6 (6 ounce) salmon fillets
2 teaspoons olive oil, plus
1 tablespoon olive oil, divided
4 tablespoons lemon juice, divided
4 teaspoons minced fresh ginger, divided
1 medium red bell peppers or 1 medium yellow bell pepper, diced
1 small red onion, finely chopped
2 (8 ounce) cans crushed pineapple
1/2 cup golden raisin
1/4 teaspoon cayenne pepper
3 cups torn fresh spinach
3 cups torn fresh romaine lettuce

Steps:

  • Rinse the salmon in cool water and pat it dry.
  • In a bowl combine 2 teaspoons oil, 2 tablespoons lemon juice and 1 teaspoon ginger.
  • Coat both sides of fish with the mixture and refrigerate for up to an hour.
  • While the fish marinates prepare the Pineapple Salsa.
  • Heat the remaining oil in a medium skillet.
  • Add the yellow pepper and onion and sauté until soft about 4 minutes.
  • Add the crushed pineapple, raisins, cayenne and remaining lemon juice and ginger; sauté until pineapple is warm, about 4 minutes longer.
  • (Salsa can be made ahead up to 24 hours; but bring to room temperature before using.).
  • Grill or broil the salmon, turning once, until fish is barely opaque in the center, and just begins to flake when tested with a fork about 2 minutes per side for 3/4-inch thick fish steaks.
  • Enjoy!

1-1/2 teaspoons cornstarch
1/4 teaspoon ground ginger
2 tablespoons honey
2 tablespoons reduced-sodium soy sauce
1 tablespoon lemon juice
4 fresh or orange roughy fillets (6 ounces each)

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small saucepan, combine cornstarch and ginger; stir in pineapple juice until blended. Add honey and soy sauce. bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in lemon juice. Pour half into a small serving bowl. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, uncovered, over medium heat for 4-5 minutes on each side or until fish flakes easily with a fork, basting occasionally with glaze. , Meanwhile, grill pineapple slices for 2-3 minutes on each side or until heated through, basting frequently with glaze. Serve fish with pineapple and reserved glaze.

1/4 cup red bell pepper, finely chopped
1/4 cup green bell pepper, finely chopped
2 tablespoons fresh cilantro, finely chopped
2 tablespoons fresh lime juice, divided
1/2 teaspoon red pepper flakes
1/2 teaspoon lime zest
nonstick cooking spray, as needed
4 mahi mahi fillets (4-ounces each)
1 tablespoon olive oil
1/2 teaspoon white pepper, freshly ground

Steps:

  • To prepare Pineapple Salsa, combine pineapple, red and green peppers, cilantro, 1 tablespoon lime juice, red pepper flakes and lime peel in medium bowl.
  • (Pineapple Salsa may be prepared 1 to 2 days ahead and refrigerated.).
  • Preheat broiler.
  • Spray rack of broiler pan with cooking spray.
  • Rinse mahi-mahi and pat dry with paper towels.
  • Place mahi-mahi on rack.
  • Combine remaining 1 tablespoon lime juice and olive oil; brush on mahi-mahi.
  • Broil mahi-mahi, 4 inches from heat, 2 minutes.
  • Turn and brush second side with olive oil mixture; sprinkle with white pepper.
  • Continue to broil 2 minutes or until mahi-mahi flakes easily when tested with fork.
  • Serve with Pineapple Salsa.
