1 pound sweet or hot Italian sausages
1/2 C chopped onion
3 large garlic cloves (chopped)
1 28- ounce can diced peeled tomatoes
1/4 C pesto
10 ounces ziti or penne pasta (about 3 cups, freshly cooked)
4 cups or hand fulls of baby spinach leaves
6 ounces grated or cubed mozzarella cheese
1 Cup grated Parmesan cheese

Steps:

  • Cook sausage, onion and garlic until sausage is cooked through
  • Add tomatoes with juices
  • Simmer until sauce thickens slightly, stirring occasionally, about 10 minutes
  • Add pesto
  • Season sauce with salt and pepper
  • You can prepare up to this point a day ahead and refrigerate
  • Bring mixture back to simmer before continuing
  • Preheat oven to 375° F.
  • Lightly oil 13 x 9-inch glass baking dish.
  • Combine pasta, spinach, mozzarella and 1/3 cup Parmesan cheese in large bowl.
  • Stir in warm hot tomato mixture.
  • Place in prepared baking dish
  • Sprinkle remaining 2/3 cup Parmesan cheese over
  • Bake until sauce bubbles and cheeses melt, about 30 minutes

Steps:

1 pound ziti
Kosher salt
3 1/2 cups Quick Tomato Sauce, recipe follows
1 pound fresh mozzarella, half cut into 1/2-inch cubes and half thinly sliced
3/4 cup freshly grated Parmesan
1/2 teaspoon freshly ground black pepper
Pinch crushed red pepper
2 tablespoons extra-virgin olive oil
1 pound sweet and/or spicy Italian sausages, casing removed and sausage crumbled
1/4 medium onion, diced (about 3 tablespoons)
3 cloves garlic, chopped
One 28-ounce can whole peeled tomatoes in puree, roughly chopped
Sprig thyme
Sprig basil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil, salt generously and boil the pasta until al dente (tender but still slightly firm). Drain.
  • Toss the cooked pasta with the quick tomato sauce, cubed mozzarella, half the Parmesan, all of the black pepper and crushed red pepper in a large bowl. Transfer the pasta to the prepared baking dish. Cover the top of the pasta with the sliced mozzarella and sprinkle with the remaining Parmesan. Bake until lightly browned and hot, about 30 minutes. Serve immediately.
  • Heat the oil in a medium saucepan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes. Add the onion and garlic, stirring, until lightly browned, about 3 minutes more. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
  • Remove and discard the herb sprigs. Stir in 2 teaspoons salt and season with pepper. Use now or store covered in the refrigerator for up to 3 days or freeze for up to 2 months.

4 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
One 28-ounce can whole plum tomatoes, crushed by hand
One 15-ounce can whole plum tomatoes, crushed by hand
4 large sprigs fresh basil plus 1 cup chopped fresh basil
1 cup chopped fresh flat-leaf parsley
1 pound cremini mushrooms, sliced
6 cups baby spinach
1 pound dried ziti
3 cups shredded mozzarella
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil sprigs and stir in the chopped basil and parsley. Season with salt and pepper.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms and 1/4 teaspoon salt and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Add the spinach and cook, stirring, until just wilted. Transfer to a large bowl.
  • Cook the ziti in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the tomato sauce, half of both the mozzarella and Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

2 tablespoons olive oil
1 medium onion, finely chopped

2 (28-ounce) cans whole San Marzano tomatoes with their juices
5 ounces baby spinach

7 ounces crème fraîche (about 1 scant cup)
1 cup grated pecorino
3/4 pound fresh mozzarella, cut or torn into 1/2-inch pieces

Steps:

  • Using your hands, shape the sausage into about 35 (1-inch) meatballs.
  • In a deep 12-inch skillet or a Dutch oven, heat the oil over medium. Working in two batches, fry the meatballs until golden all over, about 2 minutes per side, then transfer to a paper towel-lined sheet pan or platter. Cook the onion until softened, scraping up any browned bits from the bottom of the pan, 3 to 4 minutes. Add the garlic, oregano and red-pepper flakes, if using, and cook until the garlic is fragrant, about 2 minutes.

This baked ziti is layered almost like a lasagna to ensure every bite has enough creamy ricotta, stringy mozzarella and tangy tomato sauce. But the key to its success comes from undercooking the pasta during the initial boil so it stays perfectly al dente, even after a trip to the oven. Heavy cream is added to prevent the ricotta from becoming grainy or dry during baking, letting it be its most luscious self. While this baked ziti is meatless (there's plenty of richness from the cheese - three types, to be exact), you could always incorporate a bit of sausage, ground meat or pancetta, if you like. Simply add 1/2 pound to the onions while sautéeing and proceed with the recipe.

