panko to the meat mixture. With clean hands, gently toss the mixture together, making sure it's combined but not compacted.
- Place a piece of parchment paper on a sheet pan. Pat the meat into a flat rectangle and then press the sides in until it forms a cylinder down the middle of the pan (this will ensure no air pockets). Bake for 40 to 50 minutes, until a thermometer inserted in the middle reads 155 degrees F to 160 degrees F. Remove from the oven and allow to rest for 10 minutes. Slice and serve hot with the Garlic Sauce.
- Combine the oil and garlic in a small saucepan and bring to a boil. Lower the heat and simmer for 10 to 15 minutes, until lightly browned. Be careful not to burn the garlic or it will be bitter. Remove the garlic from the oil and set aside. (I save the oil for vinaigrettes.)
- Combine the chicken stock, butter and cooked garlic in a medium saucepan and bring to a boil. Lower the heat and cook at a full boil for 35 to 40 minutes, until slightly thickened. Mash the garlic with a fork, whisk in 1/2 teaspoon salt and 1/4 teaspoon pepper, and taste for seasonings. Spoon the warm sauce over the meatloaf.

- Heat oven to 350 degrees.
- Combine in a large mixing bowl the turkey or beef, the spinach, which has been squeezed to drain, the oats, onion, carrots, egg, milk, herbs (mixture of oregano, basil and thyme), salt and pepper.
- Use a three-tined kitchen granny fork or wooden mixing fork to blend the meat ingredients.
- Pat into a 9x5-inch loaf pan that has been sprayed with a no-stick oil product, or shape into a loaf and place in the middle of a 13x9-inch baking pan.
- Bake 1 hour or until a thermometer registers 170 degrees and the center is no longer pink.
- If substituting beef for turkey, bake 50 to 55 minutes and thermometer should register 160 degrees internal temperature (tip not touching baking dish).
- Let loaf stand out of the oven for 5 minutes before slicing.
