PLUM SIMPLE SYRUP



Plum Simple Syrup image

Whip up this syrup when plums are plentiful in the summer. Use the syrup to make Plum Margaritas, and the plum halves to top yogurt or ice cream.

Number Of Ingredients 2

1 cup sugar
4 small plums, preferably Santa Rosa, halved and pitted

Steps:

  • Bring sugar, 1 cup water, and plums to a boil in a small saucepan. Remove from heat; let stand 20 minutes. Strain and let cool completely. Syrup can be refrigerated in an airtight container up to 5 days.

Fresh plums are used to make a simple syrup in this summery take on the classic cocktail, as well as to garnish the finished drink.

1 1/2 cups Plum Simple Syrup
1 1/2 cups fresh lime juice, plus wedges and slices for serving
12 ounces silver tequila, such as Patron
Kosher salt
Small plum wedges, preferably Santa Rosa, for serving

Steps:

  • Combine simple syrup, lime juice, and tequila in a small pitcher. Pour salt onto a small plate. Moisten the rims of small glasses with lime wedges. Dip glasses into salt, fill with ice, then add tequila mixture to each. Garnish with plum wedges and lime slices.

  • In a saucepan, mix all ingredients together and bring to a gentle boil. Stir constantly to make sure the sugar is dissolved.
  • Bring to a rolling boil, but be sure to keep a close eye on it, so it doesn't boil over. Otherwise it will be a super sticky mess.
