- Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups.
- In a large bowl, mix the 3/4 cup oats, wheat germ, flour, sugar, walnuts, salt, and baking powder. Stir in the milk, oil, and egg just until dry ingredients are evenly moist. Fold in the blueberries. Scoop batter into the prepared muffin cups.
- Mix 1/3 cup oats, brown sugar, and cinnamon in a small bowl, and sprinkle over the batter.

- Heat oven to 400°F. Grease bottoms only of 6 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
- In medium bowl, mix flour, 1/2 cup oats, the baking powder and salt. In small bowl, mix brown sugar, milk, oil, vanilla and egg with fork or wire whisk until blended. - Combine the oats and milk in a large bowl and let stand 30 minutes.

- 1. Preheat oven to 400 degrees. Line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan). Or spray muffin tins with non-stick spray. *Note The paper liners don't work well when baking without flour.
- 2. Mix all of the ingredients (except fruit) until moistened, don't over stir. *if using apples or peaches add 1 teaspoon ground cinnamon or allspice.
- 3. Fold in fruits. I used blueberries and strawberries but you could use any that appeal to you. Just make sure you have a total of 1 1/2 cups fruit.

- Preheat oven to 190°C (375°F/Gas 5). Line 2 x 12-hole patty pan trays with paper cases.
- Sift together the flour, baking powder and cinnamon into a large mixing bowl. Stir in the oat bran. Make a well in the centre and set aside.

BLUEBERRY OATMEAL MUFFINS

- Combine milk and oats. Set aside for 20 minutes so the oats puff up and soak up some moisture. This is crucial to the recipe! (I usually melt the butter now so it has a few minutes to cool.) Don't do this the night before as that's too long for soaking. If you find the oats haven't soaked up any moisture after 20 minutes, give it a stir and wait 10 more minutes.
- Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners.
- Whisk the flour, baking powder, baking soda, cinnamon, and salt together in a large bowl until combined. Set aside. Whisk the melted butter, honey, egg, and vanilla extract together in a medium bowl until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the soaked oats (milk included, do not drain) and blueberries. Fold everything together gently just until combined.
- Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coconut sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C).) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
- Muffins stay fresh covered at room temperature for a few days, then transfer to the fridge for up to 1 week.
FRUIT AND OATMEAL MUFFINS
This was a recipe I put together to use up some dried fruit. They are a dense muffin and reduced fat. You can use a sugar substitute to even reduce the calories. I sometimes use an egg substitute, too. These muffins have become so popular with our friends that every time we have a tailgate party or golf get together I must bring them.

- Preheat your oven to 425°F. Lightly grease the cups of a standard 12-cup muffin pan. Or line the cups with papers, and grease the papers.
- Blend together the dry ingredients, add chopped fruit and stir.
- Beat the liquid ingredients together - milk, oil or butter, eggs, and vanilla - until light.
- Pour the wet ingredients into the dry ingredients. Take a fork or wire whisk and blend the two briefly - about 20 seconds should do it.

OAT BRAN FRUIT MUFFINS
I recently tried PaulaG's Pumpkin Fruit and Nut Muffins (#116356) and loved the wonderful moistness given to these by the apricots and raisins. So much so, I went looking through my cookbooks for recipes that might capture that same delightful quality. The original comes from "The 250 Best Muffin Recipes" but I've already started tweaking it a bit here. This has been updated since Roosie's review.

- Preheat oven to 350 degrees (180c).
- In one bowl combine all of the dry ingredients - oat bran, oatmeal, fruit, cinnamon, nutmeg, baking powder, baking soda and salt.
- In a second bowl, lightly beat the egg whites by hand. Whisk in the yogurt, oil, applesauce and brown sugar. Fold the wet ingredients into the dry ingredients until just mix. Do not over beat as it will result in a tough lumpy muffin.

BANANA OATMEAL MUFFINS
With the warm weather, bananas go black faster than I can snap my fingers. Here is a super moist muffin that makes a fabulous breakfast. It would be great with nuts or dried fruit if you are so inclined. I try to keep muffins on hand throughout the summer as snack food. My kids are constantly going to the pantry or refrigerator looking for food. When I have healthy (ish) homemade snacks, I feel better about their constant grazing.
