1/2 cup milk
1/2 cup flour (more or less)
1 teaspoon baking powder
fat (for frying)
1 pinch salt

Steps:

  • Beat egg and milk.
  • Add salt.
  • Dip crabs thoroughly in egg and milk mixture,.
  • then in flour and baking powder which have been mixed.
  • Have hot fat about 1/2" deep and cook until golden brown.
  • Serve with tartar sauce.

1 1/2 cups firmly packed basil leaves, processed in a food processor
3 garlic cloves, minced
3/4 cup mayonnaise
2 tablespoons lemon juice
salt
pepper
4 soft shelled crabs
seasoned flour (for dredging, flour with salt and pepper added)
1/4 cup olive oil

Steps:

  • Prepare the aioli: Mix all of the ingredients together until homogenous.
  • Set aside in the refrigerator until ready to use.
  • Prepare the crabs: Pat the crabs dry and dredge in the flour mixture.
  • Heat 1/2 of the olive oil in a skillet over high heat.
  • Add two of the crabs and cook for about 3 minutes per side, or until browned.
  • Remove from the skillet and keep warm.
  • Add the rest of the oil and cook the other 2 crabs.
  • Serve at once on crusty bread that has been spread with the aioli.

2 cups milk
2 teaspoons sriracha sauce or 2 teaspoons Tabasco sauce
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon fresh ground pepper
8 soft-shell crabs, cleaned
1 tablespoon sesame oil
1/2 cup white wine
2 limes, juiced
2 Thai chiles, seeded and minced
4 scallions, minced
1/4 cup mint leaf, minced
1/4 cup basil leaves, minced
1/2 cup coriander leaves, minced

Steps:

  • Combine the milk and Tabasco in a bowl. Set aside. Mix the flour, salt and pepper in a shallow pan. Dip the crabs in the milk and dredge in flour mixture. Heat the oil in a heavy-bottom skillet over medium-high heat. Place the crabs in pan and cook for 3 minutes. Turn and cook until tender, about 2 more minutes. Drain on paper towels.
  • Drain the fat from the pan. Return the skillet to the stove. Add the wine, lime juice, chilies and scallions. Turn the heat up to medium-high and simmer until sauce reduces to 1/3 cup, about 3 to 5 minutes. Place two crabs on each of four plates. Drizzle with sauce and garnish with minced mint, basil and coriander leaves.

12 soft shelled crabs
1/4 cup milk
3/4 cup flour
2 eggs, beaten
2 teaspoons salt
3/4 cup dry breadcrumbs

Steps:

  • Dress fresh crabs or thaw frozen crabs. Rinse in cold water; drain.
  • Combine eggs, milk, and salt.
  • Combine flour and crumbs.
  • Dip crabs in egg mixture and roll in flour/crumb mixture. For heavier breading, let crabs sit several minutes and repeat dipping/rolling procedure. Additional spices, such as cayenne pepper and garlic, may also be added.
  • Place crabs in a heavy frying pan which contains 1/8 to 1/4 inch of fat, hot but not smoking.
  • Fry at moderate heat. When crabs are brown on one side, turn carefully and brown the other side. Cooking time is approximately 8 to 10 minutes.
  • Drain on absorbent paper.

8 soft shelled crabs
1/4 cup soy sauce
1 1/2 cups white wine
1/3 cup olive oil
5 -6 drops hot sauce
2 garlic cloves, minced

Steps:

  • Mix everything, except crabs, in a shallow baking dish. Add crabs and cover.
  • Marinate in the fridge for 1/2 hour.
  • Place crabs on a hot grill.
  • Cook for 15 minutes on each side basting and turning often.
  • To decrease cooking time, cover grill with large lid to help circulate the heat evenly.
  • Crabs are done when they are pink/red and slightly crisp, but still moist.
  • Cook time does not include time to marinate.

4 soft-shell crabs, cleaned and dried with paper toweling
1 tablespoon olive oil
salt & freshly ground black pepper
4 French baguettes, torpedo rolls or 4 hoagie rolls, etc
1/4 cup green chile aioli (recipe follows)
mixed greens
tomatoes, slices
1 cup mayonnaise
1 teaspoon minced fresh garlic
1 poblano chile, grilled, peeled and seeded
2 tablespoons fresh lime juice
salt & freshly ground black pepper

Steps:

  • Prepare a wood or charcoal grill and allow it to burn down to the embers.
  • Brush crabs lightly with olive oil and season to taste with salt and pepper. Grill for 2 1/2 minutes on each side.
  • For each sandwich, place crab on one half of the roll top with mixed greens, tomato slices and Green Chile Aioli.
  • Green Chile Aioli: Combine all ingredients in the food processor and process until the poblano is pureed. Season to taste with salt and freshly ground pepper.

8 soft shelled crabs, fresh or 8 frozen soft shelled crabs, thawed
1/2 lb backfin crab meat or 1/2 lb lump crabmeat
1/4 cup soft breadcrumbs
1 egg, beaten
2 tablespoons mayonnaise
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
all-purpose flour
vegetable oil

Steps:

  • To clean crabs, remove spongy substance (gills) the lies under the tapering points on either side of back shell. Place crabs on back, and remove the small piece at lower part of shell that terminates in a point (apron). Wash crabs thoroughly;drain well.
  • Remove any cartilage or shell from crabmeat. Combine crabmeat and next 7 ingredients, mix well. Stuff crabmeat mixture evenly into cavity of each crab, dredge crabs in flour. Fry crabs in deep hot oil (375F) for 1 to 2 minutes. Drain on paper towels. Serve right away.
