HIGH ALTITUDE CHOCOLATE CHIP COOKIE BARS



High Altitude Chocolate Chip Cookie Bars image

2 cups + 2 tablespoons all purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
12 tablespoons unsalted butter, melted and cooled slightly
1 cup brown sugar
1/3 cup granulated sugar
1 large egg
1 large egg yolk
1 tablespoon vanilla extract
1 1/4 cup mini chocolate chips (or your favorite chocolate chip)

Steps:

  • Preheat the oven to 325F degrees.
  • Lightly butter a 9X13-inch baking pan or line it with parchment paper.
  • Mix the flour, salt, and baking soda together in medium bowl; set aside.
  • With a hand mixer, whisk the melted butter and both the brown and granulated sugar in a large bowl until combined. Add the egg, egg yolk, and vanilla and mix well.
  • Add the flour mixture and mix just until combined, taking care not to over mix. Fold in the chocolate chips.
  • Evenly press the cooking dough into the prepared pan, smoothing the top with the spatula or wooden spoon.
  • Bake in a preheated oven for 22-26 minutes just until the top of the bars is starting to brown. Remove the bars from the oven and let fully cool before cutting into 24 squares.

These have old-fashioned chocolate flavor granted by melted unsweetened chocolate squares. The "snow" on the mountain is simple powdered-sugar icing.

1 tablespoon water
1/2 cup powdered sugar
1 cup finely chopped nuts or mini chocolate chips, if desired
3 cups flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
2 teaspoons vanilla
4 squares unsweetened chocolate
2 large eggs
2 cups brown sugar
1 cup butter-flavored shortening

Steps:

  • Preheat oven to 350° F. Spray cookie sheets with non-stick baking spray.
  • Beat shortening with brown sugar until well blended. Add eggs one at a time, beating after each. Melt unsweetened chocolate squares and add slowly while continuing to beat batter. Add vanilla, baking powder, salt, and flour.
  • Optional: Stir in 1 cup of finely chopped walnuts, or 1 cup of mini semi-sweet chocolate chips, if desired.
  • Using a 1-1/2 inch cookie scoop (or tablespoon), drop cookies onto prepared baking sheets. Bake at 350° F for 10 minutes.
  • While cookies bake, prepare icing: Add 1 tbsp water to 1/2 cup powdered sugar and stir until smooth. Add more water, 1 tsp at a time, if needed, but keep icing rather stiff. Remove cookies to a cooling rack and cool 1 minutes. While still warm, frost with about 1 tsp of icing mixture.

1 ½ cups all-purpose flour
½ cup butter
½ cup packed brown sugar
¼ teaspoon salt
1 (12 ounce) package semisweet chocolate chips
2 eggs
1 ½ cups shredded sweetened coconut
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix 1 1/2 cups flour, butter, brown sugar, and 1/4 teaspoon salt together in a bowl using a pastry blender until crumbly. Pat crust mixture into a 9x13-inch baking pan.
  • Bake in the preheated oven until set, about 10 minutes. Sprinkle chocolate chips over crust and return to the hot oven until chips are softened, about 1 minute. Remove from oven and gently spread softened chocolate over the crust. Leave oven on.
  • Beat eggs in a bowl until light and frothy; add shredded coconut, 2 tablespoons flour, vanilla extract, baking powder, and 1/4 teaspoon salt. Spread egg mixture over the chocolate-covered crust.
  • Bake in the hot oven until light golden and center is set, 15 to 20 minutes. Allow to cool completely, at least 1 hour. Cut into 1x3-inch bars.

1 ¾ cups all-purpose flour, sifted
¾ cup confectioners' sugar
¼ cup cocoa powder
1 cup cold butter, cut into small pieces
1 (14 ounce) can sweetened condensed milk
2 cups semisweet chocolate chips, divided
1 tablespoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Process flour, sugar, and cocoa powder in a food processor until combined. Add butter and process until mixture is crumbly. Press into the bottom of a 9x13-inch baking pan.
  • Bake in the preheated oven until lightly browned, about 15 minutes.
  • Combine condensed milk and 1 cup chocolate chips in a bowl. Microwave 1 minute. Stir; continue microwaving in 20-second intervals until chocolate is melted and mixture is smooth. Add vanilla extract and stir.
  • Pour chocolate and milk mixture over the baked crust. Top with remaining chocolate chips and walnuts.
  • Bake in the preheated oven until set, about 20 minutes. Let cool before cutting into 24 or 36 pieces.
