1/2 cup bourbon
1/4 cup canola oil
3 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper

Steps:

  • Stir together the bourbon, oil, mustard, Worcestershire, sugar, 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl. Use in place of your favorite chicken marinade.

2 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
1 medium onion, finely minced
5 garlic cloves, roughly chopped
1 pinch ground cumin
kosher salt
fresh ground black pepper
1 cup chopped of fresh mint
1 cup chopped fresh cilantro
1 orange, juice and zest of
2 limes, zest and juice , plus 1 lime for serving
3 tablespoons dark rum
olive oil flavored cooking spray
1 large onion, sliced into wheels
8 organic chicken pieces

Steps:

  • Melt 1 tablespoon of the butter with 1 tablespoon of the oil in a skillet over medium heat. Add the minced onion, garlic, cumin, salt, and pepper; reduce the heat to low, and sauté about 10 minutes, until the onion softens. Transfer mixture to a blender; add the mint and cilantro, zests, juices, and rum; and purée. Reserve 1/2 cup of the purée; use the rest to marinate the chicken for a few hours in the refrigerator.
  • Preheat oven to 400°F Melt the remaining butter with the remaining oil in a large ovenproof skillet over medium heat. Add the chicken pieces, working in batches if necessary, and brown both sides, about 10 minutes.
  • When nicely browned, transfer chicken pieces with tongs to a plate. In the same skillet, cook the sliced onion gently for a few minutes, until slightly softened. Return chicken to skillet, skin side down, salt and pepper liberally, and pour marinade over. Transfer skillet to oven; bake 30 minutes.
  • Using tongs, flip each piece over, return to oven, bake 30 minutes more, or until chicken-especially thighs, if you're using them-is fully cooked. Remove chicken; transfer to a serving platter. Pour reserved 1/2 cup purée into pan and mix it with a spatula. Pour this sauce over chicken. Serve with lime wedges and a small bowl of salt to pass around.

3 tablespoons oil
5 Thai chiles, chopped
2 cloves garlic, chopped
1 cup ground chicken
2 tablespoons oyster sauce
1 teaspoon fish sauce
1 teaspoon light soy sauce
1 teaspoon dark mushroom soy sauce
1 teaspoon sugar
3 serrano chiles, sliced
Pinch ground black pepper
2 cups Thai holy basil leaves (can substitute Thai sweet basil or Italian basil)
Cooked rice, for serving
1 cup mixed thinly sliced green and red bell peppers

Steps:

  • Pour oil into a pan over medium heat. Stir-fry Thai chiles and garlic together in the oil until you smell the fragrance. Add the ground chicken and stir-fry until well done. Add the oyster sauce, fish sauce and soy sauces. Mix well, then add the sugar and a little water. Continue to stir-fry and lastly add serrano chiles, black pepper and the Thai basil. Plate the chicken on the side of cooked rice or over rice. Garnish with the bell peppers.

4 chicken breasts
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons minced dried onion
1/2 cup packed brown sugar
3/8 cup Bourbon
1/2 teaspoon garlic powder

Steps:

  • Place chicken breasts in a 9x13 inch baking dish.
  • In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder.
  • Mix together and pour mixture over chicken.
  • Cover dish and place in refrigerator.
  • Marinate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove dish from refrigerator and remove cover.
  • Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.
