FRUIT JELLY CANDIES

These colorful fruit jellies can be cut to any size before being rolled in sugar.

Number Of Ingredients 7

2 ounces gelatin (plus 1 more ounce if making pineapple jellies)
2 cups water
4 1/3 cups granulated sugar
1 teaspoon citric acid
1 cup superfine or confectioners' sugar
Vegetable oil cooking spray
Flavoring of your choice, see below

Steps:

  • Spray two 8-inch square pans with vegetable-oil spray. Prepare flavoring.
  • In a 6-quart saucepan, sprinkle gelatin over 2 cups water; let gelatin soften for about 3 minutes. Add granulated sugar and citric acid. Heat slowly over low heat, stirring constantly with a wooden spoon, until sugar has dissolved, about 10 minutes. Wash down sides of pan with a wet pastry brush to remove any sugar crystals.
  • Increase heat to high; bring gelatin to a boil. Reduce heat to medium low and boil gelatin, without stirring, 15 minutes. The syrup needs to be watched while it boils; if it starts to turn dark tan before the 15 minutes, it is ready. Remove from heat.
  • Let stand for 5 minutes while bubbles dissipate; some white foam will remain. Whisk in flavoring. Without scraping pot, pour evenly into prepared pans. Let stand, uncovered, for 24 hours. Unmold, cut into 1-inch squares or other desired shapes; roll in superfine or confectioners' sugar, and serve.
  • Whisk together 1/4 cup red-currant jelly, sieved to remove seeds and 1 tablespoon rose water in a small bowl.
  • Chop 4 ounces dried apricots medium fine, place in a small saucepan, and add 1 cup water.
  • Cover, and bring to a boil; reduce heat to medium low, and cook, covered, until water has been absorbed, 10 to 20 minutes. Transfer apricots to a food processor. Process to a fine puree. Transfer to a bowl, and add 1 tablespoon or apricot oil or orange-flower water.
  • Place 2 cups fresh or frozen cranberries and 1 cup water in a saucepan; cover. Bring to a boil, reduce heat to medium low, and cook until water has been absorbed, 10 to 20 minutes.
  • Transfer to the bowl of a food processor. Process to a fine puree. Transfer to a bowl. Whisk in 1 tablespoon orange-flower water and 1 cup dried cranberries.
  • Place 6 ounces dried figs, chopped medium fine, in a small saucepan, add 1 cup dry red wine and 1/2 teaspoon freshly ground pepper, and cover. Bring to a boil; reduce heat to medium low, and cook for 15 minutes, until most of the liquid has been absorbed.
  • Transfer to the bowl of a food processor, and puree. Transfer to a bowl, and stir in 1 tablespoon pure vanilla extract.
  • Mix together 1/2 cup boysenberry or grape jelly and 1 tablespoon pure anise extract or oil in a small bowl.
  • Chop 8 ounces dried pineapple medium fine. Place in a saucepan with 1 cup water; cover. Bring to a boil. Cook over medium-low heat until most of the water has been absorbed, 15 minutes.
  • Transfer to the bowl of a food processor; process until mixture is as smooth as possible. Transfer to a small bowl, and mix in 1 tablespoon lemon oil.

1 1/3 cups fruit juice (any flavor) or water
4 packets powdered gelatin (1 ounce total)
2 1/2 cups sugar
2 cups fruit preserves or jam

Steps:

  • Place 2/3 cup juice in a small bowl or measuring cup and sprinkle with gelatin. Let sit 5 minutes. Meanwhile, in a medium saucepan, combine remaining 2/3 cup juice and 1 1/2 cups of the sugar. Bring to a boil over medium-high and cook, stirring, until sugar dissolves, 5 minutes. Add preserves and whisk to combine. Return to a boil and cook until thick and syrupy, 2 minutes. Add gelatin mixture and whisk until gelatin dissolves. Pour through a fine-mesh sieve into an 8-inch square baking dish. Refrigerate until set, 3 hours (or up to 2 weeks).
  • Place remaining 1 cup sugar in a pie plate or shallow bowl. Cut fruit jelly into 1-inch squares. Toss in sugar to coat just before serving.

1 honeydew melon (4-1/2 lb.), cut lengthwise in half
3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
ice cubes
1/2 cup cold water

Steps:

  • Remove and discard seeds from melon halves; invert onto paper towels to drain.
  • Cut thin slice from bottom of each melon shell to allow it to stand upright. (Or, place each melon shell in small bowl.)
  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1-1/4 cups. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Spoon gelatin evenly into melon halves. Pour any remaining gelatin into separate small bowl. Refrigerate several hours or until firm. Cut each melon half into 3 wedges to serve.

I made these fun little guys for my 14 mo. old nephew and they were perfect! Being so young, it was better for him to eat a "Jello orange" than a real one. These were a hit with the whole family--not just the kids! Originally I found the recipe somewhere online, and I have found that its best to keep to the orange flavors, as other rinds have a more bitter taste that changes the taste of the Jello.