1 large yellow onion, finely chopped
4 cloves garlic, finely chopped

1 (28-ounce) can whole peeled tomatoes, packed in juice
1 (28-ounce) can tomato purée or sauce
3/4 teaspoon red pepper flakes (optional)
16 ounces/1 pound ricotta
1/2 cup heavy cream
1/2 cup finely grated Parmesan or Pecorino, plus more for grating on top
1 pound ziti, rigatoni, penne, manicotti or other short, tubelike pasta
1 pound fresh mozzarella, cut into 1/2-inch pieces

Steps:

  • Make the tomato sauce: Heat oil in a large, heavy-bottomed pot over medium heat. Add onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is totally softened and translucent (without letting it brown), 8 to 10 minutes. Add tomato paste and continue to cook, stirring until it has turned a deeper brick-red color, tinting the oil and onions a fiery orange color, about 2 minutes. Crush the whole tomatoes by hand and add them (including the juice) and the tomato purée to the pot, stirring to scrape up any bits from the bottom of the pot. Season with salt and pepper and add red pepper flakes, if using. Bring to a simmer and cook, stirring occasionally, until the tomato sauce has thickened and flavors have come together, 20 to 30 minutes.
  • Prepare the filling: In a medium bowl, combine ricotta, heavy cream and 1/2 cup Parmesan. Season with salt and pepper and set aside.
  • Prepare the pasta: As the sauce cooks, heat oven to 425 degrees, and place a large pot of salted water to boil on the stove.
  • Cook pasta until it's nearly al dente. (You want to undercook the pasta slightly, as it will continue to cook in the oven. A good way to do this is cook it 2 minutes less than you normally would if preparing it al dente.) Reserving 1 cup of the pasta cooking liquid, drain pasta and rinse with cool water; set aside while the tomato sauce finishes cooking.
  • Once tomato sauce is done, stir in reserved pasta water.
  • Place pasta in a large bowl and add 2 cups sauce. Stir to coat pasta evenly encouraging the sauce to go inside each tube.
  • Spoon a bit of remaining sauce on the bottom of a 3-quart baking dish and top with 1/3 of the pasta. Spoon 1/3 of the remaining sauce on top, dollop with half the ricotta mixture and scatter 1/3 of the mozzarella on top of that. Repeat, beginning with the pasta, one more time. For the final layer, add the last 1/3 of pasta and the last of the sauce. Dot remaining mozzarella on top and shave a bit more Parmesan on top of that. Place baking dish on top of a sheet pan lined with parchment paper to catch any drips. Place in the oven and bake until the edges are golden brown and bubbling and the top has browned nicely, 30 to 40 minutes.
  • Let cool slightly before eating with a big green leafy salad.

10 oz. ziti or penne
1 pkg. ready to use spinach leaves, 6 oz
8 oz. mozzarella cheese, shredded
1 cup grated parmesan cheese

Steps:

  • 1. Warm large pan over medium high heat. Mix the sausage, onion and garlic in pan. Sauté for 1 minute or til sausage is cooked through, stirring to crumble; drain. Stir in undrained tomatoes. Simmer for 10 minutes or til sauce thickens slightly, stirring occasionally. Stir in the pesto. Season with salt and pepper.
  • 2. Preheat oven to 375. Coat a 9 x 13 inch baking dish with small amount of oil Fill large pot with salted water and bring to a boil over high heat. Add ziti. Cook til al dente; drain. Mix ziti, spinach, mozzarella cheese, and 1/3 cup Parmesan cheese in large bowl. Stir in tomato mixture. Remove to baking dish. Sprinkle remaining 2/3 cup Parmesan cheese over ziti mixture.

1 (16 ounce) package dry ziti pasta
1 pound mild Italian sausage
1 (15 ounce) container ricotta cheese
1 egg
1 large yellow onion, minced
2 teaspoons minced garlic
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ (26 ounce) jars spaghetti sauce, divided
1 (8 ounce) package shredded Italian cheese blend
1 teaspoon dried basil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the ziti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.

1 lb. hot Italian sausage, casings removed

1/2 cup KRAFT Zesty Italian Dressing
1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

  • Heat oven to 350°F.
  • Cook pasta as directed on package, omitting salt. 1 medium onion, chopped
4 cloves garlic, minced, divided
2 (26 ounce) jars spaghetti sauce
1 tablespoon olive oil
12 ounces baby spinach

¼ cup shredded Parmesan cheese
salt to taste
6 ounces provolone cheese, sliced
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

4 links chicken sausage, Italian-seasoned and fully cooked, cut into 1/4-inch slices
4 cups Baby Spinach, pre-washed
1 cup part-skim mozzarella cheese (shredded, or 2% milk reduced-fat mozzarella cheese)
1/2 cup parmesan cheese, shredded

Steps:

  • PREHEAT oven to 425º F. Spray 4-quart baking dish with nonstick cooking spray.
  • PREPARE pasta according to package directions. Reserve 1/2 cup pasta cooking water and set aside for later use. Drain pasta; return to cooking pot.
  • MEANWHILE, COMBINE pumpkin, flour, garlic powder, salt, nutmeg and cayenne pepper in medium skillet over medium heat. Slowly add evaporated milk, stirring until smooth. Cook, stirring occasionally, for 2 to 3 minutes or until mixture begins to thicken slightly. Pour over pasta in pot. Add sausage and reserved pasta cooking water; stir well.
  • SPREAD half of the pasta mixture into prepared baking dish. Top with spinach. Cover with remaining pasta mixture. Lightly spray piece of foil with nonstick cooking spray. Cover ziti with foil, greased-side-down.
  • BAKE for 20 minutes or until heated through. Combine mozzarella and Parmesan cheeses in small bowl. Remove foil; sprinkle with cheese mixture. Bake, uncovered, for an additional 5 minutes or until cheese is melted.
