1 stalk celery, diced
4 green onions, chopped
1 Golden Delicious apple - peeled, cored and diced
⅓ cup golden raisins
⅓ cup seedless green grapes, halved
½ cup chopped toasted pecans
⅛ teaspoon ground black pepper
½ teaspoon curry powder
¾ cup light mayonnaise

Steps:

  • In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together. Serve!

1/4 cup orange juice
2 boneless, skinless chicken breast halves, cooked and cubed
1 cup sliced strawberries
2 kiwis, sliced
2/3 cup canned Mandarin oranges in light syrup, drained
8 lettuce leaves
3 tablespoons chopped cashews

Steps:

  • Combine mayonnaise, sour cream, and orange juice in a nonreactive bowl. Add chicken, strawberries, kiwi, and oranges, and toss to coat. Cover and refrigerate for 2 hours.
  • Serve on lettuce leaves, topped with cashews.

The amounts listed are only a guideline since I don't even bother measuring please feel free to adjust all ingredients to suit taste but please try not to omit anything all the ingredients blend together perfectly! You could use all mayonnaise but I prefer half mayonnaise and yogurt or sour cream for a lighter texture, if you are making this in advance then add in the diced apple just before serving. If you are a curry-lover then try adding in 1/2 to 1 teaspoon curry powder into the mayo mixture, I think you will be quite surprised at the taste! This is one of the best recipes for chicken salad!... For a luncheon, double or triple the complete recipe and serve this on a bed of lettuce with tomato wedges around the chicken salad then sprinkle more toasted almonds on and around the chicken salad... your guests will rave!

1 (2 1/2 pound) fryer chicken or equivalent pieces
½ cup creamy salad dressing (such as Miracle Whip®)
2 tablespoons white sugar, or to taste
¼ cup raisins
1 ripe mango, peeled and diced

Steps:

  • Put the chicken in a large pot with enough water to cover. Bring to a boil; reduce heat to medium. Allow the chicken to simmer until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken to a cutting board. Use a pair of forks to remove and shred the meat from the chicken. Discard the remains. Place shredded chicken in a single layer on a plate and allow to cool completely in refrigerator, about 15 minutes.
  • Stir together the salad dressing and sugar in a large bowl. Stir the chicken and raisins into the salad dressing. Add the mango and gently fold into the mixture. Refrigerate overnight or 8 hours before serving.

8 ounces uncooked spiral pasta
1 can (20 ounces) pineapple chunks
3 to 4 cups cubed cooked chicken
1 can (15-1/2 ounces) sliced peaches, drained and diced
2 tablespoons raisins
1/3 cup vegetable oil
1/4 cup soy sauce
1 teaspoon curry powder
1/2 cup chopped pecans

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Drain pineapple, reserving 1/2 cup juice. Dice the pineapple and place in a large bowl. I love chicken salad and was playin' in the kitchen one day and created this recipe. I was low on mayo so I extended it with creamed cheese. Yummy! I think I now know how those deli chicken salads taste so creamy & rich. The addition of grapes and apple, or pineapple send it over the top in goodness. I learned the hard way not to use fresh pineapple in this salad. It turned the chicken slimy so had to throw that batch out. The prep time does not include the cook time for the chicken, but i usually just use a rotisserie chicken from Sam's Club.

When salad is all mixed refrigerate for several hours so flavors will marry.

I got this recipe from a friend after he brought some to a picnic - I fell in love with it instantly. It's from the June 2002 Gourmet magazine, but I've tweaked it to my own tastes (it can be found in it's original form in recipe # 129270). I only use Greek yogurt but plain non-fat yogurt works. I never add mayo anymore so I left that off the ingredients list - I can't taste the difference. I'm also not a fan of sweet & savory together so I leave out the fruit. Serve this with cous cous or taboulle salad, or it goes great on lettuce, pitas, croissants, and hard rolls.

1/3 cup dry roasted almonds, chopped roughly (dry roasted)
1/4 cup chopped green onion
salt and pepper

  • Cream the cream cheese and miracle whip together.
  • Fold in the chicken then pineapple, onions, and then very carefully fold in oranges careful not to break them apart.
  • Taste it at this time and if your fruit isn't very sweet you may want to add a tsp or 2 of sugar or Splenda to sweeten it a bit.
  • Refrigerate till ready to serve and add almonds just before serving.
  • Serve with crackers, bread, or rolls.
  • Cook time doesn't include cook time for chicken or time to chill.
