This fresh-tasting shrimp pasta dish can also be chilled and served for lunch. The recipe can be made with many different pastas, including penne or shells. Any leafy green, such as spinach or arugula, can be substituted for the watercress.

Salt and pepper
1 pound fusilli
6 tablespoons olive oil
3 cloves garlic, minced
1 bunch scallions, white and green parts thinly sliced on the diagonal and kept separate (about 1 cup total)
1 pound medium shrimp, peeled and deveined
10 ounces frozen peas, thawed and drained
1/2 cup white wine, or water
2 teaspoons freshly grated lemon zest
1/4 teaspoon crushed red pepper
1/3 cup fresh lemon juice
3 ounces watercress sprigs, or spinach leaves (about 4 cups)

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente according to package instructions, about 12 minutes. Drain pasta, and return to pot; toss with 1 tablespoon oil. Cover to keep warm.
  • While pasta is cooking, heat remaining 5 tablespoons oil over medium-high heat in a medium saute pan. Add garlic and white parts of scallions, and cook until fragrant, about 30 seconds.
  • Add shrimp to pan, and cook 1 minute. Turn shrimp, and cook until pink and opaque, about 1 minute more. Stir in peas, wine, lemon zest, and red pepper; cook 1 minute.
  • Transfer shrimp mixture to pot; toss to combine with pasta. Drizzle lemon juice over pasta; sprinkle in green parts of scallions and the watercress. Season with salt and pepper; toss gently before serving.

2/3 lb shrimp
1 1/2 teaspoons rice wine
1/2 teaspoon gingerroot, minced
1 1/2 teaspoons cornstarch
1 teaspoon sesame oil
1 tablespoon chicken broth
3 tablespoons water
1/2 teaspoon cornstarch
3 tablespoons oyster sauce
1/2 cup vegetable oil
1 garlic clove, crushed
1/2 teaspoon salt
1/2 lb snow peas

Steps:

  • Shell and devein shrimp.
  • Rinse and pat dry with a paper towel.
  • Combine marinade ingredients in a ziplock bag.
  • Add shrimp.
  • Mix well.
  • Let stand 30 minutes.
  • Pat dry with a paper towel.
  • Heat oil in a wok 30 seconds over high heat.
  • Stir-fry garlic until golden, 30 seconds.
  • Add shrimp.
  • Stir-fry about 30 seconds until shrimp are pink.
  • Remove from wok with a slotted spoon, draining well over wok.
  • Add salt and snow peas to oil in wok.
  • Stir-fry until sauce thickens slightly.
  • Add cooked shrimp.
  • Stir-fry to coat shrimp with sauce.
  • Serve hot.

6 tablespoons olive oil
1 onion, diced
3 garlic cloves, minced
1 yellow pepper, thinly sliced
1 red pepper, diced
15 snow peas
2 Italian sausages
salt & freshly ground black pepper
grated romano cheese (optional)

Steps:

  • 1. Cook pasta according to package directions.
  • 2. Heat oil in large skillet over medium heat. Add onion and garlic. Sauté 5-6 minutes or until tender.
  • 3. Add peppers and snow peas. Sauté 3-4 minutes or until just softened.
  • 4. Add sausage and sauté for 2-3 minutes to heat through.
  • 5. Toss fusilli with sausage mixture. Season to taste with salt and pepper and serve with cheese, if desired.

In 2005, Julia Moskin wrote an excellent article about woks, the best sort for American kitchens (a 14-inch heavy-gauge carbon-steel wok with a flat bottom) and how to season it. This recipe, adapted from Grace Young's book, "The Breath of a Wok," ran alongside it. It is simple, fresh and fast. It cooks in under 5 minutes, so start your pot of rice as you clean the shrimp and chop the ginger, garlic and scallions.

1 tablespoon plus 1/4 teaspoon salt
1 pound large shrimp, peeled and deveined
1/3 cup chicken broth
2 teaspoons rice wine or dry sherry
1 1/2 teaspoons soy sauce
1 1/2 teaspoons cornstarch
3/4 teaspoon sugar
1/8 teaspoon ground white pepper
1 tablespoon plus 2 teaspoons vegetable oil
2 tablespoons minced garlic
1 teaspoon minced ginger
6 ounces snow peas, strings removed, washed and dried
1 scallion, chopped

Steps:

  • In a large bowl combine 2 cups cold water and 1 tablespoon salt, stirring until salt is dissolved. Add shrimp, and let stand five minutes. Rinse shrimp under cold running water, and set to dry on paper towels. With more towels, pat shrimp dry.
  • In a bowl, combine broth, wine, soy sauce, cornstarch, sugar and pepper.
  • Heat a wok over high heat. To test heat flick a few drops of water into wok. When water vaporizes within 2 seconds, wok is hot. Swirl in 1 tablespoon oil around sides of wok. Add shrimp, spreading them in a single layer, so they have contact with hot metal. Stir-fry for 2-3 minutes or just until pink, tossing them with a wok shovel or spatula. Add remaining 2 teaspoons oil, garlic and ginger, and stir-fry 5 seconds. Add snow peas and remaining 1/4 teaspoon salt, and stir-fry 1 minute more.
  • Stir cornstarch mixture, swirl it in around sides of wok, and bring to a boil. Stir-fry just until shrimp are cooked through and sauce has thickened, about 30 seconds more. Stir in scallions, and serve immediately.

