Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups.
  • In a large bowl, mix the 3/4 cup oats, wheat germ, flour, sugar, walnuts, salt, and baking powder. Stir in the milk, oil, and egg just until dry ingredients are evenly moist. Fold in the blueberries. Scoop batter into the prepared muffin cups.
  • Mix 1/3 cup oats, brown sugar, and cinnamon in a small bowl, and sprinkle over the batter.
  • Bake 20 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

  • In a separate medium bowl, whisk together the flour, baking powder, cinnamon, baking soda and salt.
  • Stir the melted butter, eggs and brown sugar into the bowl of oats and milk until well combined. Stir the flour mixture into the oat mixture until well combined. Fold in the white chocolate chips and dried apricots.

2 1/2 c oats, regular (not instant)
1 c greek yogurt, plain, fat free
2 eggs
1/2 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla
3/4 c blueberries
3/4 c strawberries, chopped/sliced

Steps:

  • 1. Preheat oven to 400 degrees. Line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan). Or spray muffin tins with non-stick spray. *Note The paper liners don't work well when baking without flour.
  • 2. Mix all of the ingredients (except fruit) until moistened, don't over stir. *if using apples or peaches add 1 teaspoon ground cinnamon or allspice.
  • 3. Fold in fruits. I used blueberries and strawberries but you could use any that appeal to you. Just make sure you have a total of 1 1/2 cups fruit.
  • 4. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.

1 large ripe banana
1 apple (such as Granny Smith, Royal Gala or Golden Delicious), (unpeeled)
150 g frozen mixed berries or blueberries (5 1/4 oz, fresh or thawed)
1/2 cup pure floral honey (125ml/floz)
2 egg, ( lightly whisked)
1/4 cup buttermilk (60ml/2 floz)
100 ml canola oil (3 1/2 floz)

Steps:

  • Preheat oven to 190°C (375°F/Gas 5). Line 2 x 12-hole patty pan trays with paper cases.
  • Sift together the flour, baking powder and cinnamon into a large mixing bowl. Stir in the oat bran. Make a well in the centre and set aside.
  • Use a fork to mash the banana in a medium sized bowl. Core and coarsely grate the apple and add to the banana. Add the berries, honey, eggs, buttermilk and oil and stir well to combine. Add the fruit to the flour mixture and fold together with a large metal spoon until just combined.
  • Spoon the mixture evenly into the lined patty pans and bake for 20-25 minutes or until a skewer inserted into one of the muffins comes out clean. Remove from oven and transfer to a wire rack. Serve warm or at room temperature.

1 cup (240ml) milk
1 cup (80g) old-fashioned whole rolled oats
1 and 1/4 cups (156g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (115g) unsalted butter, melted and slightly cooled
1/2 cup (120ml) honey
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1 cup (190g) fresh or frozen blueberries (see note if using frozen)

Steps:

  • Combine milk and oats. Set aside for 20 minutes so the oats puff up and soak up some moisture. This is crucial to the recipe! (I usually melt the butter now so it has a few minutes to cool.) Don't do this the night before as that's too long for soaking. If you find the oats haven't soaked up any moisture after 20 minutes, give it a stir and wait 10 more minutes.
  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners.
  • Whisk the flour, baking powder, baking soda, cinnamon, and salt together in a large bowl until combined. Set aside. Whisk the melted butter, honey, egg, and vanilla extract together in a medium bowl until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the soaked oats (milk included, do not drain) and blueberries. Fold everything together gently just until combined.
  • Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coconut sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C).) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Muffins stay fresh covered at room temperature for a few days, then transfer to the fridge for up to 1 week.

So much so, I went looking through my cookbooks for recipes that might capture that same delightful quality. The original comes from "The 250 Best Muffin Recipes" but I've already started tweaking it a bit here. This has been updated since Roosie's review.

1/4 cup oatmeal, regular not instant
1/2 cup mixed dried fruit (if you can't find pre-mixed dried fruit, make your own combination or use raisins)
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
1 cup unsweetened applesauce
1/3 cup brown sugar (use a half cup if you like your muffins sweeter)
1/2 cup low-fat buttermilk (or use 1/3 cup non-fat yogurt plus skim milk to level it off to 1/2 cup)
2 tablespoons canola oil
cooking spray

Steps:

  • Preheat oven to 350 degrees (180c).
  • In one bowl combine all of the dry ingredients - oat bran, oatmeal, fruit, cinnamon, nutmeg, baking powder, baking soda and salt.
  • In a second bowl, lightly beat the egg whites by hand. Whisk in the yogurt, oil, applesauce and brown sugar. Fold the wet ingredients into the dry ingredients until just mix. Do not over beat as it will result in a tough lumpy muffin.
  • Spoon batter into lightly sprayed muffin tin. (Use paper liners if you prefer.) Bake 33 to 38 minutes, toothpick should be clean.

It would be great with nuts or dried fruit if you are so inclined. I try to keep muffins on hand throughout the summer as snack food. My kids are constantly going to the pantry or refrigerator looking for food. When I have healthy (ish) homemade snacks, I feel better about their constant grazing.
