THIS IS my basic recipe for stir-fry. I've tried others but always come back to this one. I have also substituted chicken and chicken broth for the beef and beef broth and found it just as good. -Margery Bryan, Royal City, Washington

- In a large bowl, combine the first four ingredients. Add beef; toss to coat. In a large skillet or wok, stir-fry beef in oil until no longer pink; remove and keep warm. , Reduce heat to medium. Add vegetables and broth; stir-fry for 4 minutes. Return beef to the pan; cook and stir for 2 minutes or until heated through. Serve with chow mein noodles or rice.

- Cook rice according to package directions., Meanwhile, in a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add the broth, celery, bean sprouts, water chestnuts, mushrooms, pimientos, soy sauce and ginger. Bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally. , In a small bowl, combine cornstarch and water until smooth. Gradually stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

EASY BEEF CHOW MEIN

- In a small bowl, mix all the stir fry sauce ingredients, mix well and set it aside. Season the mince/ground beef with two tablespoons of stir fry sauce mix and black pepper. Mix it well and set it aside.
- Soak the noodles in hot boiling water for 1-2 minutes and loosen them gently with a chopstick or tong. Drain the water out and rinse with cold water and set it aside.
- Heat the wok/pan over medium-high heat, drizzle 2 tablespoon of oil, add garlic and stir for 10 seconds. Add the beef mince and stir fry the beef for 3-4 minutes until no longer pink.
- Follow with the onion, carrot, pepper and stir fry another 1-2 minutes then place the noodles in.
- Pour the sauce over and noodles and combine well with other ingredients evenly.
- Continue stir fry with medium-high heat for another 1-2 minutes until and add the spring onions and bean sprouts.

This is my Grandma's recipe. I grew up eating this and now I make it for my own family. My husband really loves it, but he does love everything. I like to serve it with toast. It brings back great memories.

Steps:
- Sauté onion and celery just until tender.
- Brown hamburger in large skillet. Add onion and celery to hamburger.
- Add one can of cream of chicken soup and 1/2 can of water. Add soy sauce to taste.
- Let simmer 5-10 minutes.
- Serve over white rice and top with chow mein noodles.
- NOTE: If too runny, you can add flour to thicken up to your liking.