1 lb fusilli
3 tablespoons olive oil
3 garlic cloves, minced
1 bunch scallion, thin sliced see note
1 lb shrimp, peeled and deveined
10 ounces peas, thawed and drained
1/2 cup white wine or 1/2 cup water
2 tablespoons lemon zest, fresh grated
1/4 teaspoon red pepper flakes, crushed
1/2 cup lemon juice
salt and pepper, to taste
3 ounces watercress

Steps:

  • Note keep the white and the green of the scallions separate.
  • Cook the fusilli until Al dente according to package directions. Drain and return to pot tossing with 1 tbsp oil. Cover to keep warm.
  • While this is cooking saute the garlic and white of scallion in a saucepan in the remainder of the oil until fragrant, about 30 seconds.
  • Add shrimp and cook 1 minute. Turn the shrimp and cook until pink and opaque approx one minute more. Stir in peas, wine, lemon zest, and red pepper. Cook 1 minute.
  • Transfer shrimp mix to the pot and toss with pasta. Drizzle lemon juice over. Sprinkle with green scallion pieces and the watercress. Season with salt and pepper. Toss gently and serve.

This bright, tangy, one-pan meal comes together quickly and is packed with bright flavors - perfect for a summer evening. If you can't find fresh corn, frozen will work in a pinch; just defrost it and pat it dry before throwing it into the skillet. You can also add a little more spice by leaving the ribs and seeds in the chile that goes into the dressing. Serve the shrimp and corn over rice or with a big green salad. Depending on what you serve this dish with, you may have a bit of dressing leftover, which can be saved for salad or drizzled over grilled meat or vegetables.

1 pound large shrimp (preferably tail-on), peeled and deveined
2 teaspoons ground coriander
Kosher salt and black pepper

Steps:

  • Pat the shrimp dry, then toss with the coriander and a sprinkle of salt and pepper. Let sit while you prepare the dressing.
  • Make the dressing: In a medium bowl, combine the lime juice, lime zest, mint, honey, garlic, chile, 1 teaspoon kosher salt and 1/4 cup olive oil. Whisk until well combined and emulsified.
  • Heat a large nonstick skillet over medium-high. Add 2 tablespoons olive oil, then add the shrimp in an even layer. Cook the shrimp until pink and just cooked through, about 2 to 3 minutes per side. Remove the shrimp to a plate.
  • Reduce the heat to medium and add the corn to the pan. Season with salt and pepper, and cook the corn without stirring until it begins to brown on one side, about 2 minutes. Give the corn a stir and cook for another minute.
  • Add the shrimp back to the pan, along with 2 tablespoons of the dressing, and stir to coat everything in the dressing and to rewarm the shrimp.
  • Transfer to a serving platter, drizzle with more dressing, and garnish with more mint. Serve with lime wedges.

1/2 pound uncooked large shrimp, peeled, deveined
2/3 cup dry white wine
1 cup whipping cream

Steps:

  • Place eggs in shallow bowl and beat to blend. Mix breadcrumbs, 1/3 cup parsley, 3/4 teaspoon salt and 1/2 teaspoon pepper in another shallow bowl. Dip chicken into eggs, then into crumb mixture, turning to coat completely.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add chicken; sauté until cooked through, about 4 minutes per side. Transfer to plate. Discard oil in skillet; add 1 tablespoon oil. Add shrimp; sauté over medium-high heat until just cooked through, about 3 minutes. Using slotted spoon, transfer shrimp to plate with chicken. Add wine to skillet; boil until reduced to 1/2 cup, about 2 minutes. Add cream; boil until sauce thickens slightly, about 3 minutes. Mix in cayenne and Parmesan.
  • Cut chicken into 1/2-inch pieces. Return chicken, shrimp and any collected juices to sauce in skillet. Stir over medium heat until heated through.
  • Meanwhile, cook fusilli in large pot of boiling salted water until just tender but still firm to bite.
  • Drain pasta. Add to skillet; toss to coat. Season with salt and pepper. Transfer to large bowl. Sprinkle with 2 tablespoons parsley and serve.