8 medium oranges (at least)
4 (85 g) boxes orange gelatin
2 1/2 cups boiling water

Steps:

  • Slice the fruit cleanly in half lengthwise (through the axis).
  • Carefully remove the pulp while keeping the half rind fully intact.
  • Ensure that the rinds are dry (you can use paper towels to blot them).
  • Set each half rind upright in a muffin pan so you can fill it with Jello.
  • Mix the water with the gelatin (just like you would to make jigglers).
  • You'll want the Jello a little firmer than the normal recipe as you have to slice it in half again.
  • Make sure that the gelatin is well dissolved, and then pour into the fruit before it begins to set.
  • Fill up as high as you can, the Jello will shrink a bit when cooling.
  • Carefully transfer to the fridge and let set for about three hours, per box directions.
  • When the Jello is set, place the fruit open-side down on a cutting board, hold it's shape with one hand and carefully slice in half lengthwise again to form quarters.
  • Be careful not to smash the fruit as you'll want to keep the Jello intact (you may use a serrated knife).
  • Ready to serve!

Steps:

  • Cut melon lengthwise in half; remove and discard seeds. Scoop out melon halves, leaving 1-inch-thick shells. Chop removed melon; drain well. Cut thin slice off bottom of each melon shell to allow it to stand upright.
  • Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water.
  • Spoon half each of the chopped melon and fruit cocktail into each melon shell; fill with gelatin. Pour any remaining gelatin into small bowl to enjoy later. Refrigerate 4 hours or until firm. Cut into wedges to serve.

1/4 cup JELL-O Berry Blue Flavor Gelatin (2/3 of 3-oz. pkg.)
1/4 cup JELL-O Lime Flavor Gelatin (2/3 of 3-oz. pkg.)
1/4 cup JELL-O Lemon Flavor Gelatin (2/3 of 3-oz. pkg.)

Steps:

  • Beat butter in large bowl with mixer until creamy. Gradually beat in flour. Divide dough into 4 pieces; place each in separate medium bowl. Add different flavor dry gelatin mix to dough in each bowl; mix well.
  • Cut 18x4-inch strip from parchment; use to line 9x5-inch loaf pan, with ends of paper extending over sides. Press dough, one flavor at a time, onto bottom of prepared pan, gently pressing layers together to seal. Refrigerate 3 hours or until firm.
  • Heat oven to 350ºF. Use parchment handles to remove dough from pan; invert onto cutting board. Cut into 3/8-inch-thick slices, then cut each slice crosswise into 3 pieces. Place, 1 inch apart, on parchment-covered baking sheets.
  • Bake 10 to 12 min. or until centers are set. Cool 5 min on baking sheets. Remove to wire racks; cool completely.

1 pkg. (6 oz.) JELL-O Strawberry Flavor Gelatin
3 cups JET-PUFFED Miniature Marshmallows
1 pkg. (2-layer size) white white cake mix

Steps:

  • Heat oven to 350°F.
  • Spread strawberries onto bottom of 13x9-inch pan; top with pineapple. Sprinkle with dry gelatin mix; top with marshmallows.
  • Prepare cake batter as directed on package, omitting the oil. Pour over marshmallows.

1-1/2 envelopes (about 1-1/2 tablespoons) unflavored gelatin
1/4 cup Midori (melon-flavored liqueur)
the flesh of half a 6-to 7-pound honeydew melon
1/4 cup sugar
2 tablespoons fresh lemon juice
1/3 cup plain yogurt
For the cantaloupe mousse
1-1/2 envelopes (about 1-1/2 tablespoons) unflavored gelatin
3 tablespoons Port
3 tablespoons sugar
2 tablespoons fresh lemon juice
1/3 cup plain yogurt
small wedges of honeydew melon and cantaloupe for garnish

Steps:

  • Make the honeydew mousse:
  • In a small saucepan sprinkle the gelatin over the Midori and let it soften for 1 minute. Heat the mixture over low heat, stirring, until the gelatin is dissolved completely and let it cool. In a blender purée the honeydew with the sugar and the lemon juice and with the motor running add the Midori mixture in a stream. Transfer the mixture to a metal bowl set in a larger bowl of ice and cold water and stir it until it is the consistency of raw egg white. Remove the metal bowl from the ice, stir in the yogurt, and let the honeydew mousse stand while making the cantaloupe mousse.
  • Make the cantaloupe mousse:
  • Make the cantaloupe mousse: In a small saucepan sprinkle the gelatin over the Port and let it soften for 1 minute. Heat the mixture over low heat, stirring, until the gelatin is dissolved completely and let it cool. In a blender purée the cantaloupe with the sugar and the lemon juice and with the motor running add the Port mixture in a stream. Transfer the mixture to a metal bowl set in a larger bowl of ice and cold water and stir it until it is the consistency of raw egg white. Remove the metal bowl from the ice and stir in the yogurt.
  • In a 2-quart glass bowl or 8 dessert glasses layer the mousses, chilling them for 5 minutes between each layer, chill the mousse for at least 2 hours or overnight, and garnish it with the melon wedges.
