FROZEN PINEAPPLE TREAT
Steps:
- Slice the pineapple in half lengthwise, leaving the greens attached. Use a paring knife to cut away the fruit and core from both halves of the pineapple, leaving a thin border of fruit intact to make 2 pineapple boats. Cut the fruit into chunks and set aside. Place the pineapple boats in the freezer until you are ready to serve.
- Peel the banana and cut into chunks. Place the pineapple and banana chunks on a parchment-lined baking sheet or dish and freeze until frozen, about 4 hours.
- In the bowl of a food processor, combine the frozen fruit and cream of coconut. Pulse until the mixture forms a thick paste, about 3 minutes. Gradually drizzle in 1/2 cup water, pulsing, until the consistency of soft serve is reached.
- Scoop the soft serve into the frozen pineapple halves and garnish each with maraschino cherries and a small bottle of rum if desired. Serve immediately.

A friend gave me this recipe. It was based on a Weight Watchers recipe. It's a sweet dessert that the whole family loved This recipe is not lactose free but can be made gluten free if you use GF ingredients

- Refrigerate the evaporated milk to make it as cold as possible.
- Combine the juice, water and jelly crystals. Microwave for one minute, stir and leave to cool.
- Pour the evaporated milk into a small mixing bowl and beat until very thick. Add the cream cheese and continu beating.
- Gradually add the jelly and continue to beat until the mixture is very thick.
- Fold in the pineapple pieces.
- Place the mousse into 4 individual serving dishes and refrigerate for about an 1 1/2 or until set.

- Heat the coffee and marshmallows in a small saucepan, stirring often until they are almost melted.
- Meanwhile, prepare an ice bath.
- Add the chocolate to the marshmallow mixture, remove from heat and keep stirring until it's smooth. Pour into a bowl and place on ice bath.
- Stir until cooled and beat with an electric mixer until frothy. In another bowl, (no need to wash beaters) beat evaporated milk until thickened and doubled in volume. Fold gently into marshmallow mixture.
- Divide into 6 custard or ice cream cups and refrigerate until set. Garnish with a dollop of whipped cream and more grated chocolate if desired.

- To prepare the mousse cups, cut four strips of aluminum foil, each 8 inches long and 2 inches wide. Wrap a strip around the top of each of four 4-oz paper cups. Secure the foil with tape and set the cups aside.
- In a heatproof bowl, mix the juice concentrate with the water.
- Sprinkle the gelatin on the top.
- Place the bowl in a large saucepan. Add enough water to the saucepan to come halfway up the side of the bowl.
- Heat over low heat, stirring continually until the gelatin dissolves. Set aside.
- Chop the cantaloupe cubes coarsely by hand or in a food processor; do NOT liquefy.
- Add the almond extract, juice mixture, and vanilla yogurt; stir or process briefly to blend. Set aside in a bowl.
- Beat the egg whites until stiff but not dry. Gently fold them into the fruit mixture.
- Divide the mixture among the mousse cups and freeze until firm, at least 1 1/2 hours.

- Place pineapple pieces in a resealable plastic bag, laying them flat. Freeze until solid, at least 3 hours.
- Shake cream of coconut and coconut milk in their cans before measuring.
